How To Make Homemade Gluten
I looked into how to make ramen noodles from scratch and it left me scratching my head. I cannot imagine duplicating that process to make gluten-free ramen noodles no way!
Ramen noodles are more alkaline than regular pasta. This means they have a higher pH, which gives the noodle the taste, color, and texture youre accustomed to.
To make wheat-based ramen noodles, you need a high-protein flour, which means a high-gluten flour. Alternatively, some people add additional vital wheat gluten to make their ramen noodles hold together well. Well, we cant do that in gluten-free cooking so the point is moot!
Additionally, you need sodium carbonate to alkalize the noodles. If you live near an Asian supermarket, you should be able to easily find some sort of alkaline salt to use.
Of course, will also need a pasta machine or cutter to cut thin spaghetti-like strands of the ramen.
I decided this arduous task was best left to the experts, and I simply buy gluten-free ramen at the supermarket without want or desire to make my own.

GF Miso ramen was inspired by my favorite Miso Soup Recipe that Ive been making every week since 2015. I learned this recipe from my macrobiotic teacher at the Natural Gourmet Institute, Elliot Prag. Chef Pragg learned this recipe from the Kushi Institute. Which was the most well respected macrobiotic healing institution of its time.
Since my daughter loves noodles, I wanted to make a vegan and gluten free version with a meatier flavor with gluten free noodles. I dont like noodles but I always add low carb kelp noodles for myself.
When I was testing this recipe I brought it over to my mothers house. She was sick at the time and I received TONS of positive feedback. I know youll love it.
Ingredients For Ramen Soup
Youll need the following ingredients to make ramen noodle soup from scratch:
- 4 cups vegetable broth
- 1 tbsp tamari or gluten-free soy sauce
- 1 tbsp honey or maple syrup
- 1/2 tsp fresh ginger, grated
- 1 tbsp fresh cilantro, chopped
I have a few notes to add about a few of the ingredients.
Rice Ramen: I highly recommend Lotus Foods Gluten-Free Rice Ramen Noodles. They offer a wonderful texture that I think closely mimics the gluten-y ramen noodles youre used to, and offer a clean ingredient list to boot!
You can find a large pack of Lotus Foods rice ramen at Costco, and they last for a long time.
Bok Choy: If you dont like or have access to baby bok choy, add some spinach to the broth. It will add color and texture, truly elevating your ramen noodle soup.
Shiitake Mushrooms: I found fresh shiitake mushrooms at Sprouts, but if you cant find them, use dehydrated shiitakes or baby bellas or cremini mushrooms instead.

What Broth Can I Have With Gluten
As mentioned above, many ramen soups have a soy sauce base, so youll need to prepare an alternative. You can always use a gluten-free soy sauce to make your ramen soup. However, there are other tasty ramen soups to try. For starters, you can always use regular chicken broth and add some instant dashi or spoonfuls of miso paste. Then, you can add other seasonings to your liking, such as chili paste.
Top your ramen soup with gluten-free garnishes such as scallions, bamboo shoots, a boiled egg, slices of pork, or crumbled nori. All of these are traditional garnishes for a ramen soup, and all are gluten-free.

The noodles || Considering the noodles are THE most important part of this entire Gluten Free Instant Noodles post, we should probably talk about them first. I happened upon brown rice ramen noodles a few years ago during a deep dive on Google. Ever since I have been sending Todd to work with lots of different home made variations of gluten free noodle cups during the cooler months. He loves them and I love how simple it is to make a week’s worth of wholesome lunches at one time for him.
I parcook the ramen noodles for these noodle cups for only a few minutes, rinse them under cold running water, thoroughly drain, then lightly spritz and toss them with Pompeian 100% Grapeseed Oil Spray. This will keep the noodles from sticking together. Then once you are ready to eat all you have to do is simply pour boiling water into the glass jar and allow the noodles to steep for 1 minute before you stir everything together and eat.
The flavorings || There are all sorts of flavor combinations for noodle cups out there, but Todd and I have been enjoying Korean flavors the most lately. Kimchi is the standout flavor in this version. Kimchi is a staple side dish in Korean cuisine and is made of salted and fermented vegetables. Since Todd is a vegetarian I use a vegan kimchi that he really likes since kimchi is often made with salted shrimp, fish sauce, or anchovy sauce.
