Though gluten-free self-raising flour has a little in it anyway, adding a little extra doesnt hurt especially when weve got ground almonds in there AND when factoring in that this is quite a tall sponge.

So yes, if you can tolerate xanthan gum, please ensure that you use it!

Let’s Make Some Black Forest Cake

  • Bake the choclate cake, let it cool completely before assembling.
  • Make the cherry filling and sauce and separate the sauce the from the cherry filling before thickening.
  • Whip up the stabized whipped cream frosting.
  • Assemble the cake by starting with a layer of chocolate cake. Then brush a layer of the cherry sauce over the cake. Top with the stabilized whipped cream and cherry filling. Repeate with the remaining layers of cake and filling.
  • Top the whole cake with chocolate ganace if desired, more whipped cream and fresh cherries.
  • Keep chilled until about 20 minutes till it is time to be served.

    How Do I Remove The Stones From My Fresh Cherries

    I add fresh cherries as a garnish, complete with the stem and stone. But it might be more practical to remove the stones first.

    You can do this by removing the stems and then pushing a chopstick right through the middle of them, so that the stone pops out of the bottom.

    Gluten Free Black Forest Layer Cake

    I made this Gluten Free Black Forest Layer Cake for my husbands birthday last Tuesday! It was the first time Ive made and tasted a Black forest cake before and I have to say I absolutely loved it. Oh and so did the birthday boy!!

    The chocolate cakes were filled with white chocolate ganache and cherry jam and a dark chocolate icing to top finish off the cake. I realised I didnt make quite enough ganache or cherry jam, so I made sure to double the quantities in the recipe below so you dont run out!

    I know this isnt one of my quickest or simplest recipes, so I will forgive you if you dont go out and make it this weekend. Id seriously consider it for your next birthday celebration though, it was so divine. You might also want to read a little bit about why birthdays are so important in my family. I shared it on my blog last year with a recipe for Gluten Free Chocolate and Salted Caramel Layer Cake. Just excuse the fact the cake wasnt very even shaped or flat.

    • 130gbrown sugar
    • 500g gluten free plain flour, sifted
    • 50g dutch process cocoa, sifted
    • 2½ tspbaking powder
    • 400gdark chocolate, melted

    Cocoa Powder Dutch Or Regular

    In this gluten-free Black Forest cake recipe, it all comes down to your personal taste. I prefer Dutch darker cocoa. In my opinion, it gives the cake a deeper and even moooore chocolatey flavor.

    Regular cocoa such as Hersheys gives it a lighter, more familiar and slightly acidic taste. Both, however, turn out delicious!

    Final Baking Tips And Tricks:

    Spoon & level your flour: If you dont have a kitchen scale , you can still make this cake. However, please be very careful about measuring! Using the spoon & level method will ensure that you dont use too much flour, which will lead to a gummy cake texture.

    Ensure that all ingredients are at room temperature. Again, using ingredients with varying temperatures will yield a gummy cake texture.

    Chill your cake in between frosting with the coconut whipped cream. This is because the coconut whipped cream is not as sturdy as buttercream. Its also crucial that your cakes are COMPLETELY COOLED before frosting!

    Make this into a 6 layer cake or 8 layer cake. Ive baked this black forest cake as a two layer 8 cake, a three layer 6 cake, and a three layer 8 cake .

    Use any type of dairy free yogurt: if youre soy free and nut free, I recommend coconut, which also goes well with the coconut whipped cream.

    Swap in gluten free 1:1 flour if needed for gluten free. I recommend using Bobs Red Mill in the blue bag.

    Add in the cherry Kirschwasser if you want more of a traditional Black Forest Cake. However, since I dont drink alcohol really, I choose to make the non-alcoholic version.

    This cake honestly brings me straight back to memories with my papa, so I just adore this healthier version of a homemade black forest cake! I hope you do as well

    The filling is made of cherries from the glass and whipped plant-based cream, which is also the frosting. You can choose whether you use regular cream or dairy-free cream. I always use this plant-based cream for whipping because it gets perfectly stiff. I dont know if this recipe works with coconut cream either because I havent tried it yet.

