Also, youll need to use a hard margarine instead of butter I used a block of Stork. Both of these are gluten free too obviously!
This is one of those recipes that makes barely no difference whether its dairy free or not. So the choice is yours!

- Coconut oil: youll need some coconut oil to give the cookies the perfect amount of moisture.
- Flaxseed meal: were replacing the egg in these vegan chocolate chip cookies by using flaxseed meal and a little bit of dairy free milk!
- Flours: were using a mix of almond flour and oat flour to keep these cookies gluten free with the best texture.
- Baking staples: youll also need vanilla extract, baking soda & salt.

How Can I Keep Gluten Free Cookies From Drying Out
Store these gluten free vegan chocolate chip cookies in an airtight container. You can add a piece of bread to help these cookies stay moist.
Once the chocolate chips are added, form the cookie dough into balls and place on the cookie sheet. You can freeze the cookies at this point, or go ahead and bake them. Be sure to line the cookie sheet with parchment paper it makes gluten free baking so much easier. Parchment paper helps the cookies bake evenly without sticking to the cookie sheet.

All Almond Flours Are Not Created Equal
When I first made these paleo chocolate chip cookies, itd been quite a while since I last posted some grain-free recipes. I had run out of my favorite Bobs Red Mill Super-Fine Almond Flour months before and was so frustrated with the brands of almond flour available here in Germany since theyre so inconsistent.
Because I didnt want to deal with the hassle of ordering flour from the US, I thought Id wait it out until Christmas when Id be back in the US and could buy all the Bobs Red Mill I want.
But then I got a hankering for chocolate chip cookies. And I really wanted to make paleo cookies.
So I went to work and while every batch tasted amazing, the appearance and thickness was different every single time. The only variable?
The almond flour. The almond flour Id been buying varies from brand to brand and even within the same brand.
How To Make Delicious Gluten
Brown butter: Gives these cookies a delectable nutty flavor
A tablespoon of milk: Prevents grittiness and helps the cookies get golden
¼ cup almond flour: For a chewy texture and yummy flavor
30 minute rest: Gives the flour time to hydrate and prevents grittiness
A sprinkle of sea salt: Optional, but delicious for gourmet bakery-style cookies!

How To Freeze Cookie Dough:
Drop by tablespoon or cookie scoop onto a parchment-lined cookie sheet. These can be close together but not touching. Place cookie sheet in the freezer for one hour. Take frozen cookie balls and store them in a freezer bag or container in the freezer for up to two months.
To bake preheat oven to 350°. Place frozen cookies on a parchment-lined cookie sheet and bake 1-13 minutes until just golden brown. Place the baking pan on a wire rack to cool for 5 minutes and then transfer cookies directly to the wire rack to cool completely.

Gluten Free Chocolate Chip Cookie Baking Notes
With our cookies, you can make them crispier or chewier/softer depending on what you like. If you want these more crispy, bake for about 12-13 minutes. If you want these more chewy in the middle, bake for just 10-11 minutes.
Since my husband loves crunchy cookies, heres another trick we like to do for extra crisp cookies: leave the cookies on the cooling rack longer and put them in a container that isnt airtight . This keeps the cookies crisp if thats your jam!
I like my chocolate chip cookies chewy in the middle and a bit crisp on the edges, so I just bake these for 10-11 minutes and store them in an airtight tupperware-type container to keep them from getting crunchy.
Youll notice that we didnt add any additional salt to this recipe since the King Arthur gluten free flour blend has salt in it already and the cookies also have baking soda.
If your gluten free all purpose flour doesnt have salt in it already, you can add 1/4 teaspoon of salt to these if you like.

So here we are, back to these delicious GF DF CCC . I love this recipe because it doesnt use a gluten-free flour, which are not all created equal. In these cookies, I use finely ground almond flour and tapioca flour which are both easy to find in most Organic sections of your grocery store. My favorite brand is Bobs Red Mill, and no, this isnt sponsored. I just love the quality of their products. In place of butter, I use melted coconut oil. When it comes to sweeteners, you have a two choices: honey or brown sugar. Both choices produce delicious results, but if youre staying away from refined sugars, go with honey! If you love rich, molasses notes of flavor in your cookies, go with the brown sugar.
Another key element to making great CCC is chilling the dough. Pop the dough balls into the fridge for just 30 minutes to give the cookies time to chill. This will help stabilize them so they dont spread too much and flatten out when they hit the heat of the oven.

Can I Make Your Gluten Free Chocolate Chip Cookies In A Food Processor Or Standing Mixer
Of course you can and to be honest, a standing mixer would probably be easier! I always make this just by hand because I always have not because its better or anything.
But to be honest, theres something so satisfying about when it comes together and youre using your hands. And less washing up hooray!
Ive never actually tried to make this in a food processor myself. But if you do, just make sure that the mixture is really well combined and that you scrape the sides down occasionally too. The same goes for a standing mixer.
