Gluten Free Gingerbread House
For a true showstopping festive centrepiece, it has to be a gingerbread house, and my gluten free version really takes the biscuit . Absolutely delicious gingerbread biscuit, with orange-flavoured icing, chocolate buttons, sprinkles and sweets.
When I first made this house the cries of oh but its too pretty to eat quickly turned into happy silent munching. The whole thing had been eaten before the day was out!
I loved making this gluten free gingerbread house. Not only was it beautiful to look at and DELICIOUS to eat, but making it was quite therapeutic and a fun way to unleash my creativity. Next time Ill let my three year old get involved, as she was chomping at the bit to have a go with the icing bottle. This is a lovely activity for kids and adults alike.
My gluten free gingerbread recipe provided the perfect biscuit base for constructing the house. The biscuit is designed for eating and enjoying , yet is strong and suitable for construction, without being dry.
Assembling Your Gluten Free Gingerbread House:
First, you will need to decide what you will use to build your house on. A cake board works great, as does a cutting board or baking sheet. Just be sure that it is rigid enough that you will be able to move your house without it sliding off.
Now sticking the house pieces together. This part doesnt need to be difficult, and there is no need to pull your hair out doing it. My friend, who used to build gingerbread creations every Christmas, told me a tip years ago, and Ive done it ever since.

How To Make Your Gingerbread House Template
Obviously, when making a gingerbread house you need a template or cutters to create the shapes. You can buy cutters, but I saved money and made my own template at home out of card. Here are the dimensions you need if you want to give it a go:
- 2 x Roof panel: 12cm x 24cm rectangle
- 2 x Long side: 12cm x 20cm rectangle
- 2 x Short side: 14cm base, 12cm side, 18cm at centre point house shape
You will need to cut two of each, giving you 6 gingerbread pieces in total in order to build the house.
Do I Need Any Specialist Tools
No you should have most bits in your kitchen and if not you can make do. As I mentioned above, you can buy cutters if you want, otherwise most of the kit can be found in your kitchen.
For the base I used a cake board, as the foil covering gave good grip. I used a pizza wheel as a nifty way of cutting out the shapes without dragging the dough, but a sharp knife would work well.
As for the icing, I would recommend a plastic squeezy bottle as it makes life easy. There are loads of varieties on and you will likely be able to pick them up in small local shops too.

Tips For Making Our Gluten Free Gingerbread House
If you need to square up the edges of the house pieces, use a microplane to file off any rounded edges that might prevent the house from sitting flat level. Just watch your fingers since they can be really sharp .
Assemble your gingerbread house on a cardboard cake board or the back of a sheet pan covered with foil for easier clean up.
We used a cake board that had a white surface on one side that made it easy to create a winter scene. I added some shredded coconut around the house and bottle brush trees to make it look snowy!
If you dont have frosting bags, you can use ziploc bags and just snip off the corner of the bag and use it for your piping tips . That way you can just toss the bag once youre done using it, and you can use several different bags for different tips or frosting colors.
The roof pieces in my first house were too small, but we fixed that in our template!
Cutting Out Your Gf Gingerbread House:
My wonderful husband created a . It is a basic house, and the dough recipe will give you one house, plus maybe a few people and/or trees, if you want. The gingerbread tastes great to eat too, so make yourself a few gingerbread men to nibble on while decorating, if you want.
You can also use a set of cutter to build your gluten free Gingerbread House. Last year after Christmas I bought a set of gingerbread house cutters. The price was discounted because it was past the season, and it made baking a gingerbread house easier than ever.