    What Is A Black Forest Cake

    Black forest cake is traditionally made with layers of moist chocolate sponge cake, soaked in Kirschwasser , light and airy sweetened whipped cream frosting with a thick layer of sticky cherries in the middle.

    Its quite an indulgent cake and Ive finally perfected the ultimate vegan version for you! Its also kid-friendly, allergy-friendly and can be easily made gluten-free too!

    Make The Keto Chocolate Sponge

    Line 3 9″/23cm springform pans with parchment paper. You want to add parchment paper on the bottom and the sides.

    In a large bowl, add the 8 egg yolks, Sukrin Gold , vanilla, apple cider vinegar and coconut oil. Mix with a hand mixer for a minute. Add the almond flour, cocoa powder, espresso powder, baking powder and baking soda to the bowl and mix well for another minute. Fold in the chocolate chips.

    Fold the egg whites in

    Add ¼ of the meringue into the chocolate cake batter and mix with the hand mixer to loosen the batter a bit.

    Fold in the remaining meringue in 3 batches. Mix with a silicone spatula. Do not use a hand mixer for this. You want your cake batter to be light and airy so if you use a hand mixture, all of that air will disappear.

    Once all of the eggs have been added, pour the cake batter into the three prepared pans.

    I measured how much my batter weighed and separated into three exact portions so that each layer would be the same height and require the same cooking time.

    Bake the cake

    Add the chocolate cakes into the oven and bake for 25-30 minutes. Insert a toothpick in the middle of the cake and if it comes out clean, the cake is ready. If not, bake for an additional 5 minutes or until the cake is fully cooked.

    Let the Cake Cool

    Once the three keto chocolate sponges are fully cooked, let them cool completely before cooling them in the fridge for minimum 2 hours.

    Step 1 Make The Cakes

    Preheat the oven to 355 ºF and line two 6 inch round cake pans with greaseproof/baking paper.

    In a large bowl, sift together the gluten-free flour, baking powder, baking soda, and cocoa powder. Add the granulated sugar and salt, and whisk well. Add the eggs, yogurt, water, and vegetable/sunflower oil. Whisk well, until you get a smooth cake batter.

    Evenly distribute the cake batter between the three-lined cake pans, and bake in the pre-heated oven at 355 ºF for about 40 minutes or until spongy to the touch and an inserted toothpick comes out clean.

    I dont bake rich festive cakes for myself so often. Mostly, I make a simple Carrot Cake, Apple or Cherry Pie or my best healthy Banana Bread. But if it should be a cake, then it has to be a Vegan Black Forest Cake! My family and I love this cake so much and we always serve it as dessert on Christmas. This cake tastes incredibly delicious!     Sugar And Gluten Free Black Forest Cake

    This vegan, sugar, and gluten-free black forest cake is simply amazing! No added sugar, no gluten as the cake is baked with quinoa! Amazing. Or did I say that already..?

    When I first started to experiment with this recipe idea I couldnt even dream the outcome would be this good and delicious. Baking the cake takes some time but is worth of every darn second. All the things black forest have been spots of sweet weakness for me in my past sugary life, I love the combination of chocolate and cherries. Im super excited to be able to share an sugar free version of one of my favorite cakes ever.

    I know I titled the post sugar-free, but technically its not totally sugar-free. Bananas and cherries are fruit, fruit contains sugar. Compared to a regular black forest cake the amount of sugar in my version is just a fraction. Youll find the nutritional chart and sugar comparison at the end of the post. Yet the cake is sweet enough to be perfect to be served as indulgent dessert!

    Start making the black forest cake the day before by baking the chocolate cake. Its at its best the next day, after having spent the night in the fridge itll be perfectly moist and very easy to cut and handle and the flavors are nicely balanced.

