Cheesy Vegan Pasta With Tempeh

Gluten-Free Veggie Pasta And Sweet Potato Fries | Healthy Recipes | Healthy Grocery Girl

This creamy, cheesy vegan pasta sauce made with sweet potato is restaurant-worthy and will satisfy all your cravings. Sautéed tempeh and mushrooms added for extra protein.

Is there anything better than a comforting bowl of pasta? I think not. And this Cheesy Vegan Pasta with Tempeh might be my favourite recipe yet!

The vegan cheese sauce is made with none other than steamed sweet potato blended with creamy coconut milk and nutritional yeast for a deliciously savoury flavour. Sounds strange but it’s delicious, I promise.

I then add sautéed tempeh and mushrooms to the mix for extra protein and flavour, mix the whole lot with freshly cooked pasta et voila! My favourite healthy pasta dish.

Health Benefits Of Zucchini

There is so much zucchini in the summertime, its the perfect season to enjoy this nutrient-dense vegetable! They have vitamins A, C, and K as well as manganese, potassium, and magnesium. Vitamin A is great for your vision, and vitamins A and C both support immune system health. Zucchinis are also high in water and fiber! Leave the skin on for optimal nutrition and choose zucchinis that are small to medium sized, firm, and free of nicks or scrapes.

Brown Rice Quinoa And Corn

Gluten Free Roasted Vegetable Pasta Bake GF

You can find many store brands that have gluten free whole grain pasta options.

Brown rice, quinoa, and corn pasta varieties have been around for years. Some are made with brown rice or corn alone while others are blends of some or all of these grains.

Youll find many brands available including Tinkyada, Barilla, Jovial, Lundberg Family Farms, Ancient Harvest, and Le Veneziane as well as many store labels including Good & Gather at Target, Trader Joes, and Life GFree at Aldi.

One half cup serving of cooked brown rice, brown rice and quinoa, or corn pasta has approximately:

  • 22 grams of carbohydrates
  • 0.5 grams of fiber
  • 2 grams of protein

These types of pasta can get mushy if overcooked. Cooking for the shorter duration suggested on the package and then testing a piece to see if it’s done can help prevent that.

These types of pasta are widely available at most grocery stores and are generally less expensive than legume pastas.

    Black Bean And Soybean Pasta

Black bean pasta may be made with black beans or black soybeans.

I found a few varieties of black bean pasta but noticed only one brand is from black beans. The others are made from black soy beans. That is important to know if you have a soy allergy.

Bellabondonza is the brand made from black beans. One half cup of cooked pasta has:

    • 8.5 grams of carbohydrates
    • 6 grams of fiber
    • 12.5 grams of protein

Soybean pasta is available in black soybean and edamame varieties. Brands include Explore Cuisine, Bellabondonza, and The Only Bean.

One half cup cooked of either of these varieties has:

    • 10 grams of carbohydrates
    • 5 grams of fiber
    • 12.5 grams protein

Nutritionally, black bean and soybean pastas are very similar to each other. When compared to lentil and chickpea pasta, they’re lower in carbohydrates, higher in fiber, and higher in protein.

    Ingredients You Must Avoid

If gluten is the only thing youre avoiding, then all of the pasta varieties listed above are good options for you. Of course, always check ingredient lists to be sure the product is safe and always consider the potential for cross-contact in production.

Many pasta varieties are made with eggs so, again, always check labels to make sure.

    Top Tip For Cooking Gluten

    • A lot of gluten-free pastas release a lot of starch during cooking . This means that the cooking liquid can become very ‘gloopy’ and it isn’t completely removed from the pasta even after you’ve drained it. This can really affect the taste and texture of your final dish.
    • This problem can be avoided if you pour boiling water over the pasta after you’ve cooked and drained it, which completely gets rid of the cooking liquid and excess starch, infinitely improving the taste and texture of your dish!

    Recipe Tips & Substitutions

    • Gluten-free pasta can be a little trickier to cook than regular pasta. If its overcooked it gets mushy which is why its always best to check for doneness a few minutes early rather than later. You want the pasta to be al dente, cooked but still a little firm.
    • Dont let the pasta sit in a bowl by itself or it will stick together. Add the vegetables and reserved water as soon as the pasta is done cooking.
    • There are quite a few options for gluten-free pasta available including ones made from corn, beans, rice, lentils, and even buckwheat flour.
    • If youre on a dairy-free diet, look for a dairy-free feta option in the refrigerator section of your local health food store. Or, just leave out the cheese in this recipe.

Can I Freeze This Vegetarian Pasta Bake

Yes! This pasta bake is great for making ahead and freezing. If youre freezing an entire pasta bake, I recommend skipping steps 4 and 5.

Instead, after baking for 55 minutes, let it sit for about an hour before covering and freezing. Once youre ready to reheat it, bake at 400F for 45 minutes. Take it out of the oven, sprinkle with mozzarella, then bake an additional 10-15 minutes uncovered, until the cheese is browned and bubbly.

If youd like to freeze individual portions, bake the pasta all the way through, then spoon into freezer-safe containers. You can reheat individual portions by microwaving for 3-4 minutes, or by baking at 400°F for about 20 minutes.
