When it comes to gluten free baking, you need a blend of gluten-free flours. You dont want to use just one type of gltuen-free flour, like, for example, all almond flour.
To mimic the structure of wheat, we want to combine whole grains, starches, and gums.

How To Make Gluten Free Biscuits And Gravy
This gluten free biscuit and gravy recipe is super simple! You can whip this together in about 35 minutes if you make your biscuits drop biscuits. You can also roll our the biscuit dough and cut them out if you prefer just keep in mind this will add time. I almost always do drop biscuits because theyre easier and faster than cut-out biscuits.
- Make the biscuits: Mix together your dry ingredients and then cut in the butter. Mix the butter and flour mixture together until crumbly and then add the white vinegar and the milk. Mix it all up and drop 1/4 cup balls of dough on a greased baking sheet. Bake until fluffy and golden brown.
- Brown the sausage: I start browning the sausage after I get my biscuits on the pan but before I put them in the oven. Brown the sausage for about 5 minutes and then stick the biscuits in the oven. The biscuits and gravy will be done at the same time this way!
- Make the sausage gravy: After the sausage is completely cooked, stir in the gluten free flour, salt, and black pepper. Mix it together evenly and then add in your milk of choice. Cook over medium heat until the gravy thickens. Cook on low for 2 more minutes and then remove from heat.
- Serve: Drop a biscuit or two on a plate and smother with your gravy.

Gluten Free Flour Blend Notes:
Most of the gluten free flours behaved in a similar way when mixed with the other ingredients. I did not measure the flour amount by weight as each blend needed tweaking Here are a few things that stood out:
- King Arthur Measure for Measure – The gluten free biscuit dough was wetter than the other flour blends. It didn’t affect the amount of rise but the dough spread out a little more than others when baking. I didn’t add additional flour but I did use about 2 teaspoons of flour sprinkled on the top so I could press the dough down enough to use the biscuit cutter.
- Better Batter Artisinal Gum Free – I had to add 2 tablespoons of additional milk so the biscuit dough wasn’t too stiff.
- Bob’s Red Mill 1 to 1 Gluten Free Blend – I felt the dough was workable without additional flour or milk.
- Cup4Cup – The biscuit dough this flour made was fine without adding any extra flour or milk.
- Pillsbury Gluten Free Flour Blend – This flour performed really well.
- Target Good & Gather Gluten Free Blend – The biscuits tasted great, but they are a little more crumbly than other gluten free blends used.
- Just About Food Whole Grain Gluten Free Blend – I had to add almost ½ cup additional flour because the biscuit dough was so wet with just 1 cup of milk. Again, this flour was terrible and I don’t recommend using it.

What Is A Drop Biscuit
A gluten-free drop biscuit is a biscuit made by dropping spoonfuls of dough onto a pan for baking. Drop biscuits are more rustic in shape, where as a classic biscuit is uniform in shape since the dough is generally rolled out and cut using a cookie cutter, biscuit cutter, etc.
Gluten-free drop biscuits are way less time consuming to prepare, making them a super quick and easy option on a busy night.

