The butter is very important, because aside from adding tons of flavor, it binds the crumbs together. Thats why its important to use enough butter when youre making your crust.
Even though you want to use enough butter to bind the crust, you dont want to use so much that the crumbs cant absorb it all. Youll know the consistency is right if the mixed ingredients look sandy.
Sugar is also an important binder in this recipe. When the sugar heats up, the crystals melt and then solidify once the crust cools. Those melted sugar crystals go a long way in helping this gluten free pie crust hold together.
In addition to the binding ingredients, its incredibly important to tightly pack down the crust into your baking dish. I mean really really really tightly. Especially if youre using this for a no-bake dessert recipe, its even more important in that scenario.
The best and easiest way to do this is with the back of a measuring cup. You can use your fingers, but I always get the best results with Im using that flat surface of a measuring cup to my advantage.

Easy Gluten Free Graham Crackers
Yield: 10-12 crackers
- 4 TBSP Dairy Free Butter Substitute , cold
- ¼ cup Egg Whites
- 2 TBSP Honey **
- 2 TBSP Water , plus 2 more if needed
- 2 tsp Cane Sugar for topping
In a food processor, combine the flour, sugar, baking powder, baking soda and salt. Pulse 3 times to combine. Next add the cold butter and pulse to form a coarse meal.
Next add the egg whites, honey and 2 tablespoons of water to the flour mixture. Blend to combine. Add 1 tablespoon of water at a time if you need the moisture to bring the dough together. This should not be a super sticky dough, but a smooth dough that can be rolled out.
Place the dough on plastic wrap, form it into a square and wrap it tightly. Place the dough in the freezer for 15 minutes.
Preheat the oven to 350°F. Once chilled, removed the dough from the freezer. Using another sheet of plastic wrap, cover the dough and roll to to ¼ of an inch thick. Cut the dough into 2 x 2 or 2 x 4-inch pieces. Sprinkle with extra cane sugar. Score the dough with a fork. Place in the oven on a cookie sheet and bake for 15 minutes, rotating the pan halfway through baking. After 15 minutes, cut the dough again to make sure its separated. Bake for an additional 5 to 10 minutes to brown. Allow to cool on the pan for 5 minutes then place on a cooling rack to cool completely.
Use Parchment Paper And Wax Paper For The Dough
Each paper does a different job… you could just go with the parchment paper if you had to choose between the two. But definitely do not go without the parchment paper, it is a must for baking the crackers.
