How To Make Mini Sugar Cookies

I love to make mini gluten free sugar cookies using a 1 ½ – 2 inch round cutter.

Ill also use mini holiday cookie cutters like hearts and stars, but Ive found that any protruding edges tend to over-bake a bit and become more crunchy.

Still delicious, just not as soft all the way through.

If you cut out shapes just be more careful to not let the sugar cookies over-bake.

They soften more as you let them sit, frosted, in an air-tight container and then the crunchy star points soften.

What Ingredients Do You Need To Make Sugar Cookies Gluten Free

  • Softened Butter .
  • Granulated Sugar .
  • Room Temperature Eggs .
  • Vanilla Extract.
  • Gluten Free Baking Powder .
  • Gluten Free Flour .
  • Salt. Because salt = flavor!

For best results use my gluten-free cookie/cake flour blend.

Another gluten-free flour may work as well, but I haven’t tested them all.

My recommendation when using any flour other than my blend is to:

  • First, add about 2 ¾ cup flour.
  • Add the remaining flour until it makes a soft dough , first adding ¼ cup of gluten free flour.
  • Finally, add the remaining gluten free flour 1 tablespoon at a time until your sugar cookie dough resembles the texture in the video for this post.
  • It is very important you have a soft dough or our cookies won’t be soft and cakey, instead they will be more dry.

    If you use Bob’s Red Mill’s 1 to 1 gluten free flour, please only use 3 cups instead of 3 ¼ cups.

    It absorbs more liquid than my blend and if you use more than 3 cups you’ll have a very dry and crumbly sugar cookie dough.

    On some days, I’ve had a dry dough even when using 3 cups, so you may need to add even less.

    Other blends that should work well are

    • King Arthur’s Flour blend
    • Gluten Free Mama’s Almond Blend

    #1 Crumbly DoughIf your dough is crumbly and youre not able to roll it out, add a tablespoon of water. Re-knead, and try again.

    The reason for the crumbly dough is because of the differences in gluten-free flour mixes. They do not all contain the same ingredients and ratios of rice to starch. Some use white rice, others brown rice, some use corn starch others tapioca or potato you get the idea.

    #2 Dough is sticking to the parchment paper when rolling outThe opposite problem of crumbly dough but the culprit is also the gluten-free flour. To fix this, simply add a tablespoon of additional flour, re-knead, and try again.

    #3 Some cookies are crispy others are soft after bakingMore than likely, when the dough was rolled some cookies were rolled out thinner than others. This happens! Dont fret, they are still delicious, so enjoy!

    Why Do My Gluten

    Gluten-free cookies can crumble if they don’t have strong enough binders in the flour. You can minimize the possibility of this by adding 1/2 teaspoon xanthan gum to the dough when you add the dry ingredients. We recommend a product like Bob’s Red Mill gluten-free flour because stabilizers are already in the blend, so the cookies should not come out dry nor crumble.

    All Almond Flours Are Not Created Equal

    When I first made these paleo chocolate chip cookies, itd been quite a while since I last posted some grain-free recipes. I had run out of my favorite Bobs Red Mill Super-Fine Almond Flour months before and was so frustrated with the brands of almond flour available here in Germany since theyre so inconsistent.

    Because I didnt want to deal with the hassle of ordering flour from the US, I thought Id wait it out until Christmas when Id be back in the US and could buy all the Bobs Red Mill I want.

    So I went to work and while every batch tasted amazing, the appearance and thickness was different every single time. The only variable?

    The almond flour. The almond flour Id been buying varies from brand to brand and even within the same brand.

    To make sugar cookies gluten-free, Ive opted to use almond flour. Like some of my other cookie recipes, I feel good about giving my family treats that have *some* form of nutrition.

    We get enough sugar and carbs in our diets, Id rather try to find some small ways to bump up the nutritional value in every area I can.

    Almond flour is full of healthy fats, fiber, and protein, so even when my son wants a second cookie, I can feel good that he is filling up on more than just sugar thats going to make him crash after 30 minutes.

    What Do You Need To Make Gluten Free Sugar Cookie Dough

    To make gluten free drop sugar cookie dough you’ll need:

    • Butter- You can use dairy-free/vegan butter or palm shortening, or you can use softened dairy butter.
    • White Sugar- I haven’t tried many granulated sugar substitutes but I suspect they’ll work fine.
    • Eggs- You can use regular chicken eggs, or an egg substitute. Bob’s Red Mill’s Egg Replacer is my favorite, but it should also work with Ener-G or a flax egg.
    • Baking Soda- Helps your cookies to spread.
    • Xanthan gum- Replace the structure that gluten gives traditional cookie. If you are using a gluten-free flour blend that already has xanthan gum, go ahead and omit the xanthan gum the recipe calls for.
    • Vanilla extract- For flavor! You can also use lemon extract, almond extract, or any extract your heart desires for a different flavor twist.
    • Gluten Free Flour- I use my own gluten free flour blend, but another blend may work well.IF you are substituting a different gluten-free four, please read the section down below with essential tips for swapping gluten-free flours, they don’t all work the same

    To mix the dough, first you’ll need butter and sugar.

