What Foods Have Gluten

Wheat, barley, kamut and spelt are contained in all foods made by wheat , kamut and spelt flour such as: bread, pasta, ravioli, tortellini, crackers, baked foods , croutons, packet snacks, rusks, waffles, pancakes, crepes, pizzas, pretzels, flour tortilla, breadsticks and communion wafers.
Semolina, bulgur and cous cous contain wheat too and also pudding can be made with some flour. Although based on potatoes, gnocchi are traditionally prepared with some wheat flour. Beer, lager and ales are other forbidden products, because they can be both wheat-based and barley-based.
One has to be careful because it is common practice to use white flour in the preparation of meat, fish and some dressings as well as sauces. When eating out, asking the details about the preparation of the dishes on the menu before ordering them is a must for all celiac people.
Other products that must be checked on the label of the purchased products are: wheat germ, wheat bran, triticale, starch, modified starch, hydrolised starch, food starch, edible starch.

Are Oats Gluten Free
Oats do not technically contain the gluten protein, however, they are grown in rotation with wheat crops using the same fields, equipment, and harvesting tools, thereby cross contaminating oats with wheat.
If you want to enjoy oats, you must look for products using only gluten-free oats.

When You Are Eating Out
- Always carry 2 epinephrine autoinjectors. Make sure you and those close to you know how to use it.
- Wear a medical alert bracelet or necklace with your allergy information.
- If you dont have epinephrine autoinjectors, talk with your healthcare provider. Ask if you should carry them.
- In a restaurant, food may be cross-contaminated with wheat.
- Always read food labels. And always ask about ingredients at restaurants. Do this even if these are foods that you have eaten in the past.
- Dont eat at buffets with wheat. This reduces your risk for cross-contaminated foods from shared utensils.

Who Should Follow A Gluten
If you have medically diagnosed coeliac disease you must follow a strict gluten-free diet for your whole life. This is because your sensitivity to gluten will never disappear. Every time you eat gluten, even in very small amounts, it will cause damage to your small bowel.

Gluten is most often associated with wheat and wheat-containing foods that are abundant in our food supply. Negative media attention on wheat and gluten has caused some people to doubt its place in a healthful diet. There is little published research to support these claims in fact published research suggests the opposite.
In a 2017 study of over 100,000 participants without celiac disease, researchers found no association between long-term dietary gluten consumption and heart disease risk. Arabinoxylan oligosaccharide is a prebiotic carbohydrate derived from wheat bran that has been shown to stimulate the activity of bifidobacteria in the colon. Changes in their amount or activity have been associated with gastrointestinal diseases including inflammatory bowel disease, colorectal cancer, and irritable bowel syndrome.
