    A couple of years ago, I posted a Soft Gluten Free Sandwich Bread Recipe that still gets a lot of attention. I hear from hundreds of people every month who love it & at least as many begging me to create a Vegan version of it. It wasnt until we discovered my son was also allergic to eggs that I started taking the Egg Free options very seriously.

    So, I experimented with Chia Seeds, Flax Seeds, Psyllium Husks, Applesauce, Bananas, Egg Replacers, and several combinations of Baking Powders & Acids But nothing I tried could truly duplicate a good loaf of bread. Discouraged, I set the idea aside for a while and stuck to making gluten free flatbreads& hot dog buns Until Recently

    Remember my post a couple months ago about Aquafaba being used in place of eggs to make Meringue?? Well, I couldnt shake the idea that I could use this somehow for bread, so I tried, and tweaked, and tried again and it worked beautifully! Ive made at least 20 batches with this recipe and it turns out soft & delicious every single time. So, now its time to share it with you! =)

    Can I Make This Recipe In A Bread Machine

    Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

    So many of you had written to me asking if this gluten free bread recipe works with Bobs Red Mill One to One Flour that I just had to find a way to test it out. I ordered the flour through iHerb and had it delivered here to Spain so I could put it to the test. And now I can confidently report that YES it does!

    Recipe Notes & Substitutes

    • Some readers replaced the buckwheat flour with oat flour or sorghum flour and the bread still turned out amazing.
    • Rice flour works great in this bread recipe, but feel free to experiment with lentil flour, teff flour, sorghum flour, or quinoa flour.
    • You can use arrowroot flour instead of tapioca flour/starch. Cornstarch or potato starch will most likely work as well.
    • Chickpea flour is the same as garbanzo bean flour. It adds plant-based protein and I love adding it to bread. Some readers had success using oat flour instead.
    • Psyllium husk powder is the most important ingredient in this recipe and cannot be subbed by any other ingredient. Make sure to use psyllium husk POWDER. If you have psyllium husk , you can blend it in a blender or electric spice/coffee grinder until its a fine powder.

    How Long To Bake Gluten

    This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

    Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

    You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

    This gluten free loaf can be stored on the kitchen counter, wrapped in a towel, for a couple of days. Our family prefers to slice and freeze it because we dont eat bread every day and its super easy to pop into the toaster when we want it.

    As with most breads, especially gluten free breads, my personal opinion is that it tastes better toasted. We do LOVE to eat fresh slices covered in ghee the day that we bake it, but after that, toasted is the way to go.

    What Is The Best Type Of Bread Pan For Baking Gluten

    I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.

    I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.

    If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!

    What About The Substitutions And Texture

    Were using chia eggs in place of eggs, and the texture is still perfect as sliced sandwich bread that has a nice crust on the exterior and soft interior. You dont even need baking powder or baking soda!

    While not totally necessary, Im a big fan of baking bread in a Dutch oven with a heavy lid. I love the way a Dutch oven produces a high and steady heat. The heavy lid keeps the moisture inside during the first 20 minutes of the bake, allowing the bread to spring up or rise further while cooking.

    If you do not have a Dutch oven, no worries? You can make beautiful bread in a large cast iron skillet with another skillet underneath with water to create the steam needed. Do not use glass as it can shatter at high temperatures.

    Best Gluten Free Flour For The Bread Machine

    There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.

    This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.

    Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.

    Step 4: Pour the whisked dry ingredients on top of the wet ingredients.

    Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.

    Step 6: This is what the batter looks like after the bread machine mixes the bread dough. You will see how wet this batter is compared to normal bread dough. This is what you want.

    At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.