    Cream them together until fluffy and then beat in the egg.

    Next, add the baking soda, xanthan gum, and vanilla and mix until combined.

    I add these ingredients before the gluten free flour to ensure they get evenly distributed.

    Last but not least, add the gluten free flour.

    Here come the sparkles!

    Or you can be super lazy, like I normally am.

    How To Decorate Sugar Cookies

    To pipe frosting, you can do it in a classic cupcake-style swirl, which is easy enough using a medium-sized open piping tip.

    You can also begin with a simple mound of dough piped onto the cookie with the same medium-sized open piping tip.

    I also use the swoop, which is one of my favorites. Its made with a moistened teaspoon that is inserted into the center of the frosting at an angle and then swirled lightly in a circle.

    The classic Lofthouse-style shape is the flattened top, made using a small moistened offset spatula or a simple wide butter knife. Simply use the spatula or knife to flatten the mound of frosting into a disk and smooth the top as evenly as possible.

    For all these shapes, allow the frosting to set at room temperature until it becomes semi-hard. That will allow you to transport the cookies if needed. You can even layer them if you place a sheet of waxed or parchment paper gently between layers.

    For a truly hard surface, use royal icing in place of frosting. Simply click the link in the previous sentence for a royal icing recipe with complete instructions.

    I used a #4 piping tip to outline and then flood the center, sprinkling decorations immediately before the icing has dried.

    This piping frosting is a simple powdered sugar frosting thats easy to make.

  • In a medium bowl, combine powdered sugar, softened butter, heavy cream, and vanilla. Using a spoon or a hand mixer on the lowest setting, gently begin to whip the frosting until its creamy.
  • If the frosting is too thin for piping, add more powdered sugar until the right consistency is reached. If the frosting is too thick and difficult to pipe from the bag, add more cream until the right consistency is reached.
  • Dietary Swaps And Substitutions

    Vegan Gluten

    A benefit of this cookie recipe is just how easy they are to adapt to various diets out there! Here is what weve tried:

    • Swap out the peanut butter. Got a peanut allergy? These work with other nut butters like cashew butter or almond butter.
    • Make them nut free. If youve got a nut allergy, switch the peanut butter for equal amounts of sunflower seed butter or tahini.
    • Use a liquid sweetener. Instead of a granulated sugar substitute, use half a cup of sugar free maple syrup.
    • Make it eggless. Follow a vegan diet or dont have eggs on hand? Try using an egg substitute.
    • Add chocolate. For sugar free chocolate chip cookies, add 1/2 cup of sugar free chocolate chips to the batter.

    How To Store And Freeze

    • These cookies will keep well at room temperature in a tightly sealed container for up to one week.
    • They can be frozen in a tightly sealed container for up to three months, and freeze well.
    • If making cut-out cookies, you can leave the dough in the fridge for up to 2 days before baking.
    • You can freeze the cookie dough for up to 3 months. Thaw the dough in the refrigerator until pliable, then proceed with rolling and cutting.
    • If you want to make drop cookies, you can refrigerate or freeze the cookie dough then let it come to room temperature before scooping and baking.

    Start With Butter Thats Soft But Not Too Soft

    Now, if your softened butter is too warm, it wont form those air pockets. Thats why you want to let it soften naturally instead of speeding up the process in the microwave.

    Take it out of the fridge, cut it up, and wait about 10-15 minutes thats the just right level of softness for this sugar-free almond flour cookies recipe.

    Of course, if its summer or youve been cooking a lot, youll need less time. A kitchen that is much warmer than 70 degrees F will speed up this process.

This one is super finely ground and blanched, which is important if you want the best keto shortbread cookies without a gritty texture. Almond meal is not recommended, as the result will be grainy or gritty. If you need a nut-free version, make coconut flour shortbread cookies like this instead.
    • Butter Butter is going to be far superior to any alternatives in this almond flour cookie recipe. You can use ghee or even coconut oil for a dairy-free option, but butter gives the best flavor and texture. I recommend using salted butter, or adding a pinch of salt if your butter is unsalted, to balance the sweetener. Be sure your butter is softened at room temperature before you begin.

    • Coconut flour cookies they dont use any almond flour, in case you need a nut-free version! And theyre somehow every bit as delicious as the version below.
    • Paleo Peanut Butter Cookies these use sunflower seed butter in place of peanut butter for a version that tastes super similar to real peanut butter cookies.
    • Vegan Peanut Butter Cookies they also only use coconut flour. I spent 4 years trying to make the below paleo chocolate chip cookie recipe with peanut butter. I didnt like the results. But I finally nailed it and they are the best peanut butter cookies Ive ever had!

    • Butter A lot of cookie recipes require at least a stick of butter, but this one only uses a ½ stick instead. Make sure you soften your butter first. Let it sit on the counter to come to room temp.
    • Low Carb Sweetener I chose to use Lakanto Golden Monkfruit sweetener in this recipe. But you can use another one if you prefer.
    • Almond Flour Be sure to use finely ground almond flour, and not almond meal. My favorite brand is Kirkland Blanched Almond Flour.
