Gluten Free Biscuits and Gravy: Southern Style

This gluten free breakfast casserole recipe is so easy to make! In a 12-inch frying pan on your stovetop add the olive oil and breakfast sausage. Cook the breakfast sausage until there isn’t any pink and it is done. Sprinkle the gluten free flour overtop to soak up the excess grease and juices.

Pour the milk, salt and pepper over top. Stir to combine. Pour the gravy mixture into a 9×13 baking dish.

To make the buttermilk biscuits add the gluten free flour, baking powder, salt, pepper, buttermilk and eggs in the bowl of your stand. Mix just until the ingredients are blended together. The dough will be really sticky!

Using a tablespoon dollop the gluten free buttermilk biscuit dough over the sausage gravy evenly. Bake at 350 degrees for 30 minutes or until the gravy is bubbling and the biscuits are done.

How To Make Gluten

  • First brown the sausage in a large skillet over medium-high heat. Use a wooden spoon to break up the sausage as it cooks.
  • Stir in the seasonings and flour to coat the cooked sausage mixture. Reduce to medium heat.
  • Gradually whisk in 2 ½ cups milk, adding about ½ cup at a time. This prevents lumps from forming in the gravy. Reduce or increase the amount of milk to reach a desired consistency.

    I use Bobs Red Mill 1 to 1 Baking Blend for my gluten free flour and find it works perfectly for thickening my gravies. I have used other blends that dont contain xanthan as well and they seem to work just fine. I have not tried gluten free flour blends that are oat or nut based, so though they make work to thicken the gravy, they may provide a different texture or flavor than a rice based flour blend.

    Some people use cornstarch as a gluten free way to thicken gravies. Since this is a white gravy I do not recommend using cornstarch as it will make your gravy gelatinous and leave you with a very different gravy than traditional white gravy.

    Do I Need To Make A Roux For Gluten

    You may have noticed that I skipped the traditional roux-making process that many gravy and biscuits recipes call for. Traditionally, flour is cooked with the drippings from the sausage to make a roux, and then the liquid is added to create the gravy.

    When using gluten-free flour to make this sausage gravy, this process isn’t entirely necessary. Instead, I just mix all of the ingredients together and let the gravy thicken as it heats up.

    Make The Sausage Gravy

    Heat Oil & Add Sausage: Add the oil to a skillet over high heat and add the sausage.

    Cook Sausage: Break the sausage up and cook it until browned.

    Reduce Heat & Add Dry Ingredients: Reduce the heat and add in the flour, dried thyme, garlic powder, onion powder, black pepper and salt. Allow the mixture to cook for a few minutes.

    Add Milk: Stir in the milk and cook until thickened.

The family recipes that our mothers and grandmothers have always made. The traditional and regional recipes have been handed down for generations.

    The comfort foods we turn to when we are sick or celebrating a holiday. Or that recipe that makes you think of your neighbor when you were a kid. We all have recipes like that. Those recipes that we long to have again, but have not been able to get just right.

    For my family, one of those recipes is biscuits and gravy. My husband and kids love them. They miss them. My husband remembers having biscuits and gravy often growing up. His mother and grandmother used to make them all the time. He missed them when we first went gluten-free.

    Now a side note about my family. We never ate biscuits and gravy growing up. Like really never. I grew up in Oregon, very far from the south, and the tradition of biscuits and gravy.     What Is Sausage Gravy

    Sausage gravy and biscuits don’t get any better than this. The rich gravy made with the cooked sausage renderings is poured generously over layered light and flaky biscuits.

    Gravy is just a roux, or a mixture of cooked meat drippings with flour, mixed with a flavorful liquid, like chicken, beef or vegetable stock. Here, the meat drippings are the rendered fat from cooked sausage, to which we add our most basic gluten free flour blend. To that mixture, we add two liquids: chicken stock and milk.

    Gravy made from rendered pork sausage fat is particularly delicious. Pork adds a touch of sweetness and if you buy the good stuff, it even smells good raw. All of that potential flavor just needs to be unlocked.

    How This Differs From The Original:

    I didn’t do anything crazy here. The only thing I did was swap the all-purpose flour that I use to create a roux and thicken the gravy with gluten free flour. I used Bob’s Red Mill’s gluten free flour because it always seems to produce results that are consistant to using all-purpose flour, but I don’t really think the brand matters all that much in this recipe.

    The purpose of the flour is to thicken the milk gravy. I suppose you could thicken it with cornstarch instead of gluten free flour, but I haven’t tried that method and can’t verify whether it would work or taste good.

    I’ve made my homemade flaky buttermilk biscuits and sausage gravy, which both have a ton of gluten for my family countless times, and they couldn’t tell that this gravy was gluten free.

    You could also transform my country bacon gravy into a gluten free recipe by making the same substitution.
