Gluten Free Red Lobster Style Cheddar Bay Biscuits

Red Lobster’s Cheddar Bay Biscuits – Gluten Free Copycat

Gluten Free Red Lobster Style Biscuits anyone?!

When I posted on a couple of weeks ago that I had come up with a gluten free version of these, many of you said you wanted the recipe, so today I finally have it for you.

I wanted to be sure I had the recipe right, so I thought I should make them a few times before sharing the recipe with you all. My family really did not mind at all that they had to eat these several times over the last few weeks. In fact, they probably would have been fine with me making them a few more times.

I dont even want to talk about how many of these I ate the first time I made them. Or the second or the third time I made them for that matter. Seriously these are so good.

Now, I will admit that it has been years, maybe ten years since I had a real Red Lobster Cheddar Bay Biscuit. I have been gluten free for over three years now, so I have not eaten there in the last three years. Before that, well we really did not eat at Red Lobster either. I know I have had them, because I have eaten at Red Lobster, it has just been a really long time.

So, I cant say if these are exactly like the real thing, but I think they are pretty close. And I can easily say these are really good.

These are best eaten the day you make them. We have reheated them them in the microwave the next day, but they really are not quite as good. Warm from the oven on the other hand they are delicious!

How These Are A Bit Different Than Traditional Drop Biscuits

The method is slightly different than a regular gluten free drop biscuit. Instead of simply dropping a mound of dough on a baking sheet, the biscuit dough is very lightly shaped into a round and then pressed gently into a disk. All the while, handling the dough as little as possible.

If you prefer to drop the dough by the mound onto a baking sheet, just flatten down any especially sharp edges so nothing burns during baking. Shaping these biscuits into disks before baking makes them really well-suited to being sliced in half horizontally and used for sausage, egg and cheese sandwiches, Eggs Benedict, or even as a hamburger slider bun.

These are no ordinary gluten free biscuits . But these are cheddar bay biscuits.

You know, the kind that Red Lobster serves? Theyre crazy cheddar-cheesy, with just the right amount of garlic, butter and a light sprinkling of fresh parsley. If you bake them a few minutes longer, youll get an extra crisp bottom that crackles when you break into it. Thats my favorite way!

How To Make Copycat Red Lobster Low

Preheat oven to 400 F. In a large bowl, combine flour, salt, baking powder, and seasoning. Add chunks of butter and mix well using a fork until butter forms into pea-size pieces.

If needed, use your hands to combine them! Stir in cheese and place bowl in the fridge.

Meanwhile, beat egg whites at high speed in the bowl of an eletric mixer until stiff. Then, fold into the flour mixture.

Using an ice cream scooper, scoop biscuit mixture onto a large retangular baking sheet lined with parchment paper. Make sure to leave a 2-inch distance between them.

Bake for about 14-16 minutes or until biscuits are set and golden brown. Let cool on a rack.

Then, mix melted butter with dried parsley and seasonings in a small bowl and brush herb-butter mixture on top of the country biscuits while warm. Serve and enjoy!

What Sort Of Cheddar Cheese Is Best

Red Lobster Gluten

You can use pre-grated cheddar cheese, or grate your own from a block of cheese. If you use shredded cheddar, you may need to add another tablespoon or two of buttermilk to the mixture, since pre-shredded cheeses have anti-caking agents that make them a bit drier.

Be very careful adding more moisture, though. The biscuit dough is meant to be just moistened. If you add more liquid than necessary, your biscuits will leak butter during baking. Its not the end of the world, but it can be a bit unpleasant.

Have You Tried Red Lobsters Own Mix

Ive read here and there online that Red Lobster has introduced a gluten free cheddar bay biscuit mix at Walmart! Since there is absolutely no Walmart anywhere near where I live ?and it doesnt seem to be available online, its like a suburban legend to me so far.

Im usually more inclined to make my own gluten free baking mix at home than to buy a boxed gluten free mix since the flours are usually so grainy and disappointing. But I would really like to try the gluten free Red Lobster mix for myself.

If youve tried it, or youve been able to find it online, please let me know in the comments. Im really anxious to give it a try! Im crossing my fingers that the mix isnt grainy since that is just wrong. Were gluten free, but quite human and have tastebuds like everyone else!

A couple of hints for this recipe, having different sized pieces of bread and biscuits can be enjoyable. But, the pieces need to be similar in size. No one wants huge chunks next to tiny ones.

On the other hand, all the diced vegetables should be the same size. While that idea might be part of the Anne Burrell mantra on the Food Network, the reality is that similar sized dices cook more evenly. It is best to use care with this step of the recipe.

From there, the recipe can be modified for taste. From a touch more herbs or even a dash of spice, there are many ways to customize the stuffing recipe a little.
