Gluten Free Vegan Bread Machine Loaf – Part 1

There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.

This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.

Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.

Step 4: Pour the whisked dry ingredients on top of the wet ingredients.

Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.

Step 6: This is what the batter looks like after the bread machine mixes the bread dough. You will see how wet this batter is compared to normal bread dough. This is what you want.

At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.

    This gluten free bread machine recipe is ahead of others in so many respects. It builds on my incredible oven-baked Wholemeal Bread recipe and all the wisdom learned from that process. That recipe was itself a game-changer. And I know from feedback that it has changed the bread-eating lives of so many people.

    I learnt quickly however, that it was not possible for that recipe to directly transfer to a bread maker. Early attempts collapsed and had a texture that was excessively loose and inconsistent. So, I have worked and worked and worked over many months to make this recipe the one that I am now happy to share. It has been tested and then tested some more.     Beth Hensperger has done a phenomenal job in making one of the best bread machine cookbooks. Its such a great product.

    There are 300 recipes. Thats enough to last you for a few years without getting bored.

    You dont have to make all of them but theres a lot to experiment it.

    The recipes are so easy to follow, thats the aspect that I appreciate most about The Bread Lovers Bread Machine Cookbook by Beth Hensperger.

    We are told which cycle we should select, which crust type, everything.

    You just need to remember this: add the ingredients in the order stated by your machines user manual.

    Basically, the yeast shouldnt make contact with the liquids.

    Just one more thing: there are also a few gluten-free recipes but not many.

    Other than that, it has everything you might be looking for, including a few recipes for jam and chutney. I always forget that these kitchen appliances can make jam, as well. The only thing missing is for them to make butter.

    The reason I love this new bread recipe so much is it boils down to control. I can control the ingredients that go into this recipe with sorghum flour, and I realize that baking gluten free bread isn’t really that hard. I was able to make this gluten free, dairy-free, soy-free, and corn-free!

    My secret to making the gluten free bread flour mix is to use more starch than what I normally use. It keeps the bread fluffy and light. If you have been looking for that perfect sandwich bread, this is it!

    Pro Tip For Measuring Flour

    The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

    Basic Gluten Free Bread Machine Recipe

    Makes 1 loaf.

    1/2 cup skim milk powder3 tablespoons sugar2 1/2 teaspoons xanthan gum1 1/2 teaspoons salt2 1/4 teaspoons gluten-free yeast

  • Lightly blend wet ingredients.
  • Fold dry ingredients into wet ingredients.
  • With your finger make a small depression and add yeast to this depression.
  • Set bread machine for whole wheat, light and press start.
  • Note: To make your own fresh flaxseed meal simply grind flax seeds in a coffee or spice grinder.

    Recipe Step By Step Directions:

    Step 1: In a large bowl, add the dry ingredients and whisk to blend.

    Step 2: In a smaller bowl, add your wet ingredients and blend.

    TIP: Many bread recipe directions will say you can dump all of the ingredients in the bread maker. Do not do this! When you are mixing as many ingredients as is needed for gluten free bread, you risk the ingredients not getting mixed thoroughly and that can affect how the bread turns out!

    Does The Flour Blend Really Matter

    Yes. Is the straight answer. The two gluten free flour blends that I have developed for this bread machine recipe are finally-tuned to work. One is oat-based and the other is oat and corn free for those unable to tolerate these particular ingredients.

    While it is possible that you can switch out one flour for another, I would do this carefully using a flour that is as similar as possible and only on the basis of intolerance.     It may seem that I am being picky, but by the last few development-loaves, I was literally switching flour ratios in 5 to10g portions. If you want good gluten free bread, that tastes like bread, the detail matters.

    To be sure, I did test the loaf with other commercial flour blends with limited success. The white starch-based blends tested were unstable and had that typical cakey or gummy texture. The wholegrain blend I tried was quite dry and had a much shorter shelf-life.
