Anyone else?! My mom would bring home a whole box and the bars would hardly last an entire week. I dont know what I loved more: the creamy caramel, the sweet ice cream, the salty crunch from the peanuts, or the milk chocolate I just loved it all! So, of course, I couldnt help myself but make a homemade version. Now that I have, I think this may be my new favorite dessert recipe!

The base for this gluten free ice cream recipe only uses 3 ingredients and it’s super simple to make.
Specialty gluten free ice creams can be expensive to buy. Making gluten free ice cream from scratch is inexpensive, and it’s completely delicious.
You can add in your favorite ingredients to mix up the flavors and make your favorite gluten free ice cream. Dairy-free option included.

How To Make Gluten And Dairy Free Not Fried
Armed with a skillet and bag of potato chips you can easily recreate this nostalgic classic.
Time needed: 25 minutes.
Once you discover how easy it is to have the fried ice cream experience at home, you’ll never order it out again!
Have fun taking out your day’s stress on the potato chips. Crush them up. You don’t want them powdery, but you do want them about the size of panko bread crumbs.
Heat a skillet over medium-low heat and add your Dairy Free butter and sugar. Stir until the butter is melted and the sugar is mostly dissolved. Add your potato chips and toss to fully coat them.
Pour the potato chip mixture into a bowl and allow it to cool.
Use an ice cream scoop to create 3″4″ balls. Roll the balls of ice cream into the potato chip mixture.
Drizzle Dairy Free chocolate hazelnut spread over the top. Finish with Dairy Free whipped cream and a cherry.
We Couldnt Tell That We Werent Eating The Real Thing
Human adults aren’t supposed to drink milk. You’d never know it by the amount of yogurt, milk, coffee creamers, and other dairy-filled treats that fill our fridges, but scientists are pretty certain we should avoid it. It has something to do with enzymes and being old and not being able to digest it and other buzzkills like that. We could probably give up plain-old milk and yogurt, but ice cream? Haven’t we suffered enough?
Luckily, there are some alternatives. You’ve probably seen non-dairy ice cream thanks to brands like Halo Top and Ben & Jerry’s that have cashed in on the alternative milk trend. But between chalky or icy textures and too much nutty flavor from the base, there’s a lot that can go wrong when trying to make cream-less ice cream.
So in the interest of helping our dairy-free friends, we cracked open dozens of pints to fill you in on the non-dairy ice cream that still actually tastes like ice cream. With most of them, we couldnt even tell that we werent eating the real thing.

Simple to Make: This gluten free ice cream recipe doesn’t require any cooking, nor does it require any fancy ingredients. It’s easy!
Step By Step Instructions: Are you new to making homemade ice cream? No worries, I’m giving you step by step ice cream making instructions and lots of helpful tips along the way. You’ll be a pro in no time.
Add-ins: You can leave them out, but we don’t recommend it.
No Eggs: Some gluten free ice creams require egg yolks to create a creamy custard-y base. Not this one. It’s creamy and perfect without any eggs at all.
No Chemicals: Store bought ice creams are often filled with preservatives. You don’t need any to make this homemade gluten free ice cream recipe.
How To Make Gluten Free Cookie Dough
The first part of this recipe involves making your very own gluten free cookie dough.
There are two things that make this cookie dough safe to eat raw the fact it has no egg in, and heat-treating the flour.
Flour has a risk of containing bacteria which is why its always cooked with.
You can go ahead and make this without cooking the flour but to be on the safe side you can heat treat it.
This is explained in the notes of the recipe card below and simply involves baking the flour at 160C / Gas Mark 3 for five minutes.
You can also microwave the gluten free flour for 15 second intervals for a total of 90 seconds.
This just helps to ensure the flour is safe to consume raw and only adds a few minutes onto your recipe.
Once youve heat treated the flour you can mix everything up to create a gluten free cookie dough which you can just sit and scoff!

How To Make Ice Cream Sandwiches Quickly
Rather than making 30 wafers, this recipe calls for baking one giant wafer in a sheet pan, cutting it in half, filling it with ice cream, then slicing the whole thing into individual sandwiches once frozen.
When made this way, it’s shocking how quickly you can make a batch of homemade ice cream sandwiches. Here’s how you do it:
How To Make The Cake Crunch
The cake crunch is really just super soft chocolate cookie crumbs and super soft vanilla cookie crumbs, both made from the same basic recipe. The method is super simple, as you make one basic dough, then add cornstarch to one half and cocoa powder to the other.
Then, roll out the dough between two sheets of parchment, slice into rectangles of roughly the same size and bake until juuuuust set. Be careful not to overbake, and not to roll the dough too thin, or the cookies will be crunchy instead of soft.
Then, crumble the still-warm cookies, mix the chocolate and vanilla crumbs together and press onto your ice cream pop.

Sweet delicious ice cream is a staple in our house. I wanted to pull together the BEST gluten free ice cream recipes and include a handy list of what ice cream brands are gluten free. If you love cones, I include a delicious easy DIY homemade gluten free cone recipe and review the gluten free cones you can buy in stores.
If you are like me, you love ice cream ALL YEAR LONG. Who can resist that frozen creaminess? I pulled together my very favorite no-churn ice cream recipes so you can try a few as well.
Some of my ice cream recipes are also dairy-free so I noted this as well. Dairy-free no-churn ice cream is easier than you think!!

Why Is My Ice Cream Hard To Scoop
You should see in the instructions that I recommend letting the ice cream sit at room temperature before scooping. Directly from the freezer, it will be too hard to scoop, but should be easy after thawing a bit.
Commercial ice creams typically include preservatives which allow them to be softer when frozen. Since our homemade gluten free ice cream doesn’t include any chemicals, we need to use time to get it soft enough.
