Tip For Measuring Gluten

Gluten-free and Dairy-free Chocolate Cake | Waitrose and Partners

It is super important to use a measuring cup made for dry ingredients to measure gluten-free flour. I measure the gluten-free flour with the spoon & level method.

I use a large spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

Please do not scoop the flour directly out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe.

This paleo chocolate cake recipe is fluffy, light and airy. Its also unbelievably decadent, rich and moist. Its the perfect dessert or birthday cake and has quickly become a reader favorite.

Im not one to use superfluous words in my recipe titles unless something is truly extraordinary. Case in point: this amazing paleo chocolate cake. And yes, it really is amazing.

So much so, that I even debated leaving off the word paleo. Because I think you could offer up this chocolate cake recipe to someone who eats gluten and grains and theyd have no idea that it was gluten-free, grain-free and dairy-free. You guys, its incredibly delicious!

Unlike most paleo cake recipes, this version is light and airy while still moist and spongy. I mean, just look at those crumbs. Theres the perfect amount of air pockets in the cake yet it holds together like a real deal chocolate cake. But its a paleo chocolate cake.

Its really easy to freeze unfrosted cakes. Once your cakes are completely cool, wrap the cakes with plastic wrap , wrap again with aluminum foil, and then place in a plastic freezer bag.

The cakes can be frozen for up to 3 months. You can defrost the wrapped cake at room temperature for 2-3 hours or overnight in the refrigerator.

Salted Caramel Sauce Vs Regular Caramel Sauce

Now for the last step, after 2 minutes of simmering, take the caramel off the heat and stir in the salt. Im a salty kind of gal and seeing as this is a salted caramel cake, I highly recommend adding the salt but if you prefer a plain caramel cake, skip this step. Pour the caramel into a heatproof container, I love me a mason jar for this, and allow it to cool to room temperature. As the salted caramel sauce cools, it will begin to thicken.

Do you have a favorite cake flavor? Without having to think too hard, youd probably guess that my favorite cake of all time is vegan gluten free chocolate cake. I mean, youd guess this so easily considering the majority of my recipes sound like Ultimate Fudgy Paleo Vegan Brownies, Gluten Free Vegan Dark Chocolate Muffins and Vegan Gluten Free Chocolate Cupcakes .

Theres just something about having my cake and eating it too that makes life so much sweeter. Of course now I have to tangent into the age-old discussion of why you would have cake and not eat it??? Whats up with that saying? Its always bothered me!!

So after many long-winded discussions , Erik and I agreed on the following:

  • Having your cake = being in possession of it meaning you have 1 cake to your name.
  • Eating your cake = enjoying the cake and soon-to-be not having any more cake to your name = you cant have the cake because youre eating/disappearing it.

How To Make Vanilla Buttercream Frosting

The last step is to make the vanilla buttercream frosting. For this, youll need:

  • Dairy-free butter
  • Powdered sugar
  • Vanilla almond milk
  • Vanilla extract

You want to wait to frost the cakes until theyre completely cool. If you frost them while warm, this frosting will melt. Heed that warning from my own past failures, friends!

To make the frosting, youll just combine the ingredients in a bowl and whisk them together with a stand mixer or hand mixer. You want the consistency to be very light and fluffy, so give it a minute or two to really incorporate air and help get that texture.

Once its ready, youll frost the first cake, then layer the second one on top like this:

Then, frost up the top and sides of the entire cake. YUM!

Gluten-free Victoria sponge cake is a recipe that has been requested so many times Ive lost count. Its so simple Ive never shared it, despite making it all the time.

Its very easy to make these simple gluten-free sponge cakes dairy-free as well. Especially since any good jam sponge is simple with minimal ingredients just as this one is.

What Makes This Chocolate Cake Different

The secret ingredient that replaces eggs and butter in this cake is mayonnaise. Mayonnaise is a stable emulsion made of eggs and oil.

I promise it doesnt make the cake taste like mayo. Im not a mayo person for the sake of it. I love this cake.

I dont generally like to bake with neutral oils like canola and vegetable oil, since they tend to create an oily-tasting cake. Baking with mayonnaise allows us to bake without any dairy substitutes, but still bake a moist and tender, super decadent chocolate cake that is also dairy-free.

If you love mayonnaise, you wont taste it in this cake. If you cant stand mayonnaise, you still wont taste it in this cake.

