How To Make Vegan Graham Crackers:

How to make my Gluten Free Graham Crackers

There are plenty of vegan alternatives to dairy products that can be substituted in recipes for desserts or main dishes.

Vegan graham crackers can be made by using a vegan butter substitute or shortening, sugar, and vanilla extract.

Graham crackers are usually made with honey, but this recipe replaces the honey with sugar, because honey is not vegan.

Vegan graham crackers are a healthier alternative to traditional graham crackers.

To make these vegan graham crackers, start by mixing together the vegan butter substitute, sugar, and vanilla extract in a bowl.

Then add in gluten free flour and stir until combined.

Divide the dough into two halves and place each half onto a piece of parchment paper.

Shape the dough into a rectangle shape and then bake in an 350°f oven until crisp.

How To Measure Gluten Free Flour

How you measure your gluten free flour is also very important.

To accurately measure your flour, use the fork, spoon, knife method.

First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.

Then carefully spoon it into your measuring cup.

DO NOT scoop the flour with your measuring cup, youll compact extra flour into the measuring cup and then your gluten free baked goods will be dry and crumbly because they’ll have too much flour.

Finally, level off your measuring cup using a knife.

How To Bind A Gluten Free Graham Crust

There are two binders in this recipe, and an optional third one.

The butter is very important, because aside from adding tons of flavor, it binds the crumbs together. Thats why its important to use enough butter when youre making your crust.

Even though you want to use enough butter to bind the crust, you dont want to use so much that the crumbs cant absorb it all. Youll know the consistency is right if the mixed ingredients look sandy.

Sugar is also an important binder in this recipe. When the sugar heats up, the crystals melt and then solidify once the crust cools. Those melted sugar crystals go a long way in helping this gluten free pie crust hold together.

In addition to the binding ingredients, its incredibly important to tightly pack down the crust into your baking dish. I mean really really really tightly. Especially if youre using this for a no-bake dessert recipe, its even more important in that scenario.

The best and easiest way to do this is with the back of a measuring cup. You can use your fingers, but I always get the best results with Im using that flat surface of a measuring cup to my advantage.

If youd like to see an example of the difference using the back of your measuring cup makes, the photo just above was flattened using a measuring cup, while the photo at the top was pressed with just my fingers.

Use Room Temperature Ingredients

Even though there’s only 1 egg in this recipe, make sure to bring it to room temperature before mixing it into the batter. Cold ingredients resist incorporating into batter and we want the egg to be fully mixed so the crackers stick together.

A quick way to bring eggs to room temperature: Fill a measuring glass with ½ cup water. Microwave the water for 30 seconds. Float the egg in the warm water for 5-10 minutes.

Do You Have To Make Your Own Graham Crackers

Im happy to answer this with one word: no. I always have a few emergency boxes of packaged gluten free graham crackers in my pantry. Simply put, there are times when I just dont have the time to make my own cookies and the rest of the dessert.

My gluten free son loves anything with a graham cracker crust, so I try to keep a batch of my homemade gluten free graham crackers around. They really do taste just like Nabisco, and Ill often make a double batch.

I keep one batch whole, wrap them tightly and freeze them. That allows me to make desserts like the decadent no-bake banana split or our no-bake chocolate eclair cake. The other batch I process into crumbs and keep in a sealed glass container on my counter. Either Ill make them into a crust, or sprinkle some over a smoothie bowl or yogurtif Im feeling generous.

Even though I rarely use the store-bought crackers, Im super grateful that there are now enough brands of gluten free graham crackers that its possible to buy them. My current favorite packaged gluten free graham cracker brand is Schar. Theyre not as good as homemade , but theyre great in a pinch!

    Easy Gluten Free Graham Crackers

    Yield: 10-12 crackers

    • 4 TBSP Dairy Free Butter Substitute , cold
    • ¼ cup Egg Whites
    • 2 TBSP Honey **
    • 2 TBSP Water , plus 2 more if needed
    • 2 tsp Cane Sugar for topping

In a food processor, combine the flour, sugar, baking powder, baking soda and salt. Pulse 3 times to combine. Next add the cold butter and pulse to form a coarse meal.

Next add the egg whites, honey and 2 tablespoons of water to the flour mixture. Blend to combine. Add 1 tablespoon of water at a time if you need the moisture to bring the dough together. This should not be a super sticky dough, but a smooth dough that can be rolled out.

Place the dough on plastic wrap, form it into a square and wrap it tightly. Place the dough in the freezer for 15 minutes.

Preheat the oven to 350°F. Once chilled, removed the dough from the freezer. Using another sheet of plastic wrap, cover the dough and roll to to ¼ of an inch thick. Cut the dough into 2 x 2 or 2 x 4-inch pieces. Sprinkle with extra cane sugar. Score the dough with a fork. Place in the oven on a cookie sheet and bake for 15 minutes, rotating the pan halfway through baking. After 15 minutes, cut the dough again to make sure its separated. Bake for an additional 5 to 10 minutes to brown. Allow to cool on the pan for 5 minutes then place on a cooling rack to cool completely.

Use Parchment Paper And Wax Paper For The Dough

Each paper does a different job… you could just go with the parchment paper if you had to choose between the two. But definitely do not go without the parchment paper, it is a must for baking the crackers.

Here’s what the process looks like:

    • Dough goes on the parchment paper
    • Top with wax paper
    • Roll out to the right size
    • Transfer into the oven to bake

The parchment and wax paper prevent the dough from sticking.
