I use these tools to make this gluten free vegan cake:
- Large mixing bowl or stand mixer with the paddle attachment
- Hand held beaters if not using a stand mixer
- Measuring cups and spoons
- Plastic spatula
- Non-stick spray
- Baking pan
- I have yet to try this with round cake pans, but I would think it would work just fine, youll just have to watch it to make sure it doesnt overbake and adjust the time as needed. I just dont like making layer cake but go for whatever shape you prefer!
- Plastic wrap to cover the cake or some other cake saver or airtight container

What Vegan Frosting Should I Use For A Vegan Cake

We just love making eggless and dairy free cakes around here, so of course, we have a ton of dairy free vegan frosting recommendations as well.
Our classic vegan vanilla buttercream and vegan chocolate buttercream are a great first start. Theyre super easy to make for beginning cake bakers and taste absolutely amazing.
If youre looking for something a bit more fun, we have a delicious dairy free cream cheese frosting thats paired with our banana cake below, and a wonderful vegan Swiss meringue frosting that we use for our vegan Chiffon cake. And for people that want to go the extra mile, we also give a recipe for a vegan white chocolate buttercream thats just absolutely heavenly- used on our vegan ginger cake!
For those who want something super super easy- like store bought frosting- there are wonderful brands that offer completely vegan and dairy free frosting. Simple Mills is our favorite for vanilla and chocolate canned frostings.
In terms of vegan frosting ingredients, youll find that every frosting recipe is based with vegan butter and powdered sugar or powdered coconut sugar. We recommend Flora Plant Butter for our go-to vegan butter. It tastes just like regular butter, making it a great substitute if youre making these cakes for anyone who isnt entirely dairy free.

Whats The Best Oven Temperature For Gluten Free Vegan Chocolate Cake
Ive tested this recipe at two different oven temperatures: at 350ºF and at 320ºF , and the slightly lower oven temperature of 320ºF gives noticeably better results, with a more even crumb, less doming and a slightly sturdier, less crumbly cake.
The sponges baked at 350ºF rose less in the oven and also rose more unevenly, with a more pronounced dome in the centre. They were also crumblier and more difficult to level off.
In comparison, the sponges baked at 320ºF rose higher, were almost flat so that they required minimal levelling, and they were also less crumbly and therefore easier to handle.
So, I definitely recommend baking this gluten free vegan cake at a slightly lower oven temperature of 320ºF for best results. Note that these oven temperatures refer to a conventional/non-fan oven. If youre using a convection/fan oven reduce the temperature by 25ºF . This is a general rule of thumb that holds true for most recipes.
Does Coffee Cake Contain Coffee
There seems to be quite some confusion as to whether or not coffee cake contains coffee! Traditionally, coffee cake gets its name because its usually served with coffee . Coffee cake is not, in fact, a coffee flavored cake.
Although that would be quite delicious!
Coffee cake is essentially a vanilla pound cake with a cinnamon streusel. If you grew up around the East coast, then chances are, you know coffee cake to be the delicious breakfast treat that contains a layer of cinnamon swirled in the middle, as well as on top.
Im an East coaster, so thats how I prefer my coffee cake If youd prefer to make this vegan coffee cake as just the vanilla pound cake base and the cinnamon crumble, you can omit the cinnamon sugar middle!
Although, I highly recommend you do make it!

What Makes A Vegan Cake Moist

I honestly feel like vegan cakes are much easier to keep moist than regular cakes- maybe Im biased, but applesauce and vegan butter do such a wonderful job! It might sound peculiar to use applesauce in a cake recipe, but trust me: applesauce, you will not taste! This essentially replaces eggs/egg yolks from a traditional cake recipe.
Vegan butter is the second ingredient, but of course, any fat will help keep a cake moist. For our vegan chocolate cake, though its oil free, were using a decent amount of both applesauce and dairy free yogurt to replace the butter in the batter.

What Ingredients Are In Crisco Shortening Sticks & Can I Use Something Else
Here are the ingredients listed in the Crisco Shortening Sticks Butter Flavor as listed on the Crisco website:
- Soybean Oil, Fully Hydrogenated Palm Oil, Palm Oil, Mono And Diglycerides, TBHQ And Citric Acid , Natural And Ar-tificial Fla-vor, Beta-Carotene Added For Color.
I called Crisco at 1-800-766-7309 and they did verbally confirm that this was vegan. I have not tried it with another vegan butter, but would assume youd get fairly close results if you chose to use a vegan butter stick. I would not recommend replacing it with a liquid oil, like olive oil.

