Best Gluten Free Flour For The Bread Machine

Gluten Free Vegan Bread Machine Loaf – Part 1

There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.

This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.

Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.

Step 4: Pour the whisked dry ingredients on top of the wet ingredients.

Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.

Step 6: This is what the batter looks like after the bread machine mixes the bread dough. You will see how wet this batter is compared to normal bread dough. This is what you want.

At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.

  • Building On The Best Gluten Free Wholemeal Hand

This gluten free bread machine recipe is ahead of others in so many respects. It builds on my incredible oven-baked Wholemeal Bread recipe and all the wisdom learned from that process. That recipe was itself a game-changer. And I know from feedback that it has changed the bread-eating lives of so many people.

I learnt quickly however, that it was not possible for that recipe to directly transfer to a bread maker. Early attempts collapsed and had a texture that was excessively loose and inconsistent. So, I have worked and worked and worked over many months to make this recipe the one that I am now happy to share. It has been tested and then tested some more. It has been checked by Coeliac sufferers and gluten-eaters alike. One guest who ate it unknowingly, even thought Id changed the house-rules so that he could eat normal bread.

Although based on my wholemeal hand-baked bread, the texture of this loaf remains lighter and probably softer. The commercial kneading process clearly supports a fluffier crumb. But that also gives a new texture option as well as the convenience of letting the bread machine do the hard work.

Why This Bread Machine Bread Is So Good:

    The Gluten

The reason I love this new bread recipe so much is it boils down to control. I can control the ingredients that go into this recipe with sorghum flour, and I realize that baking gluten free bread isn’t really that hard. I was able to make this gluten free, dairy-free, soy-free, and corn-free!

My secret to making the gluten free bread flour mix is to use more starch than what I normally use. It keeps the bread fluffy and light. If you have been looking for that perfect sandwich bread, this is it!

If you love sourdough, my loaf-style gluten free sourdough bread is really good too! If you are looking for something sweeter, this gluten free lemon poppy seed bread is delicious.

    Pro Tip For Measuring Flour

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

    Recipe Step By Step Directions:

Step 1: In a large bowl, add the dry ingredients and whisk to blend.

Step 2: In a smaller bowl, add your wet ingredients and blend.

TIP: Many bread recipe directions will say you can dump all of the ingredients in the bread maker. Do not do this! When you are mixing as many ingredients as is needed for gluten free bread, you risk the ingredients not getting mixed thoroughly and that can affect how the bread turns out!

Does The Flour Blend Really Matter

Using my KBS bread maker: Baking Gluten free bread

Yes. Is the straight answer. The two gluten free flour blends that I have developed for this bread machine recipe are finally-tuned to work. One is oat-based and the other is oat and corn free for those unable to tolerate these particular ingredients.

While it is possible that you can switch out one flour for another, I would do this carefully using a flour that is as similar as possible and only on the basis of intolerance. Test cautiously and expect some changes in texture and structure. My Gluten Free Flours and Flour Blending Page may help.

It may seem that I am being picky, but by the last few development-loaves, I was literally switching flour ratios in 5 to10g portions. If you want good gluten free bread, that tastes like bread, the detail matters.

To be sure, I did test the loaf with other commercial flour blends with limited success. The white starch-based blends tested were unstable and had that typical cakey or gummy texture. The wholegrain blend I tried was quite dry and had a much shorter shelf-life.

    Basic Bread Maker Loaf Recipe

Bread Machine Cookbook: Simple And Easy Gluten Free ...

Anxious about making homemade bread? With a bread machine, theres no knead to be!

Unlike conventional yeast bread, gluten-free dough behaves more like a batter. Its difficult to handle and its structure is more fragile. The kneading, punching, and rising necessary for wheat dough actually destroys the structure of a gluten-free loaf.

For all these reasons, a bread machine is an excellent choice for gluten-free bread. Theres minimal handling. You just add the ingredients and press start. Several brands of machines let you bypass extra knead and rise cycles or they have a gluten-free setting, making them ideal for our cranky loaves.

Why Youll Love This Gluten Free Bread Recipe

1.The soft, chewy interior. The words pillowy soft come to mind with every bite the bread has a gorgeous open crumb and just enough chew to it, like any proper bread should.

2.The crisp, caramelised crust. The crust cracks and crackles as you cut it, and its full of those amazing flavours that are brought about by the wonders of caramelisation.

3.The flavour. If you want to compare this gluten free bread to a loaf of regular bread, its on the whole wheat side of the flavour spectrum. Its taste is wholesome and more complex than that of your average loaf of white bread, thanks to the addition of buckwheat flour. At the same time, it doesnt have the overpowering, slightly acidic flavour of, for instance, rye bread. Its a nice everyday sort of loaf, and its amazing with some butter and jam, spread with hummus or as part of a toasted cheese sandwich.

4.In addition to gluten free, its also vegan. Thats right, theres no eggs and no dairy products in this recipe!

5.Easily adaptable depending on the ingredients you have on hand. Im fully aware that you might not have all the ingredients on hand, which is why Ive included a detailed list of substitutions at the end of this post and also within the recipe card.

6.Easy to make. I know that making your own gluten free bread might sound scary and impossible. But believe me when I say its really not. And the results oh my, they are so worth it.
