How to make a Gluten Free, Lactose Free, Sugar Free Cake

You will love this recipe because this fresh cherry cobbler is topped with fluffy cake! The fruit cooks below and you get so much flavor from the roasting fruits. It is almost like two desserts in one. You dont need to precook the fruit, just mix in sugar and tapioca starch and top with the cake batter!

Tips For Making A Great Gluten Free Cake Recipe

Make sure you whip it good! As I said, this recipe uses the reverse mixing method which is the same way I make my famous vanilla cake recipe. Reverse mixing makes a nice tender crumb but you also have to remember that there isnt any gluten in this cake so its SUPER important that you do that first bit of mixing for the full 2 minutes to develop your structure.

Make sure your eggs, butter and milk are room temperature. Everyone always forgets this step and it can cause the cake to get a wet gummy layer at the bottom or worse, collapse. No bueno.

How To Make This A Gluten Free Dairy Free Vanilla Cake

For dairy-free, I recommend vegan butter like Miyokos Kitchen or Melt brands in place of butter. Try 1:1 by weight. You can also try Spectrum brand nonhydrogenated butter-flavored vegetable shortening.

Youll need a buttermilk substitute. Try half unsweetened almond milk by volume and half nondairy plain yogurt in place of the buttermilk.

I really dont like a simple milk + acid like lemon juice or vinegar as a buttermilk replacement. That only replaces the acid, but not the thickness of buttermilk. The half milk half yogurt swap is the best.

Gluten Free Cake Recipe Ingredients:

For the Gluten Free Vanilla Cake you will Need:

  • All purpose gluten free flour: I use Better Batter. I do not recommend using a bean based all purpose flour for this recipe .
  • Gluten free oat flour: If you dont have oat flour on hand, you can make your own. Add rolled or quick cooking oats to a blender or food processor and blend into a fine powder.
  • Xanthan gum: Omit if your gluten free flour already contains xanthan gum.
  • Dairy free milk of choice: I use So Delicious Unsweetened Coconut Milk.
  • Maple syrup: Used to sweeten the cake.
  • Avocado oil: Coconut oil works as well.
  • Baking powder

Can I Use A Different Sweetener

Besti Monk Fruit Allulose Blend is the closest thing to sugar Ive found , and in particular, it makes the moistest cake. Ive made this cake with other sweeteners in the past and its not as moist.

But, if you need other options, you can use a granulated sweetener for the cake and a powdered sweetener for the frosting . The amounts you need will vary depending on the sweetener, so check my keto sweetener guide for conversions.

A Fruity Filling Of Juicy Cherries With Plant

The filling is made of cherries from the glass and whipped plant-based cream, which is also the frosting. You can choose whether you use regular cream or dairy-free cream. I always use this plant-based cream for whipping because it gets perfectly stiff. I dont know if this recipe works with coconut cream either because I havent tried it yet.

My Keto Black Forest Cake Recipe

Gluten, dairy and refined sugar free Pineapple and Coconut Cake @Leonor’s

Since a traditional Black Forest cake is usually made with flour, sugar and cherries, I wanted to make sure that my recipe was completely gluten free and that it had no sugar in it without sacrificing the original taste. I absolutely wanted a moist black forest cake so made sure to not use any coconut flour in my recipe.

I decided to make a homemade sugar free raspberry jelly instead of cherries to cut back on the carbs and only used fresh cherries for the toppings. I also opted to use keto cream cheese frosting instead of whipped cream because of the weather here. If youd like to try a whipped cream dessert though, I suggest you try my low carb tiramisu! Ifs filled with a mascarpone whipping cream and is just so delicious!

Its been 37C/99F every day here so whipped cream topping would have melted in minutes. For the ultimate chocolate version, you could also use my chocolate buttercream frosting instead and make it completely chocolate flavored!

For the chocolate shavings and chocolate decorations, I used lilys sugar free chocolate, but you could use chocolate from Keto Bark or Coco Polo. Both of these are keto friendly.

The keto chocolate sponge is moist, soft and crumbly. It goes superbly well with the raspberry filling and cream cheese frosting.

How Do You Make Sugar Free Cake From Scratch

Prepare

Turn on the oven and allow it to preheat. Line 2 cake pans with parchment paper and set aside.

Stir

Place all of the dry ingredients other than the sweetener in a large bowl and stir with a whisk to combine. In a separate bowl, add the eggs, sweetener, greek yogurt and vanilla and stir well. Add the dry mixture to the wet and stir until everything is well incorporated.

Fold In

Gently fold in the carrots, nuts and coconut flakes and stir until just combined. Let the batter sit for a little while so that the coconut flour can absorb the moisture.

Bake

Divide the batter between the cake pans and bake them until done! Cool completely, then frost the cake!

Recipe Variations

Here are a few ways to switch things up with this coconut flour carrot cake to suit your needs and preferences:

  • Dairy Free: Use dairy free cream cheese and dairy free greek yogurt.
  • Paleo: Use plant based yogurt instead of greek yogurt. Also, you may be able to use coconut sugar instead of erythritol but I have not personally tried this.
