Beware Of Cross Contamination

Gallo Salame® All

During product manufacturing, a variety of gluten-free products come into contact with products such as grains containing gluten. This is where cross-contamination may occur. This is common in factories that process both regular and gluten-free products and use the same machines for both. This process can cause major problems for people with gluten intolerance. The other place cross-contamination can occur is in the kitchen. It occurs most commonly when preparing meals and sharing the same kitchen tools and surfaces.

A recent study found that more than 40% of processed foods labeled gluten-free still had enough gluten to cause damage to those with gluten intolerance issues. Use extreme care and have a backup cutting board that is only used for preparing gluten-free items to avoid cross-contamination. On that same note, use extreme caution if eating out. Many restaurants will not have measures in place to prevent the cross-contamination of the food they are serving you.

Tips For Choosing Gluten Free Meat

When shopping for gluten free meat, you have plenty of options available to you. The best thing you can do is keep it as close to the source as possible this means real meat that hasnt been fried, marinated, or processed in any way. The meat you get from the butcher or the meat counter at your local grocery store should be safe as long as it doesnt contain any added ingredients. To be safe, avoid meats that have been marinated or seasoned because you cant be sure about the ingredients.

If youre looking for frozen meats items like meatballs, chicken nuggets, and burger patties youll need to be a little more careful. Fortunately, frozen goods should have information on the label including an allergen warning and a list of ingredients. Dont assume that just because youre buying frozen chicken strips there isnt any gluten in them, however. Seemingly basic frozen goods can be deceiving many manufacturers blend their meats with flour or wheat-based starches.

You may also need to be careful when shopping for lunch meat. While plain ham, turkey, chicken, and roast beef dont contain gluten, deli meat and pre-packaged meats might. Deli meat often contains ingredients other than the meat itself which means theres also a potential for cross-contamination.

I have severe reactions to gluten. If I get even the tiniest bit, I have horrible aura migraines where I lose my site for a few minutes and vertigo, as well as severe stomach stabbing, cramps and discomfort. I never have vertigo or those type of migraines unless I accidently ingest gluten. I had only had severe and painful migraines before I removed gluten, but once I removed gluten, any type of accidents after removing it now causes the vertigo and aura migraine attacks. I originally removed it because of bloating, skin rashes and migraines, and now am so thankful because I did not realize what it was doing to my body. Luckily, 2 years after removing it from my diet, I am in excellent health

Know wheat in all its forms. Wheat berries, semonila, spelt, farina, graham, durum, emmer, faro, Khorasan, udon and einkorn all contain gluten.

Look out for tricky ingredients. If a product is NOT labeled gluten-free, but contains one of these in the ingredients list, do not buy it: starch, modified food starch, hydrolyzed vegetable protein, hydrolyzed plant protein, textured vegetable protein, dextrin, maltodextrin, glucose syrup, caramel, malt flavoring, malt extract, malt vinegar , brown rice syrup.

When in doubt, leave it out. If you cant confirm products are gluten-free, substitute fresh, nutrient-rich whole foods like meat, fish, poultry, fruits, and vegetables. Choose naturally gluten-free starches like rice, quinoa, corn, buckwheat, potatoes, sorghum and wild rice.

Prevent kitchen cross-contamination. Crumbs linger in shared toasters, cutting boards, and community peanut butter, jam and cream cheese. Wipe counters regularly, and clean gluten-free dishes with a separate sponge. Line shared flour sifters and backing pans with parchment paper or foil, and wrap gluten-free bakery in foil.