This isnt a dense cake at all. Its really a snacking cake, like the kind you might have hanging around in the refrigerator or on the counter.

You might even do what my grandmother used to do, which is to slice little pieces off the edge as a service to others. That helps to even the edges so it looks more appetizing.

Do Not Make Substitutes

I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.

How To Make Gluten

  • Preheat the oven to 350°F.
  • Cut parchment paper for the bottom of your two 9-inch cake pans and spray with gluten-free cooking spray.
  • To make your own buttermilk: Add 1 tablespoon of white vinegar or lemon juice to milk or dairy-free milk and allow to sit for a few minutes.
  • In a medium-sized bowl add gluten-free flour with xanthan gum, salt, baking soda, gluten-free baking powder, cocoa powder, and cinnamon. Stir to combine the ingredients.
  • In a large bowl cream the softened butter and sugar with a mixer, until fluffy.
  • Add the eggs and pure vanilla extract to the butter mixture and mix until fully combined.
  • Add the flour mixture to the butter mixture and mix until fully combined. Scrape down the sides if needed.
  • Add the homemade buttermilk to the cake batter and mix until fully combined.
  • Add the boiling water to the cake batter and mix until fully combined and smooth.
  • Pour half of the batter into the first greased 9-inch cake pan and then pour the rest of the batter into the second greased 9-inch cake pan.
  • Bake on the middle rack for 30-35 minutes. Please watch your cakes because all ovens are different.
  • Check the center of the cake by inserting a toothpick to make sure it is done. You will also see the sides of the cake pulling away from the side of the pan.
  • Allow the cakes to cool fully before frosting. I like to cool cakes on a baking rack.
  • Store leftovers in an air-tight container.

What Chocolate Is Gluten Free And Dairy Free

Gluten free vanilla cake

My favorite dairy-free and gluten free chocolate chips are from Enjoy Life brand. Theyre super rich and high quality. All of Enjoy Lifes products are free of the top 8 most common allergens, which include gluten and dairy, making them safe for most people to enjoy .

If you need baking chocolate bars to chop, I really like Hu Kitchen brand, which is dairy free and gluten free. Scharffen Berger brand is the higher-quality baking chocolate that I usually turn to, and some varieties dont contain any dairy ingredients.

Some other brands of gluten free dairy free chocolate bars are some varieties from Alter Eco, Green & Blacks, and Endangered Speciesbut theyre all quite expensive.

    Why Did My Gluten

    There are several reason why gluten-free cakes sink, one is from over beating the batter and adding too much air.

    Also, cakes often will sink when there is too much moisture. This is more common in humid climates where added moisture can collect naturally in ingredients such as flour.

    When this occurs, the center of the gluten-free vanilla cake rises rapidly and then falls during baking.

    In higher elevations, the leavening agent works twice as hard and may cause the batter to rise rapidly and sink before itâs had a chance to set up.

    All these tips are relevant to most cake recipes, not just this gluten-free vanilla cake recipe.

    Recipe Step By Step Directions:

    It is so easy to learn how to make a gluten free coffee cake. I break it all down into simple step-by-step directions. You can also watch the video to see how I make it.

    Step 1: In a large bowl, combine the cake ingredients in a large mixing bowl and whisk to blend.

    Step 2: In a smaller bowl, add the wet ingredients and whisk to mix.

    Step 3: Pour the wet ingredients into the dry ingredients and mix until just “barely” mixed. This will help keep your cake light and fluffy.

    Step 4: Spray a 9″ cake pan or loaf pan with non-stick spray and add half the cake batter. Spread it out.

    Step 5: Mix up the cinnamon and sugar for the swirl and sprinkle it around the cake batter. Put the rest of the cake batter on top and spread it out.

    Step 6: In a bowl, add the crumble topping dry ingredients.

    Step 7: Add the softened butter and mix. Freeze the crumble topping for 15-20 minutes then use a fork to crumble the slightly hardened mixture.

    Step 8: Sprinkle the crumble topping over the cake batter.

    Step 9: Spread out the crumble topping and bake at 350º F for 30-35 minutes. Actual baking time can vary greatly depending on if you bake this in a loaf pan or cake pan, and how deep your pan is.

    To tell if the cake is done baking, take out the cake and insert a toothpick into the middle of the cake. If the toothpick comes back with crumbs or batter, it will need to bake more. If the toothpick comes out clean, the cake is finished baking.