Dairy And Gluten Free Biscuits
My daughter suffers from a dairy intolerance, I believe it is also something I have suffered with for a long time too, as dairy makes me feel very bloated as well as causing skin breakouts, however, over the years, I believe I just adjusted to those as well as other symptoms. As well as a dairy intolerance, we also have a weakness to gluten too, so we choose to eat a dairy and gluten free diet. I can take it or leave it, but the smallest amount, causes great discomfort for my daughter. When she was first diagnosed, it felt like a huge adjustment, however, now, with so many free from products available, we have now fully adjusted to a better, healthier diet.
Since starting preschool in September, I have made my little girl her own biscuits for snack time. All the children have a drink and a biscuit or fruit at snack time, so I want to be sure my little girl has something that doesnt look dissimilar to what the other children snack on, as I dont want her to ever feel like shes missing out or being singled out.
I tried some biscuits from the shops, however, most free from products are very expensive, and it soon adds up, so I set about experimenting to make some really tasty biscuits that looked like the digestives the other children had at snack time.
It took a while and a lot of experimenting together to come up with a recipe we liked but we got there and at the beginning of every week we set about making biscuits together.
This recipe is my own, so I hope you enjoy it.
How To Make Gluten
The first thing you are going to want to do is Preheat oven to 450° F. I know my oven takes forever to heat up and you want your oven to be nice and hot.
Cut the butter into small pieces and put in the freezer for 10 minutes.
If you do not have buttermilk you can make your own buttermilk by adding 1 tablespoon of white vinegar or lemon juice to the cup of milk and let stand 5-10 minutes in the refrigerator to keep cold. You can also make buttermilk out of dairy-free milk.
In a large bowl add the gluten-free flour, xanthan gum baking powder, salt, sugar, and give it a quick whisk or stir to combine the ingredients.
Cut in the butter into the flour with a pastry cutter or fork into until it looks like the size of small peas.
Add in the buttermilk and the whisked egg and stir until a soft dough forms. The dough will be sticky.
The key is to not over mix the dough because over-mixing causes the dough to yield tough biscuits. There is nothing is worse than a flat, tough biscuit!
Add one tablespoon of flour to a large piece of parchment paper. Please do not roll out the dough.
Place the dough on top of the floured parchment paper. Dust the top of the dough with 1 tablespoon of flour.
Gently fold the dough over on itself 2 times. You do this by folding the dough in half on top of itself and then doing it a second time.
Reform the dough scraps into a dough round and cut out more biscuits..
I like to brush melted butter on top of the warm biscuits. Serve warm and enjoy!

How To Make Drop Biscuits That Are Still Light
We still need lightness in our biscuits, but were not going to get it from layers of flour alternating with layers of cold butter that puff and expand in the heat of the oven. So we have to get it another way.
With drop biscuits, we go with smaller pieces of butter, just the right ingredients , a wetter dough, and a light, light touch. In fact, more often than not these days, I grate the butter on a standard cheese grater. So easy!
Theres very little actual hand-on-ingredients action going on here. Keep those ingredients cold!
Preheat The Oven So Your Raw Ingredients Stay Cold
Speaking of melted butter, you really dont want that. If your butter liquefies before the biscuits start baking, youre going to end up with dense little rolls.
To help keep that butter at the right temperature for baking, be sure to turn on your oven before you start preparing the gluten free drop biscuit mix. That way, your biscuits will get right to baking as soon as you pop them into the oven.

Making Drop Biscuits In Advance
If you want a way to prepare fresh drop biscuits without having to go through all the prep work, consider freezing some. All you have to do is prepare the biscuit dough, drop the biscuits onto a parchment lined baking sheet, and then put the whole thing in the freezer rather than the oven.
Once theyre frozen, remove them from the freezer and pile them into a zip-top bag. Now, you can pop them out whenever you need a biscuit. Bake right from frozen by just adding a few minutes to the baking time.
Gluten Free Digestive Biscuits: What Youll Need
- Gluten-free flour blend, salt, sugar, cinnamon, baking powder, butter, honey, milk or water.
- Options: You can swap the butter for a dairy free alternative if you like.
- Bonus option: These biscuits are totally topping worthy. A little bit of chocolate shavings, caramel or even mint goes nicely! May we recommend the drizzle used on our gluten-free apple coffee cake.
- Or rather, coating worthy: You can coat the underside with chocolate, our favorite is dark chocolate!

Can I Freeze Homemade Gluten
Yes, you can. We like to make a double batch on the weekend. Some for now and some to freeze for later.
Unbaked biscuits can be frozen until solid. We like to place on baking sheet in freezer. Then place in freezer safe zip lock bag. Push as much air out as possible before sealing bag to help avoid freezer burn.
Bake from frozen as instructed, but they may need a few extra minutes in the oven.
Store them in the freezer for up to 3 months.
