Is there anything better than a comforting bowl of pasta? I think not. And this Cheesy Vegan Pasta with Tempeh might be my favourite recipe yet!
The vegan cheese sauce is made with none other than steamed sweet potato blended with creamy coconut milk and nutritional yeast for a deliciously savoury flavour. Sounds strange but it’s delicious, I promise.
I then add sautéed tempeh and mushrooms to the mix for extra protein and flavour, mix the whole lot with freshly cooked pasta et voila! My favourite healthy pasta dish.

Gluten Free Penne With Sauteed Veggies
- 1 box Barilla Gluten Free Penne
- 4 tablespoons extra-virgin olive oil
- 1 shallot, minced
- 1 bunch asparagus, sliced diagonally
- 1 pint cherry tomatoes, halved
- 10 fresh basil leaves, torn
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
Bring a pot of water to boil.
- Step 2
Meanwhile, in a skillet, saute the shallot in olive oil over medium heat until translucent – about 2 minutes. Turn the heat to high and add the asparagus and tomatoes. Saute for 2 minutes, then season with salt/pepper.

Cook the pasta according to package directions, then drain and toss with veggies. Stir in the cheese and basil.

- Gluten-free pasta can be a little trickier to cook than regular pasta. If its overcooked it gets mushy which is why its always best to check for doneness a few minutes early rather than later. You want the pasta to be al dente, cooked but still a little firm.
- Dont let the pasta sit in a bowl by itself or it will stick together. Add the vegetables and reserved water as soon as the pasta is done cooking.
- There are quite a few options for gluten-free pasta available including ones made from corn, beans, rice, lentils, and even buckwheat flour.
- If youre on a dairy-free diet, look for a dairy-free feta option in the refrigerator section of your local health food store. Or, just leave out the cheese in this recipe.
