What Do You Need To Make Gluten Free Sugar Cookie Dough

Recipe: Low-carb, sugar-free, gluten-free almond cookies

To make gluten free drop sugar cookie dough you’ll need:

  • Butter- You can use dairy-free/vegan butter or palm shortening, or you can use softened dairy butter.
  • White Sugar- I haven’t tried many granulated sugar substitutes but I suspect they’ll work fine.
  • Eggs- You can use regular chicken eggs, or an egg substitute. Bob’s Red Mill’s Egg Replacer is my favorite, but it should also work with Ener-G or a flax egg.
  • Baking Soda- Helps your cookies to spread.
  • Xanthan gum- Replace the structure that gluten gives traditional cookie. If you are using a gluten-free flour blend that already has xanthan gum, go ahead and omit the xanthan gum the recipe calls for.
  • Vanilla extract- For flavor! You can also use lemon extract, almond extract, or any extract your heart desires for a different flavor twist.
  • Gluten Free Flour- I use my own gluten free flour blend, but another blend may work well.IF you are substituting a different gluten-free four, please read the section down below with essential tips for swapping gluten-free flours, they don’t all work the same

To mix the dough, first you’ll need butter and sugar.

Cream them together until fluffy and then beat in the egg.

Next, add the baking soda, xanthan gum, and vanilla and mix until combined.

I add these ingredients before the gluten free flour to ensure they get evenly distributed.

Last but not least, add the gluten free flour.

Here come the sparkles!

Or you can be super lazy, like I normally am.

For anyone who truly believes that you need flour, or any grain for that matter, to make cookies, I have some nifty news to share with you. That is, great cookies do not need any kind of grain to be a cookie. Yay for that!!!

What I also like about these cookies is that they are really chewy. Well, chewy and yummy that is. This cookie is really a fresh take on a standard recipe, and for a good result too!

Pay Attention To The Coconut Oil

If you make these in the summer when room temperature coconut oil means melted coconut oil, youll need to refrigerate the coconut oil until its firmer, like softened butter.

If you make these dairy-free cookies with melted coconut oil, the dough will be very greasy and the chocolate chips will be hard to incorporate into the dough.

It doesnt work to use melted coconut oil and then just chill the dough. I dont understand why but it doesnt work!

    For this recipe, I used self-rising flour from the shop. I went simple and easy this time. Although the flour has xanthan gum in it I add a tiny bit more to give more elasticity to the dough.

    However, you can use any gluten-free flour you like to use in cookies. Just bear in mind if you want to use coconut flour you need to increase the liquid in this recipe otherwise the dough will be dry and stiff.

    Obviously, almond flour does not contain wheat in it. As a result, almond flour is gluten free.

    Almond flour also makes the cookie a bit different, not in a bad way. Because it is made from almond, almond flour will provide the cookies with an ‘almond’ taste. Also, the texture of the cookie may seem a bit different too. I will say that since almond have some fat to them, they will aid in making the cookie less dry and more shelf-life friendly.

    They come in tiny 1-cup bags here so I go through a load of them when recipe testing. Id open up one bag and find some finely ground almond flour, then Id open up another bag from the same company, and it was overall coarser with bits of sliced almonds.

    I dont recommend replacing the sweetener. Besti Brown imparts unmatched moisture and flavor that other sweeteners just will not do. However, if you really want to, you could swap in granulated Besti or granulated allulose , and add a teaspoon of blackstrap molasses. Sticking to an allulose-based sweetener will preserve the softness and moisture you expect in a oatmeal cookie.

    Five Things To Know About Making Gluten

  • Dont overbeat the butter. For this recipe, simply mix the butter and sugar until its thick, not fluffy. If it gets overmixed, the cookies can spread.
  • Chill the Dough. Unlike chocolate chip cookies or gluten-free sparkly cookies, cut out cookie dough needs to chill before baking. This prevents the cookies from spreading as they bake. Allow at least 45 minutes for chilling.

    I mentioned earlier that this recipe is a gluten free recipe. If you are familiar with gluten free you may be wondering why we are not adding an egg or other kind of a binder to this recipe. Since we are making a cookie instead of a bread for example, we will not need a binder in this recipe.

    Here are some more great tips for baking these cookies with almond flour.

  • Please be sure that you are using almond flour and not almond meal. Almond meal is make from raw almonds, rather than blanched almonds, which can affect the outcome of this recipe.
  • Almond flour is certainly low in carbohydrates and is gluten free. However, it does have more calories in it than all purpose flour.
  • I mentioned that almond flour has fat in it which makes whatever it is used in more moist. However, the fat in the almond flour makes it a good candidate for refrigeration as almond flour can go bad sooner than its all purpose counterpart.
  • To make these cookies we will be rolling scooped cookie dough into balls. If your dough seems sticky, try refrigerating it for 20 minuter or rubbing a bit of oil over your hands.

    Yest, despite those two common ingredients, these cookies are pretty good. And thank goodness for that.

    Yes, there is no surprise here that I bake sugar-free goods, and this wont be the exception. They taste just like the originals but with a lot less calories if you care for it .

    So, in this recipe, I mixed coconut sugar that is low GI and Golden Monkfruit, but you can use the full amount of your zero calories sweetener like erythritol, allulose, monk fruit, and stevia. The coconut sugar will add that caramel taste that dark brown sugar cane has.

    However, these cookies are sugar-free I am using a small amount of unsulphured molasses in this recipe. Even though it is not much of what I am using compared with the original recipe, it delivers a lot of flavour.

    When I baked the first 2 batches, they had, double amount of molasses, and to be honest we couldnt taste the ginger in the cookies. So, that was a game-changer for us, we like that ginger spicy flavor with the molasses being the second. By all means, if you like going heavy on the molasses go ahead and adjust the amounts to your liking.

    In addition, to the effects of molasses on blood sugar, there are some experts who say that is slowly digested, therefore may not have the same effect as refined sugar. However, because molasses comes from the sugar cane, it has sugar in it. If you are on a keto diet omit the molasses and use any other sugar-free syrup of your choice.
