Common Problems With Gluten

I tested four popular and widely available store bought flours Cup4Cup, Bobs Red Mill 1-to-1, King Arthurs Measure-for-Measure, and Walmarts Great Value Gluten Free-Flour Mix. To make sure I gathered a good variety of results, each were tested with different baking recipes gluten-free biscuits, gluten-free pie crust, and cookies.

All the tested flours include xanthan gum in the mix. Some GF flours dont contain it, which gives bakers more control over the amount added based on what they are making . However, I wanted to find an easy, 1-to-1 flour to be used interchangeably with all-purpose flours.

I also used friends and family for blind taste tests, so my partiality to my preferred brand wouldnt come into play. I was searching for the best gluten-free flour to hopefully avoid some of the common pitfalls like,

  • Gritty texture Usually comes from large amounts of rice flour used in the mix.
  • Gumminess Gluten free flours dont absorb liquids as readily as regular flour, which leads to a dense, gummy texture.
  • Holding shape Gf flours also have a harder time absorbing fat. This is why gluten-free cookies have a tendency to spread so much more.
  • Aftertaste Usually resulting from stronger tasting flours used in the mix, such as teff or sorghum.

Gluten Free Bread Recipe Without Brown Rice

Brown rice can be very problematic for many individuals, including myself. Make sure to read this post that explains why I choose white rice over brown rice.

So I set out to make not only a gluten free all purpose flour recipe without brown rice, but also a gluten free bread recipe that also did not have any brown rice in it.

Now Ive had plenty of experience with gluten-free bread recipes, I mean I did write the book Gluten-Free & Grain Free Breads, Batters & Doughs, but I have to tell you, this one is something special!

As I mentioned in this post: Gluten Free All Purpose Flour Recipe Without Brown Rice, I was having a really hard time finding a gluten-free flour and gluten free bread recipe that didnt have brown rice in it.

What Makes These Gluten Free Dinner Rolls Taste So Good

  • Apple cider vinegar. I havent met a gluten-free baked good that contained apple cider vinegar that I didnt absolutely love. Adding ACV helps the yeast perform better and aerates the batter, giving it all those scrumptious air bubbles we adore. It also adds a hint of acidity, which really makes this recipe taste like a roll. If youve been gluten-free awhile you might not even remember what thats like , and now I remember what was so special about them.
  • Yeast. When I made all of my recipes gluten-free in 2016, I was surprised at how many gf baked goods and breads omitted yeast. Honestly, hardly any of them turned out. Yeast is crucial in this recipe for giving it that bready taste, and also helping the dough to rise and double in size.
  • Melted butter. Cmon, you cant eat a dinner roll without it.

Ways To Use Gluten Free Dinner Rolls:

  • Brushed with melted butter and eaten as a side with dinner.
  • Cut in half, brushed with butter and herbs & toasted in the oven.
  • As sandwich buns. Make one day ahead of time so they have time to completely cool and firm up some in texture. Cut in half and warm before assembling your sandwich. Ive used for hamburgers and BLTs. If you bake the same day, they will be a bit messy but still incredibly delicious. Its more of a fork and knife situation in that case.
  • These are also really good topped with cinnamon butter.

You are going to fall in love with these Gluten Free Dinner Rolls. And yes, thats right they use yeast and actually do rise!

This may be a shocker to some, but I love using Great Values gluten-free all purpose flour. Not surprised? You love it, too? Regardless, its the first gluten-free flour I used that worked. Everything I make with this flour is successful and turns out just as tasty and moist as its gluten counterparts.

In fact, this dinner roll recipe is so good that its featured right on the back of the gluten-free all purpose flour bag.

Normally, I wouldnt share something like this since it isnt a recipe of my own. Please let it be known that I am not sponsored to say any of this and these are all opinions of my own. That being said, I feel that this flour is seriously underrated and feel the need to share this delicious dinner roll recipe.

Testing The Best Gluten

If you are new to gluten-free baking recipes, or still trying to find your perfect stride, you way be wondering, what is the best gluten-free flour to bake with?

In the past several years there has been an explosion of gluten-free flour substitutes on the market to replace wheat flour. While they make it more convenient, rather than buying several flours to make your own mix, most still lack considerably in taste and texture.

The problem lies in the infinite possibilities of starch blends and varying ratios they can be blended together. Unfortunately, not all gluten-free flour blends are created equal, leaving vast differences in baking results. I experience this time and again when testing recipes for the site and writing my gluten-free cookbook.

For instance, white rice flour gives a neutral taste, but gritty texture. Sorghum flour, buckwheat flour, and teff flour can have very strong, off-putting tastes. While tapioca flours and oat flour has a more neutral flavor, they need complimenting starches to build elasticity.

Using a mixture of gluten free starches, such as rice, tapioca starch, potato starch, brown rice flour, coconut flour, and cornstarch can balance each other out, hopefully creating the best gluten-free flour. However, many products on the market fall short, resulting in disappointing baked goods.

The key to this Gluten-Free bread is to make sure to add enough water to the flour mixture, without having the flour mixture look soggy. I noticed that if you dont have enough water the Gluten-Free Flour doesnt puff up enough. I also added a little more yeast to this Gluten-Free Artisan Bread 3/4 teaspoon rather than 1/2 in the regular Artisan Bread Recipe.

I personally I dont eat a lot of bread- BUT my favorite thing to make on this Gluten-Free Artisan Bread is Avocado Toast. Seasoned with Trader Joes Everything But The Bagel seasoning. So good!
