The Cookie Connection: Gluten

Mattydale, N.Y. — Betty Johnson and Kathy Sniezak started their gluten-free bakery, The Cookie Connection, nearly a decade ago.

At first, the sisters ran a stand at the Central New York Regional Market. Then they moved into a space behind Strada Mia in Syracuse.

Slowly, they built a following of customers and businesses, who grew to trust that their half-moon cookies, lemon pound cakes, chocolate muffins, birthday cakes and pizza crusts were completely gluten-free.

They only opened to the public for a few hours on Saturdays. The National Celiac Association certified the bakery is safe for people with gluten intolerance. During the week, as they years went on, they baked for a growing list of wholesale buyers, which now includes Syracuse University and Wegmans.

A few weeks ago, they moved into a storefront in Mattydale Plaza at 2803 Brewerton Road. The new space is more than triple the size of their old spot at Park Avenue and North Geddes Street. This Saturday, they’ll celebrate with a grand opening.

The sisters say they learned to bake from their mother and grandmother. But they taught themselves how to make sweet treats and breads out of gluten-free doughs.

“It’s nothing like regular baking,” Sniezak said. “The mixing, leavening, baking time. It’s all different.”

Gluten is a protein in wheat flour that provides strength and softness in baking. But it can also cause health problems for some people who have digestive problems and autoimmune diseases such as celiac.
