There are plenty of gluten free flours to choose from, but not all of them are created equal. Some gluten free flours are highly absorbent and require additional moisture in the recipe while others are so dense that they need extra leavening.

The key to cooking with gluten free flour is to know exactly what youre working with. Here is an overview of the top 12 gluten free flours with tips for using them:

1. Amaranth Flour

This gluten free flour has a nutty, earthy flavor on its own and it tends to absorb the flavors of other ingredients. Rich in fiber and protein, amaranth flour also contains plenty of magnesium, manganese, phosphorus, selenium, and iron. It is also particularly high in folate, a nutrient that is very important for pregnant women. Amaranth flour also provides about twice as much calcium as milk per serving.

Baking with amaranth flour is a little tricky because it is best combined with other gluten free flours, particularly for recipes like bread, pie crust, and tortillas. When baking with this flour, youll need to stick to a ratio of one part amaranth flour to three parts other gluten free flours. When making substitutions, youll need about 1 cup of amaranth flour per 1 cup of wheat flour, keeping the previous advice in mind. You should also know that this flour browns quickly, so keep an eye on your oven temperature and your bake time.

I still prefer mixing my own gluten free flour recipe, usually using Bob’s Red Mill’s single ingredient flours, however I know that many of you have Bob’s 1 to 1 flour in your pantry and it is easily accessible.

How to use Bob’s Red Mill 1 to 1 gluten-free flour in my recipes:

I wanted to take a minute to tell you what adaptions you’ll need to make if you use Bob’s 1 to 1 gluten free flour in my recipes.

Bob’s 1 to 1 Gluten Free Flour DOES NOT work measure for measure for my gluten free flour. YOU’LL NEED LESS.

Bob’s 1 to 1 gluten free flour has a higher absorption rate, so if you add the full amount the recipe calls for, your batter or dough will be crumbly and you won’t have the results you are looking for.

There is an easy fix to this. Use less Bob’s 1 to 1 flour than is called for in my recipes. You can always add a little more flour, but you can’t take any away once it is mixed in.

I suggest using ¼ to ½ cup less to start.

After you mix it in, you can add a little more of Bob’s 1 to 1 gluten free flour, if needed.

Unlike other blends, this flour does not contain xanthan gum or another thickener, allowing you to adjust for the amount required for your recipe. Tapioca starch and flour are the same product, starch and flour are used interchangeably.

I use tapioca flour in my gluten free flour blend. It lightens up the rice flour and help to bind and glue everything together.

Tapioca Flour/Starch is also a stand-alone ingredient in several of my favorite recipes. I use it in my dairy free brazilian cheese breads and gluten free blue corn muffins.

Gluten Free 1-to-1 Baking Flour

As gluten free baking becomes ever more popular, the gluten free options at the grocery store have continued to improve. Where once you could only find a few gluten free flours and had to experiment with the ratios between them in your own kitchen, now you can choose from dozens of different flour blends and a variety of gluten free mixes. While a cake mix is handy, I still prefer having a versatile flour blend on hand that I can do different things with. Some gluten free flours are not all that versatile, but Bobs Red Mill Gluten Free 1 to 1 Baking Flour promised to be just that, so I couldnt resist giving it a trial run on a few recipes.

The flour blend is made with white and brown rice flours, potato starch, white sorghum flour, tapioca flour and zanthan gum. I am generally a fan of rice-based gluten free flour blends for baking, as they often help preserve a light, tender texture in cookies and cakes. This flour blend which promised that it could be substituted cup for cup in a regular recipe did not disappoint. A cake made with it had a tender, even crumb and rose just about as high as the wheat flour version I made. Cookies baked up to be crisp at the edges and tender in the center. The flour had a nice, mild flavor that didnt distract from the other flavors in the recipes.

Gluten Free Chocolate Chip Muffins

This easy recipe for gluten free chocolate chip muffins using Bobs Red Mill Gluten Free 1-to-1 Baking Flour takes only 30 minutes to makestart to finish.

My morning routine goes a little something like this: Wake up, get dressed, head outside, garden while its only 70 degrees, go inside, make breakfast, eat, clean up after breakfast. While were out there weeding the garden, pruning the tomatoes, and picking berries, our stomachs are empty and in dire need of food. Sure a berry or two slips in here and there, but for the most part we yearn for breakfast.

It makes me wonder how some people can just skip breakfast. Yesterday, I really wanted to use the Gluten Free 1-to-1 Baking Flour I received from the kind people of Bobs Red Mill to make breakfast with so I whipped up a basic muffin batter, added some chocolate chips, and made the BEST gluten free chocolate chip muffins ever.

You can thank me later.

I was surprised at how well the Bobs Red Mill Gluten Free 1-to-1 Baking Flour did at replicating the results of a wheat flour muffin. The muffin was still tender, moist and downright delicious. Plus, it also rose in the same manner as a wheat flour muffin.

I will definitely be using this in the future if I ever need to make a recipe gluten free in a flash. I love that theres no need to add xanthan gum because its already in it!

Then just place the pan in the oven and bake them for 15-20 minutes.

If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds. It is actually a difficult task.

In the five years that I have been gluten free I have tried many gluten free blends. Both homemade ones and premade ones. Some were good. Others were terrible. Most though worked well in some things, but not so great in other things. For most blends, I have found what may work well in a pancake wont work so well in a cookie. And what works in a gluten free bread may not work so well in a cake or muffin. It really is hard to find a one size fits all product when it comes to gluten free baking. Blends work okay in most things, but not all things.

This is why most of my recipes call for individual gluten free flours and not a blend.

Many people love the old blend. If you are one of them, dont worry, they still sell it. But I was not one of those that loved the old flour blend.

You may be wondering why I am talking about loving this blend when I mentioned above that I am usually not a big fan of blends. Well this new blend of Bobs Red Mill is different. Totally different in my opinion.
