Vegan Chicken Nuggets Recipe (with gluten-free option)

You will need:

  • herbs & spices: thyme, fennel seeds, caraway seeds, salt, smoked paprika powder, and regular paprika powder
  • cooked chickpeas
  • sparkling water

Thats it! Sounds easy, right? Well its not hard.

Heres another pro-tip: We dont even knead the seitan by hand. We just let the food processor knead the seitan. Thats what I call a kitchen helper.

A Few Important Tips:

  • Feel free to make them, then put them in the fridge or freezer to make later on. If you keep them in the freezer, the cooking time just might take a bit longer!
  • Use any bread crumbs you like whether theyre whole wheat, gluten-free, panko or almond.
  • Serve warm and fresh! Dont wait to eat them after cooking, they are best when eaten fresh,
  • Best served with a mustard dip, ketchup, BBQ sauce or vegan aioli.

I was shocked at how many people responded requesting the recipe so I thought I would perfect them, write them up, and of course make them extra delicious with everything bagel spice. I even added a tahini dip because my kid loves to dip. The result is a crispy baked vegan tofu nugget recipe that is brimming with everything bagel spice so theyre perfect for adults and kids!

How To Make Chickpea Nuggets

Gluten Free Vegan Chicken Nuggets | Under 15 Minutes Recipe

Preheat oven to 400° F and line a baking sheet with parchment paper.

Add the chickpeas to the bowl of a food processor.

Pulse or process on low speed until the chickpeas are finely chopped and crumbly, but not overprocessed.

Transfer to a mixing bowl and add aquafaba, oat flour and seasonings.

Combine until ingredients are well incorporated.

Use your hands to form the chickpea mixture into nugget shapes and place on a plate.

Set up a dipping station by adding aquafaba to a bowl and placing the bread crumbs on a plate next to it.

Dip each nugget into the aquafaba followed by the bread crumbs.

Place the nuggets in a single layer on the parchment-lined baking sheet.

Spray the tops of the nuggets lightly with the olive oil spray.

You can omit this step for an oil-free option but note that they won’t brown as well.

Bake the nuggets for 15 minutes and then flip and spray again with the olive oil spray.

Return to the oven and bake for another 15 minutes.

Make The Coating And Bake The Nuggets

  • Preheat the oven to 375° F .
  • Put about 3 tablespoons of neutral-flavored oil on a large cookie sheet so that the bottom is completely covered with oil, and set it aside.
  • Mix together the flour, cornstarch, baking soda, baking powder, salt, and pepper in a shallow dish.
  • Pour 1/2 cup of plant-based milk into another shallow dish for getting the nuggets wet.
  • Pull off small nugget sized pieces of the dough and form it into the desired shape with your hands.
  • Place the nugget in the milk, then, in the flour mixture, then back in the milk, and back in the flour mixture for a 2nd time until it has a layer of the sticky coating on the outside of it.
  • Place the coated nugget on the oiled cookie sheet and repeat until you have used up all of the dough. Leave a little bit of space between the nuggets so they are not touching.
  • Bake the nuggets at 375° F for 15 minutes, then take out of the oven, flip each one, and place them back in the oven for another 15 minutes until they are golden brown.

Serve these nuggets with kid-friendly vegan meals like vegan mac and cheese, or a side salad with vegan Caesar, or veggies dipped in vegan ranch dressing.

How To Store The Crispy Baked Tofu Nuggets

The crispy nature is the hallmark of this recipe! Of course, when you store them, you are going to want to ensure that they are crispy when you eat them again!

You can store the leftover vegan nuggets in an air-tight container in the fridge for 2-4 days.

To reheat, simply put your oven on 350 and bake the tofu nuggets for a few minutes until warm. You can also use a toaster oven as it is smaller and cooks faster!

You can also eat the crispy baked tofu cold in a Vegan Burrito if you dont want to reheat it! This is great for meal-prepping!

For this recipe I actually recommend simmering your vegan chicken nuggets in broth for about a half hour. Theyre less dense than the roasts weve been making, so they dont take as long to cook.

Simmering them in more vegan chicken broth actually adds more flavor. The seitan will puff up to twice its size, but dont worry, it will shrink down again in the air fryer or oven.

So before we make the dough, start a large pot of broth on the stove, at medium heat. Throw a lid on there so it heats faster.

Once the nuggets are formed, we can bread them. To do this, put the flour, spices and soy milk in a bowl and mix until a lump-free dough is formed.

In another bowl, add the breadcrumbs and the sesame seeds.

To bread the nuggets, first dip them in the batter, then take them out and let the excess batter drip off. Then place the nuggets in the breadcrumb mixture, flipping them a few times so they are nicely coated.

Then transfer the nuggets to a plate and let them rest for a few minutes.

How To Fry Chicken Nuggets

If you want your chicken nuggets to be super crispy, you can fry them instead of baking them.

We also have a fried gluten free chicken tenders recipe that you might enjoy making!

Simply heat a few inches of oil in a deep fryer or dutch oven until it reaches 350°F/180°C. Cook the breaded nuggets in the oil for 7-8 minutes, or until the breading is golden brown and the chicken is fully cooked.

You should fry these in a few batches so that you don’t overfill the fryer.

While you’re frying, I suggest making some gluten free onion rings too.

    How To Make Vegan Chicken Nuggets: The Dough

    Well make the dough the same way we make other seitan dough.

    First, blend the beans, spices, and about ¾ cup of the vegan chicken broth in the food processor or blender until it is smooth.

    Then add your vital wheat gluten and blend again briefly, until most of it has been incorporated. It may still be a little powdery but thats OK.

    Add it to a large bowl and press everything together with your hands. You may want to add a tablespoon of water or two if it looks a bit dry.

    DO NOT OVERKNEAD. Seriously, just try to form the dough.

    At this point you can do whatever youd like, shape-wise. Make vegan chicken strips or patties using the seitan.

    Now tear off ½ to a full tablespoon sized chunks. I found it easier to cut the chunks using kitchen shears.

    Then briefly press each one so theyre about a ½ inch thick nugget shape. They dont all have to be perfectly the same size.

    When I did a larger tablespoon size nugget, it made about 35 nuggets. I tried doing slightly smaller nuggets a separate time and came up with about 45 nuggets. It may be slightly different for you.

    Place the nuggets on a plate until they are all done we want to add them all together so they cook evenly.

    How Do You Make Chickpea Chicken Nuggets

    First, drain and rinse your chickpeas, but make sure to drain them over a bowl to save the chickpea liquid.

    Next, if you dont have oat flour, you can make your own in the blender. Just blend 1/2 cup oats until it forms flour. Use your food processor if you dont have a blender. Add the chickpeas into your food processor with onion, garlic, smoked paprika and salt. Pulse to combine. Now add the oat flour and 2 tbsp of the chickpea liquid. Pulse until combined, scraping down the sides as necessary.

    Make sure that you leave some texture, do not blend until smooth, blend until its well combined but there is some texture left.

    Make sure you have clean hands because now its time to make the nuggets themselves.