How To Make Flax Eggs
Flax eggs are quick and easy to make and only require 2 ingredients! They are a great alternative to regular eggs and make for a fully vegan bake. Youll need ground flaxseed and water. Simply combine 15g of ground flaxseed meal along with 65ml of water, stir to combine then set aside to thicken. After around 5-10 minutes, the flaxseed will have absorbed the water and would have congealed into a thick gloopy texture. Theyre now ready to use in your vegan gluten-free chocolate cake. Yippee!

Notes On The Ingredients
Apple Cider Vinegar+ Soy Milk: this is for preparing the vegan buttermilk. Regular vinegar & any vegan milk will also work if you dont have apple cider vinegar or soy milk . It gives it with quintessential buttermilk chocolate cake flavour.
Brown Sugar: you can also use cane sugar. The sugar of course not only adds sweetness but the moisture needed for the cake.
Bobs Red Mill Gluten Free 1-to-1 Baking Flour: this has been and will always be my go to! I love the perfect blend of gluten free flours found in this and how easy it makes gluten free baking for me . No guesswork, just weighing it out, and moving right along. I love how Bobs Red Mills quality is always reliable and that even after years of purchasing their products, I always get the same top notch results each time.
Unsweetened Cocoa Powder: I recommend regular high quality unsweetened cocoa powder, not dutch processed cocoa powder .
Baking Powder& Baking Soda: will help the cake rise, and also provide a lighter texture to the cake. Always test that its good!
Sea Salt: if you want to use regular salt, slightly reduce the amount used.
Applesauce: Ive hesitated to use applesauce in recipes because I wasnt sure how it would turn out, but let me tell you its magical! This gave the cake the perfect structure, texture and crumb while not interfering with taste.
Oil: takes the place of butter in this cake as the necessary fat, to ensure that the cake is nice and tender.
How To Make Vegan Coffee Cake
As with all of my recipes, the full directions and ingredient measurements are found down below in the recipe card. But well go over a brief overview of how to make an entirely vegan coffee cake here!
Essentially for the actual coffee cake, its just layers of different ratios of the above ingredients.
Heres the order of making each component:
I start with making the cinnamon sugar filling first, as this doesnt require any wet ingredients. This is just cinnamon, flour, and sugar.
The reason I start with the filling first and not the vanilla cake layer is that once the wet ingredients are added to the dry, the leavening agents begin to activate. If we dont then get the crumb cake into the oven as fast as possible, we risk our coffee cakes not fully rising.

Enhancing The Chocolate Flavor
A lot of chocolate cake recipes call for coffee. I prefer using boiling hot water as I find it helps activate the cocoa a bit more and give the cake a really rich flavor.
However, with water you miss out on the richness that coffee gives to a cake. To make up for that, I always suggest using espresso powder!
Just 1-2 teaspoons in the batter will bring out the rich chocolate flavor but wont give off any coffee flavor. Its optional, but I recommend it if you can!
How To Store This Cake

This cake is so delicious even the next day, if not even better! This vegan lemon cake is best stored at room temperature covered with foil. I keep the cake in the dish. You could put it into the fridge though if you will not eat it within a couple of days. It will stay fresh and moist for 2-3 days.

Do Vegan Cakes Taste Good
You might have stumbled onto this post as a first time vegan cake baker . One thing that I really love about the following recipes is that if youre accustomed to the taste of more traditional cakes, youll be pleasantly surprised. After one bite of any of these cakes, youd never know that theyre vegan, dairy free, and even refined sugar free and gluten free if youd like that! Never Made A Vegan Cake With Oat Flour Before
Not to worry- if youve never made a cake with oat flour before, then youre in for a treat. When combined with arrowroot starch or cornstarch, the texture is sublime. Soft, tender, and perfectly fluffy. It is a bit more delicate than regular flour. However, it makes for a great substitute for anyone whos gluten free and doesnt want to use gluten free 1:1 baking flour.
If youve tried my vegan gluten free vanilla cake that uses oat flour, then youre going to really just fall in love with this chocolate version.

Making The Cake Batter
This vegan gluten-free strawberry cake is EASY to make! You don’t even have to separate the dry ingredients from the wet ingredients!
First, add your fresh or defrosted strawberries to a food processor or blender. Blend until the strawberries form a puree. Make sure there are no chunks in the strawberry puree, though seeds are fine.
Next, simply add the rest of your ingredients to your food processor or blender. Blend the cake batter until combined.
Your final cake batter should be very thick and almost like a paste rather than a typical runny cake batter.
For this vegan gluten-free strawberry cake, a thicker batter will lead to a fluffier cake with no dense spots. In contrast, a thinner batter will lead to a denser cake.
If your strawberries were juicer, your cake batter might be a little runnier than we need. In this case, add a little more potato starch and blend the batter again.
