For years and years , Id used this gluten free pie crust recipe almost exclusively for single and double crust pies alike. And its still one of my favorites. But this extra flaky gluten free pie crust?

This perfect pie crust is giving my regular, go-to gluten free pie crust a run for its money. It rolls out so beautifully and is just effortlessly flaky. Like all pastry-baking, you just have to be sure to keep everything cold cold cold while youre working with it.

My basic principles of flaky pastry-making remain the same. Begin with relatively large chunks of butter , coat them in dry ingredients and then flatten them between your thumb and forefinger.

That way, when the butter melts a bit as youre working with the pastry, it will firm back up when you chill the shaped pastry. This time, though, rather than using ice water to bring the dough together, its sour cream. Sour cream adds a tenderness to the dough that is like nothing else.

Be sure to lift the pie crust up and into the bottom and sides of the pie plate rather than attempting to stretch it. Thatll keep it from shrinking during baking.

What Do I Do If My Pie Dough Is Too Crumbly

If your pie crust dough is looking a little dry, just add a splash of cold water to bring it to the right consistency. You want this gf crust dough to stick together well, but not be too sticky to the touch. You want to use cold water so that the dough stays nice and cold.

Add enough water to help it stick together, but dont go crazy with it or you may end up with a super sticky dough thats impossible to roll out. If youve added too much water, just add a sprinkle of coconut flour to bulk it back up. Coconut flour can soak up a ton of moisture!

When creating this gluten free crust, I really wanted something a little healthier in addition to being gluten free and low carb. Most gluten free and keto pie crusts pie crusts out there have 1/2 cup butter in them. I only use 1/4 cup for this easy gluten-free pie crust! But dont worry, its still super flavorful and flaky! You would never know its got half the butter!

Speaking of flaky, keep in mind that if you are making a pie that needs to be refrigerated like my Sugar Free Pumpkin Pie recipe, the crust will lose most of its flakiness. But for something that can sit out unrefrigerated like a pecan pie or apple pie, the crust around the edges will be nice and flaky!

How To Make A Gluten

Pillsbury Gluten Free Pie Crust

I have tested making this gluten-free pie dough in two different ways.

  • The first way I tried making the pie dough was the traditional method by hand. I cut the butter into the gluten-free flour and the dry ingredients with a pastry cutter, then added the wet ingredients, mixing it by hand, and then formed it into a dough ball.
  • The second way I tried making the pie dough was using a stand-up mixer. I found that adding all of the ingredients to my stand-up mixer and using the paddle attachment makes the pie dough smoother and easier to work with.
  • If you dont have a stand-up mixer or hand mixer you can still make this crust the traditional way by hand.

    Can You Use Shortening In Gluten

    Yes. I use palm shortening to keep my gluten-free pie crusts dairy-free and vegan. You can use butter or regular shortening in this gluten-free pie crust recipe. I haven’t personally tried dairy-free butter in this recipe.

    This gluten-free pie crust recipe is the go-to recipe for all things pie in our house. I like to use Bob’s Red Mill 1-to-1 gluten-free flour blend when making pies, but you can also use a similar blend, or my gluten-free flour blend.
