How To Turn The Dough Into Drop Cookies
If you want to turn the sugar cookie dough into drop cookies, scoop out 2 Tablespoon portions of the dough then roll into balls, place onto a silpat or parchment paper-lined baking sheet at least 2 apart, then gently press down with your fingers to slightly flatten. Bake for 8-10 minutes at 350 degrees or until the centers of the cookies have just barely set.
- Tip 1: The dough should be soft but not sticky. If its sticky while trying to roll into balls, refrigerate the whole bowl for 10 minutes. Ive never had this problem, but if you do, refrigerate vs adding more flour.
- Tip 2: The cookies will NOT be golden brown when done. Pull them out of the oven just shy of being golden brown around the edges to ensure they stay soft and chewy in the center.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Then, frost and embellish to your hearts desire!
How To Make The Recipe
Place all of the dry ingredients into a large mixing bowl . Whisk well to combine .
Pour all of the wet ingredients into a separate mixing bowl or large measuring cup and whisk well until smooth .
Pour the wet ingredients into the dry ingredients and stir well to combine . Be sure to scrape the bottom and sides of the bowl to fully incorporate and moisten all of the flour.
Form 1 heaping tablespoon of dough into a round ball and place on a parchment lined baking sheet, leaving at least 2 inches in between each one .
Bake for 8 to 10 minutes until golden and firm . Let cool on the baking sheet for 1 to 2 minutes before carefully transferring to a cooling rack to cool completely. They will continue to firm up as they cool.

Todays cookies come straight to your from my G-mas kitchen.
How-ev-er, I was trying to be sneaky and sprinkle a little Grama in there cause everyone knows that if its got a Grama behind it, its going to be baked with layers of love, which is equivalent to YUM CITY.
Yes, I am only 27 and a little bit far off from Grama-hood, but I still baked these with layers of love, just for you guys. Aw.
Now, its confession time: when I made the peppermint gluten free chewy sugar cookies recipe, and these soft and chewy sugar cookies, it was the first time I have ever made my own gluten free sugar cookie recipe. Actually, really the first time I have ventured into ANY sugar free cookie recipes!
To say I was terrified was an understatement.
Everyone grows up with sugar cookies coming out of their eyeballs around Christmas time, along with whipped gluten free shortbread cookies and healthy ginger snaps, which makes for some pretty big boots to fill.

Recipe Faqs: Tips For Gluten
Gluten-free baking can be a bit tricky particularly for first-timers. Below, I share various tips, substitutions, and answers to frequent reader interactions to help set you up for success.
- Can I substitute the almond and tapioca flour mixture for all-purpose gluten-free flour? No. Gluten-free flours behave very differently from the grain free flours that this recipe was designed for. Therefore, you should never substitute one flour for another .
- Can you substitute the maple sugar for something else? Yes. Use another granulated sugar, such as coconut sugar, or granulated monk fruit . Do not use a liquid sweetener, such as honey or maple syrup. I have not tested these with white sugar or brown sugar, so I cant guarantee that those will work.
Low Carb Peanut Butter Cookies
The traditional recipe is infamous for using peanut butter, and if that is no issue for you, keep it the same. However, if you follow a paleo or nut free lifestyle, check out these tested subs. Almond butter or smooth cashew butter are the best swaps for it, especially if you get the salted, drippy kind. To keep it nut-free, smooth sunflower seed butter or creamy soy nut butter can be used. Please note, if you use sunflower seed butter, your cookies will have an odd shade of green.
Finally, an egg is the final magically ingredient, but my vegan friends need an option too. After testing out flaxseeds, energy-G egg replacer and even a formed chia egg, I found them to either be too crumbly, too wet or just a big puddle of peanut butter and sugar. I found this recipe which mentioned using ground chia seedsand was stoked to see it work. It also provided a much better and chewier texture.
These arent your grandmas classic 3 ingredient peanut butter cookies but ones which my sugar-free, paleo and vegan readers can now enjoy. Three ingredients and 20 minutes from prep to dunking in milk.

The best ever healthy gluten free, sugar free, and keto Chocolate Chip Cookies. Crispy around the edges while staying soft and gooey in the center and ready in just 20 minutes. Trust me, you CANNOT tell how healthy these are!
A few of my favorite healthy desserts right now are these keto fudgy almond brownies, this amazing low calorie strawberry jello parfait, and OF COURSE these amazing chocolate chip cookies. This yummy recipe is crispy around the edges while staying soft and chewy in the center, plus it is very simple and super fast to whip up, they are ready in just 20 minutes because the dough requires no chilling. I even love to keep this cookie dough frozen in a perfect portion for whenever I want a single fresh baked cookie! I know, you wish you lived with me.
Pro Tip For Measuring Gluten
I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.
Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.

Can I Freeze The Cookie Dough
Yes, freezing cookie dough is so easy! The best way to freeze this cookie dough is to freeze portions out of the dough on a baking sheet just like you are making cookies. Then place them in the freezer to flash freeze them for 10 minutes.
Once the cookies are flash-frozen , place the cookie dough balls into a freezer bag. Frozen raw cookie dough can actually last 3 months in the freezer.
You do not need to thaw the cookie dough before you bake them. You may need to bake the cookies for an extra minute or two, so please watch your cookies.
