Simple Ingredients For This Chicago Style Pizza

How to make a gluten-free Chicago-style deep dish pizza

Here are the 5 simple ingredients:

  • Gluten-Free dough
  • San Marzano canned peeled tomatoes
  • Mozzarella cheese
  • Grated Parmesan Cheese

So, lets start with the dough. I used Wholly Wholesome Gluten-Free Pizza Dough. This dough is perfect for this pizza because you need a dough that is pliable enough to spread up the sides of the pan. Because the Gluten-Free dough is not as elastic as pizza dough made with wheat flour, when you spread it in the pan, it stays in place. I buy this dough from Fresh Direct.

Of course, feel free to use any gluten-free dough that your local grocery store sells. After spraying an 8-9 round pan with Olive Oil cooking spray or rubbing it with Extra Virgin Olive Oil, place the dough in the center of the pan and press it out to cover the bottom and then up the sides, making sure to pinch any holes back together.

Is Deep Dish Pizza Gluten

I’ve never been to Chicago, but I have a few friends who live there, and they tell me that some places make a gluten-free crust, but most don’t. That is not surprising since gluten-free pizza is a whole other animal at a pizza restaurant where flour is usually flying all over the kitchen. I sent them this recipe to test for me, and all said it’s the best gluten-free deep dish pizza, which means you needed this recipe.

Recipe Step By Step Directions:

Step 1: In a small mixing bowl, add the yeast, sugar, and warm water. Let the mixture sit for 5-10 minutes until the yeast is frothy. Be sure your water is not too hot. I like to use this digital thermometer to test to make sure the temperature is around 110º F.

Pour the yeast mixture into a standing mixer bowl with a paddle attachment and add the oil, eggs, and water. Whisk to blend the wet ingredients together.

Step 2: Add the dry ingredients to the mixer bowl and turn it on low speed. Mix until the flour is almost incorporated in and then increase the speed to medium until you have a dough ball.

Step 3: Your dough will look similar in consistency and texture to this dough. You only will get one good rise so shape the dough in the pan before rising the dough.

Step 4: Oil a 12-inch cast-iron skillet or two mini skillets. Add the dough to the pan. Press the dough into the bottom of the pan and let it come up the sides of the pan.

Step 5: Cover loosely with plastic wrap and let the crust rise in the pan for 45 minutes. Do not press the dough down because it will not rise back up.

NOTE if you are making this true Chicago style, you need to switch the order. In Chicago style, the toppings go first on top of the crust, then the cheese, then the sauce!

Step 6: Preheat the oven to 425º F. Spread pizza sauce on the top of the dough. My homemade gluten free pizza sauce is quick and easy to make!

Best Gluten Free Pizza In Chicago

My current ordering places are Lou Malnatis and Home Run Inn. Any other suggestions? Im not a super fan of Chicagos Pizza, .

Would love to know of a good one too. I have gone to Chicagos Pizza and thought it was pretty good, but have since read reviews where people have been getting sick.

Spacca Napoli, hands down. But it is more of a classy joint than a pizza parlor, and not cheap.

Have you been to Da Luciano? I only visit Chicago a few times a year, so I havent had their pizza, but they have an extensive gluten free list. Its actually incredible. Their stuff in general is really, so I wouldnt be surprised if their pizza followed suit.

Though deep dish has serious roots in Chicago, most Chicagoans are regular thin crust pizza eaters for their weekly pizza night. Deep dish, in reality, is spared for those special pizza dining occasions, and rightfully so!

Im not typically one for crazy keto recreations and Ive never been a fathead dough fan either. But, I wanted to challenge myself to try and create a flaky, buttery, deep dish keto crust that would really do this pizza justice.

We say: Udis offered probably the second best gluten-free crust we tried. When cooked, it was crispy around the edges and the bottom was not soggy and limp like most gluten-free pies we tried. Theres plenty of pepperoni too. But the star of this show was the generous amount of ooey-gooey cheese. And lots of cheese is never a bad thing.

The first time my husband and I visited Chicago, he took me to Giordanos Pizzeria just to make me take in the smells of the pizza. Even though he could no longer eat the deep-dish pizza, his former favorite dish, the smell was enough of an experience to satisfy his nostalgia for the days before celiac and kosher. Shortly after developing Blends by Orly, I was given the challenging opportunity to develop a gluten-free deep-dish pizza for a restaurant in LA. You can only imagine the excitement in my husbands eyes when he dug his teeth into his first gluten-free deep-dish pizza. This recipe has a crusty outside and soft doughy inside. If you dont want to make your own sauce, you can use jarred tomato sauce. This extra cheesy Gluten Free Chicago Style Pizza will impress all at your Shavuot table.

  • 1 package of active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water
  • 1/4 cup vegetable oil
  • 2 1/2 cups Blends by Orly Tuscany Blend Flour
  • 2 teaspoons salt or to taste
  • 1 tablespoon olive oil
  • 1 1 /2 cups canned ground tomatoes
  • 1 teaspoon dried oregano

Gluten Free Pizza Crust Chronicles

This isnt my first attempt at a gluten free pizza crust recipe. Ive tried countless times and the results have only beenmeh. But recently I ordered a couple boxes of King Arthurs Gluten Free All Purpose Flour from iHerb to see if it would work in my Gluten Free Bread Recipe. It worked so well that I decided to try out the gluten free pizza crust recipe on their website as well.

Chicago pizza will probably forever be associated with thick-as-a-brick styles like deep-dish and stuffed pizza, but youll be hard pressed to find a thinner pizza anywhere than the offering at Pats Pizza. In some parts, the flaky crust looks nearly paper thin, yet it stays sturdy enough to never collapse. On top, the sauce is spread all the way to the edges, so you get a dark tomato flavor with each bite.
