Have I got a treat for you! How about the easiest gluten free pasta recipe ever?

I know so many of you might be scared to make fresh homemade pasta, but guys it is SOOO easy! For real. When you take out the rest time, the active time preparing this pasta is under 15 minutes.

The dough takes literally 1 minute to make in the food processor. Allow the dough to rest for 1 hour at room temperature. It will be much easier to work with after it rests. When the dough is complete it should look something like this.

This lentil pasta is also a great source of protein and fiber, and the flavor is more neutral because its made with both lentil and quinoa flour. Mastering fresh gluten free pasta has been on my extensive to do, make, eat list for a very long time. I needed expert help here so I sought the guidance of my super talented friend, pastry chef Angela Palermo from The Village Cooks. Trust me Ang ticks all the boxes. Italian, tick. Making pasta from the age of 5 with her Nona, tick. Hilarious and lovely, tick. Will feed me copious amounts of pasta, tick. I couldnt wait to get into the kitchen with Ang to perfect this gluten free pasta recipe.

After a fabulous day playing with pasta dough and different gluten free flours in the kitchen what resulted was the silkiest, most delicate, most beautiful gluten free pasta I have ever tasted. It tastes like regular pasta and is honestly so easy to make, just a simple combination of two gluten free flours brown rice flour and tapioca. Brown rice flour is a little coarser than other gluten free flours so it holds its shape well and tapioca adds a lovely lightness and silkiness to the pasta strands.

Initially your gluten free pasta dough will look dry and brittle when you roll it through the pasta machine but dont worry because it will come together as you keep rolling. Just keep folding and rolling on the widest setting 3-4 times until the pasta sheet starts to smooth out. Dust with a little extra tapioca flour between roller settings to stop the pasta strands sticking together when cut.

How Do You Cook Gluten

Most gluten-free pasta is cooked the same way as white pastain boiling water for about 8 to 12 minutes, depending on the pasta type. But some gluten-free pastas differ. For example, the Cappellos Almond Flour Fettuccine comes frozen and only needs to sit for a few minutes in hot water.

Each pasta will have the directions written out on the box. Its especially important to follow these cooking instructions, as gluten-free pastas can overcook quickly, becoming mushy and sticky.

Even though it can be made and on the table in an hour, the flavors taste like a marinara sauce thats been simmering all day long. Its the perfect, simple sauce to serve with our gluten free pasta recipe above.


  • Salt and Pepper to taste


Heat oil in a sauté pan over medium heat. Add onion and cook until soft and translucent, about 10 minutes. Add garlic, spices and tomato paste and mix well. Cook until fragrant, about 1 minute.

Add tomatoes and water and stir well season with salt and pepper. Reduce heat to medium-low and slowly simmer, uncovered, for about 25 minutes. Serve over pasta.

Tips For Cooking Gluten Free Pasta

If you dont want your gluten free pasta to be mushy or sticky , follow these tips for cooking your gluten free pasta.

  • Read the manufacturers suggestions first. Depending on the ingredients in your gluten free pasta there will be a wide range in cooking times. Start by reading the instructions, then adjust as needed.
  • Just add salt. Like any pasta, you should salt your water before cooking. This will help add flavor to your cooked pasta. According to Bon Appetit, a general rule of thumb is to use 4 teaspoons Kosher salt for every gallon of water.
  • Stir, stir, stir! Be sure to stir your pasta, right after adding it to the pot, and periodically while its cooking, to keep it from sticking.
  • Dont overcook your pasta! Mushy pasta isnt good. I know youre following step one and reading the directions. That being said, if this is your first time cooking a particular pasta, test you pasta ~ 2 minutes before the cooking time on the instructions, then test again every 2 minutes.
  • Gluten Free Spinach Pasta

    Gluten Free Spinach Pasta, otherwise known as Pasta Verde, is a wonderful way to get in those greens!     Boil For 4 Minutes In Salted Water

    Next you boil a pot of heavily salted water. There is no salt in the pasta dough, so it is important to heavily salt your water. I added about 1 tablespoon of salt to the water.

    Drop the pasta into the boiling water and cook for 4 minutes or until tender. Fresh pasta cooks a lot faster then dried pasta. Do not overcook the pasta!

    Be careful not to put to much pasta into the pot. I did mine in 3 batches. Certainly you could use a larger pot and boil it all at once, I just prefer to do it in batches.

    Add flour and salt to a large bowl. Make a well in the flour and add all of the eggs and the extra yolk. With a fork, start beating the eggs in the well, while slowly incorporating the flour in as you go.

    Keep mixing with a fork until a dough starts to form and mixing with a fork starts getting too difficult! At that point, turn the dough and any remaining bits of the mixture out on to a floured cutting board.

    Slowly start to reduce the thickness of the roller until you reach your desired pasta thickness. On our rollers, we generally stop at 4 or 5.

    Making The Gluten Free Pasta Dough

    First, well mix the gluten free flour and xanthan gum together until evenly distributed. Well then make a well in the middle and crack in the eggs.

    This is a 1-bowlrecipe, folks. No fuss.

    Next, well scramble the eggs slightly and start mixing in the flour/xanthan mixture. Eventually, well end up with a slightly sticky pasta dough.

    Well turn the dough onto a generously floured surface and knead it for 2 to 3 minutes. Because this is a gluten free pasta dough, theres no gluten to stretch and activate, but kneading ensures a smooth dough with no flour clumps.

    How To Choose A Gluten

    Which gluten-free flour blend you choose is super important for fresh pasta. Youll definitely want a blend that contains some starch, like tapioca, corn, arrowroot or potato starch, and one that has a light, all-purpose body, that contains flours made from rice, sweet rice, brown rice, or sorghum. I wouldnt use a blend made with nut flour to make fresh pasta, at least until youve gotten the hang of it and understand the textures. I would not use a blend that contains bean flours at all, as they can be heavy and change the flavor of the pasta subtainally. You can use a blend that contains xanthan or guar gum to begin with, but you should definitely use psyllium husk powder or gum-free binder in the recipe as described.

    Rolling Out The Gluten Free Pasta Dough

    The amount of ingredients in the recipe below makes 4 nests of tagliatelle-like gluten free pasta, so well cut the dough into four evenly sized pieces. If you want to be extra precise, feel free to weigh the pieces to get them to the same weight.

    Wrapping the three pieces of dough we wont use immediately in cling film ensures they dont dry out trying to roll out dried out pasta dough is a nightmare and, trust me, you will want to avoid it.

    Now, Ive rolled out the pasta dough with a pasta machine its handy, quick and it doesnt make your hands tired. Plus, you feel like a total pasta making badass, and thats a helluva feeling. But if you dont have a pasta machine, you can easily follow the exactly same procedure with a good ol rollin pin and a bit of elbow grease.

    First, well flatten the piece of gluten free pasta dough a bit and flour it generously on both sides. Well then pass the flattened piece through the pasta machine, starting on the widest setting. Well stay on this setting for a few minutes, so get comfy.

    Now, different pasta machines can have different widest settings. What Im trying to say is that the widest setting can produce pasta sheets of different thicknesses. In my case, the widest setting gives pasta sheets about 2 mm thick, which is actually quite thin compared to some other machines. Moral of this side-story: get to know your pasta machine.
