Tips For Tates Chocolate Chip Cookie Remake Recipe

  • For this recipe, its almost imperative that you measure your flour by weight. Ive tested this with 20g more flour and 20g less, and the differences on both ends were insane.
  • After baking, you might notice your cookies have a little more height than you were expecting this is totally normal from the leavener. The baking soda will react quickly, but once the cookies are out of the oven they will flatten during the cooling process.
  • Don’t pull the cookies out of the oven too early as the cookies will not end up as crispy. If you feel your cookies could go just a few minutes longer in the oven, do it! It will lead to a crispier crunch.
  • Let your cookies cool on the sheetpan initially. A cooling rack wont kill them, but they will be too soft to transfer immediatly plus the hot sheet pan will help the cookie bottoms keep getting crunchier as they cool.
  • Use parchment paper and not a silpat mat. A silpat mat will not absorb any moisture and will not create the crunch we are looking for.
  • Do not use a hot baking sheet for baking the cookies if you do, the butter will melt out slightly from the cookies and will produce a darker edge (they will not be as pretty but they will still taste good!

How To Make Crispy Chocolate Cookies:

  • Theres no need to haul out the mixer or rolling pin for these, all youll need is a food processor.
  • First youll pulse together almond flour, tapioca flour, cocoa powder and coconut sugar to create a fine powdery flour mixture. Its this step that creates the lightness and ensures your cookies will be crisp and crackly.
  • Next youll mix in the rest of the wet ingredients to create a soft dough to which youll add a generous amount of finely chopped chocolate .
  • After that the dough is shaped into a log and refrigerated until firm, then sliced and baked until set. The cookies will firm as they cool and achieve maximum crispness when completely cooled.
  • Keep your cookies in an airtight container at room temperature and enjoy!

    ½ cup packed brown sugar
    ½ cup white sugar
    1 cup crushed cornflakes cereal
    1 cup rolled oats
    1 cups flaked coconut

    Steps:

    • Preheat oven to 350 degrees F .
    • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking soda, salt and baking powder stir into the creamed mixture. Add the oatmeal, crushed cereal and coconut and mix until combined.
    • Drop dough by teaspoonfuls onto a cookie sheet. Cookies should be about 2 inches apart. Bake for 10 to 12 minutes in the preheated oven. Cookies should be light brown at the edges and on the bottom. Remove from baking sheets to cool on wire racks.

    I had a member email me requesting a copycat recipe for Tates Chocolate Chip Cookies. Not until I made them did I discover that there are actually Tates Gluten Free Chocolate Chip Cookies on the market. Tates cookies are extremely popular in the South Hamptons and are sold at the Tates Bake Shop, well known from coast to coast. Ive never tasted them, but these cookies are crisp on the bottom and around the edges and buttery inside. I hope you enjoy them. Barb, I hope your grandson enjoys these just as much!

    If you wish to purchase the commercially made Tates Gluten Free Chocolate Chip Cookies, they come in several flavors. Check Walmart. I saw them on their website. The ingredients in the commercially made cookies are free of corn, potato, and tapioca. My version may be made corn or tapioca-free.

    Combine the dry ingredients: In the bowl of a food processor, combine almond flour, sweetener, salt, and baking soda. Process until well-combined.

    Add the butter and chocolate chips: Pulse the butter into the dry ingredients to form a dry and powdery mix. Transfer the mixture to a large bowl. Add the chocolate chips to the mixture and mix to incorporate.

    Add in the wet ingredients: Next, add the egg and the vanilla, stir well and then knead the mixture by hand until it comes together like classic dough.

Bake at 350 degrees until thin and golden brown, with an even colour from edge to center, about 8 minutes.

    Cool to crisp: Cool the cookies directly on the baking sheet for about 5 minutes and then carefully slide the cookies onto the cooling rack. Cool for about 2 hours before transferring them to an airtight container.
