Whats Vital Wheat Gluten

Vital wheat gluten comes from wheat flour. The wheat flour is hydrated to activate the gluten, and then the gluten itself is extracted, dried, and ground into a powder.

Because its pure gluten, you dont need a lot to have a big impact in your baking. When you combine it with low-protein flours, like all-purpose flour, it bumps up the protein percentage for chewier, more shapely breads.

But you dont need to stop at low-protein flours. You can also add it to any bread recipe that might need a little extra support and structure, such as recipes with a lot of fruit, seeds, or nuts. You can also use it to make seitan, a vegetarian-friendly alternative to meat.

You can buy vital wheat gluten at your local grocery store, often in the baking section, though occasionally it pops up near gluten-free sections . Walmart does carry it, as well as Whole Foods, and nutritional supplement stores such as The Vitamin Shoppe.

Whats A Good Price For Flour

Thats the magical question isnt it.

For amateur bakers who want to save money, Ive seen Walmart sell large 25 lb. bags of all-purpose flour for about $5.18, or as little as $0.02 an ounce. I buy that flour all the time and use it for many of my recipes. It gets the job done.

However, that doesnt necessarily mean the flour is amazing quality. Serious bakers tend to opt for well-known brands such as Arrowhead Mills, Gold Medal, and White Lily. These brands can range anywhere from $0.05 an ounce to as much as $0.20 an ounce.

As a rule of thumb, Id say try to find all-purpose flour that costs less than $0.10 an ounce and bread flour for less than $0.15 an ounce.

Whenever possible, buy flour as part of a bulk sale to get an even lower price. Then buy a bag of vital wheat gluten to have on hand so you can swap between bread flour or all-purpose depending on whats available.

I know pandemics tend to make flour more difficult to find at times, so just keep an eye out for good deals whenever you can find them and then stock up.

Keto Bread With Vital Wheat Gluten

One of the main reasons we avoid wheat bread on keto is because of the grains but what people dont know is that the protein in wheat aka gluten is entirely keto friendly and very low carb! If youre lucky enough to be able to get your hands on some, you can make this keto bread with vital wheat gluten!

**NOTE: This bread contains gluten and therefore anyone with celiac or gluten intolerance should NOT make this bread.

So I havent tried making this vital wheat gluten bread in a bread machine but its worth a try. If anyone gives it a go let me know how it turns out!

The two main ingredients in this bread vital wheat gluten flour and almond flour. You will want to make sure that you get vital wheat gluten flour and NOT gluten flour. Most gluten flours are just high protein wheat flours that are high in carbs.

As for the loaf pan I used a 9×5 loaf tin, but I also halved the recipe and tried in a 1 loaf pan . I recommend using an 8.5 x 4.5 for optimal rise. The 9×5 was great but a little wide. The 1lb tin worked perfectly for half the recipe so a proper 8.5 x 4.5 pan will work just as well.

I used a stand mixer as seen in the video attached to this page. Its really important to check the consistency of the bread frequently. It should only take around 5-10 minutes for it to be kneaded properly so youll want to pull a piece of the dough and if it stretches without breaking then youre good to go.

Although it’s not technically a flour, vital wheat gluten is a flour-like powder that contains nearly all gluten and minimal starch. It’s made by hydrating wheat flour, which activates the gluten protein, and it’s then processed to remove everything but the gluten. It’s then dried out and ground back into a powder again.

    I guess the variation depends on the bakers preferences and budget. And since you can technically add vital wheat gluten to bread flours and bump the already-high protein content even higher, it really depends on what youre looking for in the consistency of your bread.

    If you truly love baking bread, you can just experiment with different amounts of wheat gluten to see how it changes your bread. Take notes of what you like and dislike, then go from there.

    However, for the amateur baker like myself, I need something a little more consistent. A few websites agree that 1 1/2 teaspoons per cup gets good results, so thats what Ill recommend, too.
