Baking Mixes Have Their Value
I have come to understand the power of buying a boxed mix for gluten free baking, particularly when youre new to gluten free baking. In fact, Ive even developed recipes that replicate that experience, like gluten free cake mixes.
But buying a box of essentially one type of flour and salt just seems different to me. Remember, when you buy the boxed mix, you still have to add all of these other ingredients .
What To Serve With Brazilian Cheese Bread
Just like they do in Brazil, you could try having Brazilian Cheese Bread for breakfast alongside a big cup of coffee and your favorite fruit jam. Here are some other ways to enjoy it as a snack:
- Just as it is – hot out of the oven.
- Alongside your favorite cheeses on a cheese board.
- Spread with nutella.
Should You Chill The Dough For These Rolls
In my recipe directions, I recommend your chilling the dough before baking it, but really it isnt entirely necessary. Chilling the dough simply makes it stiffer, which allows you to make a slightly more round roll.
But a truly spherical pão de queijo would require a different, somewhat more complicated method entirely. So I chill the dough, but I consider that an optional step.

What Is Tapioca Flour
Tapioca flour is a starch that is extracted from the cassava plant, which is native to the central-west region of Brazil. Similar to other starches, tapioca flour is a very fine, white powder. It works very well in gluten-free baking, because it helps create a crisp crust and chewy texture in baked goods. Due to its neutral flavor, it can also be used to thicken soups, sauces, and pie fillings without altering the taste.
You can find tapioca flour/starch in the international foods section of the grocery store, at natural food stores, or you can order it online. I love and use this one from Thrive Market because it is completely organic, preservative-free, and non-GMO.

Ingredients In Brazilian Cheese Bread
- Tapioca Flour – you should be able to find the Bobs Red Mill brand in most grocery stores these days. You may also find tapioca starch which is the same thing.
- Egg – any type of large egg will work.
- Milk – we prefer using whole milk or 2% milk.
- Olive Oil – use your favorite kind.
- Salt – sea salt works great.
- Sharp Cheddar Cheese – this is our preference, although you will find other recipes that use Parmesan cheese which also works great. No matter which cheese you use, its best to grate it freshly from a block.

How To Measure Gluten Free Flour
How you measure your gluten free flour is also very important.
To accurately measure your flour, use the fork, spoon, knife method.
First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.
Then carefully spoon it into your measuring cup.
DO NOT scoop the flour with your measuring cup, youll compact extra flour into the measuring cup and then your gluten free baked goods will be dry and crumbly because they’ll have too much flour.
Finally, level off your measuring cup using a knife.

A basic gluten free pantry includes tapioca starch. It is readily available, inexpensive and a staple in kitchens where gluten free cooking happens. What Are Brazilian Cheese Puffs
Brazilian cheese puffs , also known as Pao de Queijo, are a simple Brazilian cheese bread.
They are quite similar to American popovers except they are made with tapioca flour in lieu of regular all purpose flour.
for a relatively good price. If you cant find tapioca flour, check your local grocer for Arrowroot Flour as that is quite similar.
I wouldnt recommend using Coconut Flour or Almond Flour as that will change the texture completely..

What Is Brazilian Cheese Bread
If you have never tried Brazilian cheese bread before, you are in for a treat. They are like little cheese puffs that are crispy outside but amazingly soft and chewy inside. I would say that they are similar in texture to Japanese mochi.
This Brazilian cheese bread recipe is made with only a handful of ingredients: milk, egg, olive oil, tapioca flour, salt and shredded cheese. I like to use a combination of cheddar and mozzarella, but any grated cheese will work in this recipe.
To make the cheese bread, simply add all of the ingredients to a blender and blend until smooth. Then pour the batter into a mini-muffin pan and bake. Thats it!

Easy Brazilian Cheese Bread Recipe
- Prep time: 5 minutes
- Cook time: 15 minutes
- Yield: Enough batter for 16 20 mini muffin sized cheese bread
The recipe as presented is fairly basic. Feel free to dress it up a bit with herbs or spices of your choice.
- 1/3 cup extra virgin olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour
- 1/2 cup grated cheese, your preference, we get good results with feta cheese , or fresh farmers cheese
- 1 teaspoon of salt
*It helps when baking with eggs to start with eggs at room temperature. If you dont plan ahead you can put the egg in a bowl of warm water for a few minutes to gently take off the chill of the fridge. Special equipment:
SPECIAL EQUIPMENTOne 24-well or two 12-well mini muffin tins. Mini muffin tins are about half the size of a regular muffin pan. The muffin openings are about 1-inch deep, and 1 3/4 inch wide at the top.

Not to mention loads of cheesy flavor. This gluten-free cheese bread is made with tapioca flour, egg, olive oil, milk, and cheddar cheese. Naturally, gluten-free, grain-free, and the dough is made entirely in a blender!

What Is Tapioca Flour Is It The Same As Tapioca Starch Or Cassava Flour
I do want to note, tapioca flour is different from the cassava flour all the paleo bloggers are using .
This recipe wont work with cassava flour!
The tapioca flour is labeled interchangeably as tapioca starch, and often has both tapioca flour and tapioca starch on the package.
Ive used Bobs Red Mill Tapioca Starch, and also tapioca flour from my local international food store .
If you have celiac, or are making this recipe for someone who is, be wary of using the flour from your international store since it is difficult to track its processing and packaging to ensure it it truly gluten-free.

It was a recipe that she often made for her family because her husband had lived in Brazil for a while, and since it was made with tapioca flour and was naturally gluten free, she could share it with me too!
About two years ago my toddler started having problems with dairy.
About the same time my family went dairy-free, we started having regular Sunday dinners with Kristis family.
My sisters family would often come too. Some Sundays wed have eighteen people or more!
Bake The Brazilian Cheese Bread
Preheat the oven to 400ºF/200ºC.
If the batter is hand moldable, then you can hand mold each ball. Otherwise, use a 1 tablespoon measuring spoon/scoop per pão de queijo. Spoon the mixture into a well-oiled mini muffin pan or onto a parchment-lined baking tray . I prefer using the muffin tin as it works well with a slightly looser batter too!
Optionally, you can sprinkle a little extra cheese over them but its not necessary.
Bake for between 15-20 minutes . Once ready, the Brazilian cheese bread should be lightly brown and puffed up. Mine are slightly browner than usual this time because I got distracted .
If you bake them until very lightly golden, then they will be chewier and more elastic. If you bake them until a darker brown, like mine, then theyll be crisper on the outside.
Once baked, they are ready to enjoy immediately or be allowed to cool for later.

Why Buy A Mix For Brazilian Cheese Bread
There are lots of different recipes for pão de queijo, or Brazilian cheese bread. This is simply my favorite way to make it.
I set out years ago to replicate the recipe for the original cheese bread dry mix that shall remain nameless since they sent me an e-mail telling me to remove reference to their product. That box contains little more than tapioca flour and salt.
This original mix has modified manioc starch as one of its lesser ingredients, which it claims is necessary for binding the wet and dry ingredients. Since both the dough and the bread are extremely chewy and stretchy without any modified manioc starch, I cant for the life of me imagine how that is necessary.

Can I Make Them In Advance
Yes these reheat really well. Simply allow them to cool after baking then store in an airtight container for up to 3 days. When you want to serve them reheat in the oven at 170C for 5 minutes. They will be as good as new!
These pao de queijo also freeze well, simply defrost at room temp before you reheat per the above.

Although I love to make my own snacks, I, just like you, dont always have the time to do so. Its perfectly fine to purchase pre-packaged snacks, as long as you buy the right ones.
