How To Make This Oatmeal Raisin Cookie Recipe
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the egg, butter, cane sugar, brown sugar, and vanilla.
- Add the quick-cooking oats, gluten-free flour, cinnamon baking soda, and salt mix well. Fold in the raisins and walnuts.
- Using a cookie scoop, scoop dough out into 18-20 balls and place on the prepared baking sheet. Bake for 12-14 minutes or until lightly golden brown and cookies are set in the center. Remove from the oven, let cool slightly on the baking sheet before transferring to a wire rack to finish cooling.

There are endless variations that you can make with this recipe, just by playing around with the add-ins. You can:
- Add chocolate chips or chopped chocolate.
- Use other nuts, such as pecans, peanuts, pistachios or toasted hazelnuts.
- Consider other dried fruit, such as dry figs, apricots, dates or cranberries.
- Add other spices, such as ground ginger or cardamom.
Healthy Oatmeal Cookie Recipe Substitutions
Raisins: You can substitute dried cranberries or blueberries in place of the raisins.
Oats: This recipe was developed using traditional rolled oats. Quick cook can also be used, but I like the texture and appearance of traditional oats. Do not use instant oatmeal, or steel cut oats.
Oat Flour: We have only tested these cookies with oat flour. If you dont have oat flour check out this post on how to make oat flour for a tutorial- its so easy!
Baking Soda& Baking Powder: We dont recommend substituting the baking soda or baking powder.
Coconut Oil: You can use unsweetened applesauce instead! Applesauce can be substituted in many baked goods at a 1:1 ratio.
Maple Syrup: Pure maple syrup is different than pancake syrup! Do not use pancake syrup. If you dont have maple syrup on hand, you can substitute coconut sugar, or packed brown sugar. If using brown sugar, leave the honey out.
Honey: Honey is sweeter than maple syrup, feel free to omit the honey to lessen the sweetness of these cookies.
Eggs: Eggs really help the texture of this recipe. They can be made vegan but theyre better with eggs.
Vanilla Extract: Helps to add flavor, you can omit it if youd like.
To make these cookies vegan and egg free, substitute the egg for two flax eggs. To make 1 flax egg: combine 1 tablespoon of flaxseed meal with 2 ½ tablespoon water. Allow it to sit at room temperature for at least 15 minutes before using it in place of an egg.

Can I Freeze The Cookie Dough
Yes, you can! The best way to freeze this cookie dough is to freeze the dough balls . Place the dough balls on a lined cookie sheet and put them in the freezer to flash-freeze for 10 minutes.
Once the cookies are flash-frozen , place the cookie dough balls into a freezer bag. Frozen raw cookie dough can actually last 9 to 12 months in the freezer.
Can You Prepare These Cookies In Advance And Freeze Them Until Needed
As mentioned above, I dont recommend keeping the scooped-out balls of cookie dough prepared exactly as per the recipe below in the fridge or freezer for a long period of time, as the cookies wont spread out enough during baking, and theyll end up much too thick.
However, if youre making these cookies exclusively with the intention to freeze them for baking later, you can make them with about 20-30g of gluten free flour blend less than is required in the recipe below. Then, chill the cookie dough in the fridge until its firm enough to scoop, and freeze the scooped-out balls of cookie dough until you want to bake them.

They’re crisp on the outside, especially the edges and the bottom, but never hard to bite. Then, the browned outside gives way to a super chewy cookie all the way through.
Plus, these cookies have plenty of chewy, nutty-tasting purity-protocol gluten free old fashioned rolled oats gives these rich, moist cookies. That’s what gives them a completely different texture and flavor from another classic, our thick and chewy gluten free chocolate chip cookies.

How Do I Make Oatmeal Raisin Cookies
These cookies are so simple to make! You blend the sugars and butter from about 3 minutes until they are creamy. Then add the vanilla and eggs. Blend until well combined.
Add in the dry ingredients . Blend just until the dry ingredients are mixed with the wet ingredients.
Add in the raisins and blend until they are incorporated. Line your baking sheet with parchment paper and then using a cookie scoop or tablespoon place twelve cookies on each sheet.
Bake at 375 degrees for 12 minutes. The cookies will be lightly browned and delicious.
Pro Tip For Measuring Gluten
I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.
Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe. Also, use a measuring cup made for dry ingredients .

How To Make Them
- In a small microwave-safe bowl, heat the orange juice for 1 minute until warm. Stir in the raisins and let sit for 15 minutes.
- In a medium bowl, whisk together the dry ingredients.
- In the bowl of a stand or hand mixer, combine the butter, coconut oil, brown sugar and white sugar. Beat until smooth and fully incorporated. Add the vanilla extract and eggs and beat on medium until light and fluffy, about 2-3 minutes.
- Add the dry ingredients to the wet ingredients. Mix until fully incorporated.
- Drain the orange juice from the raisins. Now you have flavorful, plump raisins! Add the oats, coconut, and raisins and mix on low until combined.
- Refrigerate the dough for 1 hour.
TIP: After you mix the dough together its important to give it a 1-hour chill. This gives the gluten-free flour time to hydrate and really makes a difference. Its key for non-gritty gluten-free cookies!
- Preheat the oven to 375F. Line 2 baking sheets with parchment paper or a silicone mat. Using a cookie scoop, scoop out 2 tablespoon-size rounds on the prepared baking sheets.
- Bake for 12-15 minutes. They should be slightly golden and set when theyre done. Cool on the cookie sheet for 2 minutes, then transfer to a wire rack to continue cooling.
How Long Will These Oatmeal Raisin Cookies Last
These cookies will last, stored in an airtight container, for up to 1 week. Keep the container on the counter rather than in the refrigerator. Baked goods tend to dry out when stored in the fridge.
The cookies can also be frozen, in a freezer safe container, for up to 2 months. Allow the cookies to thaw overnight or pop them in the microwave for a few seconds if you cant wait to enjoy them.