How To Make Gluten Free Royal Icing
The good news is that royal icing is naturally gluten free and actually very simple to make.
There are a couple of different ways you can make it – I’ve popped my favourite in the recipe card below.
I choose to make royal icing with icing sugar and egg white powder.
You can make it with liquid egg whites .
And you can also buy royal icing sugar which has the egg white powder already mixed in.
Whichever way you choose is really simple, but here’s a breakdown of the three options I’ve tried and tested:
Royal Icing 1: Dried Egg White Powder
- 20g egg white powder
- 660g icing sugar
- 100ml cold water
Simply whisk everything together for around 4-5 minutes to hydrate the egg white powder and you’ll have a lovely thick icing which sets hard.
Royal Icing 2: Liquid Egg Whites
You can either use fresh egg whites or – as advised for safety – pasteurised egg whites which you can easily buy in a carton.
I tend to use 3 egg whites and around 450g of icing sugar, and then whip this up until it’s nice and thick – adding a touch of cold water if it needs thinning.
Royal Icing 3: Royal Icing Sugar
Another easy way to make royal icing is using royal icing sugar, which already has dried egg whites added to it.
Simply add water and mix until you get a lovely thick icing.
Whichever royal icing you choose, as long as it is nice and thick it should work.
Just use whichever method is more accessible to you in terms of ingredients.
Assemble The Gingerbread Cutouts
To assemble the gingerbread house. Add icing to the rims of all the pieces.
STEP 6: Carefully place two of the four squares on a flat surface or dish. Add extra icing to the base to seal it. Do the same to the remaining two sides. Attach one of the long tops and the triangles. Seal all around with extra icing as needed. Add the last two roof pieces.
STEP 7: Let the gingerbread house dry completely. If the icing is not completely hardened the house may fall apart when it is decorated . Use the icing as a glue for all your candy pieces and decorate the house.

What Kind Of Dairy Free Butter Should I Use
Just like with our regular gingerbread cookies, I recommend using a dairy free butter that is more firm at room temperature, such as Country Crock Plant Butter , or something like the Flora plant butter.
I dont recommend using the Earth Balance butter in this recipe since it tends to be too soft at room temperature and unless the recipe calls for it specifically, the cookies often spread too much when people use it.
Just as a note, the Country Crock plant butter sticks do not use soybean oil but the tubs do have soybean oil. So if you have soy allergies get the sticks not the tubs.

Our Old Gingerbread House
I had originally posted about gingerbread houses back in December of 2011 just a couple months after I started The Fit Cookie. One of our local bakeries was doing a gingerbread house contest so I jumped on board and created a gingerbread house scene complete with a rock path and a candy pond with Swedish fish.
The photos arent great, but here are some of my old photos for some gingerbread house inspiration. The licorice Rips make great shingles for a roof and the pond is still one of my favorites. Its made with blue gel frosting, but you can also make one with melted blue Jolly Rancher candies similar to how we made windows for our new house with starlight mints.
We left half the roof undone so people could see what it looks like
Our old one also had a door and shutters, which you can add to your house if you want to, youll just need to measure them out and cut them from the extra cookie dough.
For the candy stained glass windows in our old gingerbread house, we used the same method of melting candy into the windows except we used Jolly Ranchers instead of starlight mints.

This gluten free gingerbread house is the most fun to make – use this template to cut the shapes out. I recommend making this up to the stage of constructing the walls of the house, and then leaving it to set overnight before adding the roof and decorating.
- 600g plain gluten free flour
- 6 tsp ground ginger
- 1 tsp bicarbonate of soda
- 3 packs Schär Spekulatius biscuits
- 1 pack Schär Chocolate Orange Fingers
- Gluten free sprinkles

How To Make This Recipe
STEP 1: In a large bowl mix together the dry ingredients. Then add the maple syrup, melted coconut oil, molasses, and vanilla. Using a spatula mix it together then using your hands continue to knead to cookie dough until it is well blended and the flour is combined.
STEP 2: Roll the dough out on parchment paper to be ¼ thick .
Then using a ruler and knife start cutting out the shapes. During this process you will cut the sides of the house, roll the dough and cut the roof, then roll the dough and cut the last part of the roof. Here are the measurements and pieces you will be cutting:
- 4 4×4 inch squares for the sides of the house
- 2 5×3 inch high long triangles with a flat top for the roof
- 2 4×3 inch high triangles for the sides of the roof
To make the four squares cut a large square that is 8×8 inches using the ruler.
Then make marks on all four sides that are at the 4 inch point and make 4 even squares. Transfer the pieces to a parchment paper lined baking sheet.
STEP 3: Then roll the dough out again and make the longer triangles with the flat tops. Make the dough 10 inches long by 3 inches high. Cut in on the sides so they are even. Transfer the pieces to the baking sheet.
STEP 4: Roll the dough out again to ¼ inch thick and cut out 2 triangles that are 4 inches long by 3 inches high. To do so make one long cut that is 8 inches by three inches high. Cut in half then form into even triangles with the top point at 2 inches in. Transfer to the baking sheet.