    Vegan Black Forest Cake

    When it comes to making vegan desserts to impress, I love making a lemon meringue pie, chocolate caramel tart, and this easy black forest cake.

    Whenever I travel, I love sampling desserts from different countries. Ive tried eclairs and Mille Feuilles in France, I noshed on delicious churros in Spain and I had to have some sticky date pudding in England. However, my favorite to date was a delicious black forest cake in Germany.

    Id never been a huge fan of cherry desserts, but there was something magical about the combination of cherries, whipped cream and a moist chocolate sponge cake. Ever since returning from Germany, I had my mind set to create a vegan version of it!

    Now, this cake may look incredibly fancy, but I promise you it is pretty foolproof! It uses simple and affordable ingredients, and doesnt need any fancy kitchen mixers to make.

    No eggs, no butter, and no milk are needed, but youd never tell. The texture of this cake is moist and fluffy and bursting with cherries. Its got a rich chocolate flavor, complemented by the whipped cream and juicy cherries.

    While it may not be 100% authentic as the original cake I enjoyed, it is pretty darn close, and PERFECT to serve during the holiday season!

    My Keto Black Forest Cake Recipe

    Since a traditional Black Forest cake is usually made with flour, sugar and cherries, I wanted to make sure that my recipe was completely gluten free and that it had no sugar in it without sacrificing the original taste. I absolutely wanted a moist black forest cake so made sure to not use any coconut flour in my recipe.

    I decided to make a homemade sugar free raspberry jelly instead of cherries to cut back on the carbs and only used fresh cherries for the toppings. I also opted to use keto cream cheese frosting instead of whipped cream because of the weather here. If you’d like to try a whipped cream dessert though, I suggest you try my low carb tiramisu! If’s filled with a mascarpone whipping cream and is just so delicious!

    It’s been 37C/99F every day here so whipped cream topping would have melted in minutes. For the ultimate chocolate version, you could also use my chocolate buttercream frosting instead and make it completely chocolate flavored!

    For the chocolate shavings and chocolate decorations, I used lily’s sugar free chocolate, but you could use chocolate from Keto Bark or Coco Polo. Both of these are keto friendly.

    The keto chocolate sponge is moist, soft and crumbly. It goes superbly well with the raspberry filling and cream cheese frosting.

    What Is Black Forest Cake

    Easy Gluten Free Black Forest Cake

    The traditional Black Forest cake has three or four layers of chocolate sponge cake, cherries soaked in Kirsch liqueur, and Chantilly cream, which is actually sweetened whipped cream. The cake is also covered with the same cream, and topped with dark chocolate shavings and some extra cherries for decoration. Kirschwasser can be used to flavor the whipped cream, and to brush the sponge cakes which will make them moist and flavorful.

    Historians believe that Schwarzwälder Kirschtorte, which is the proper name for this dessert in German, originated in the late 16th century in the Black Forest Region , located in German state of Baden-Württemberg. This region is abundant in cherries, and famous for the cherry liqueur known as Kirschwasser-in translation-cherry water.

    What Sweeteners Work Best In This Recipe

    Use your favorite 1:1 sugar substitute.

    Powered is preferred over granular, as it blends better and has a more delicate texture. Erythritol and xylitol also tend to get grainy when cold, but I found the powdered versions to do it much less.

    If you dont have powdered erythritol or xylitol and only have granular, go ahead and give it a blast with a high-speed blender or food processor. My favorite powdered sweetener by far is So Nourished Monk Fruit Blend I find it has almost no aftertaste at all.

    Swerve, Truvia, and stevia will work perfectly fine here as well as does any powdered erythritol or xylitol brand.

    Allulose will also work great in this recipe. I highly recommend allulose if you make your cherry pie filling for this recipe. It creates the BEST sticky syrupy texture.

    ** Remember, xylitol is poisonous to dogs and cats, so if thats your choice and you have little furry friends running around, be aware that it can be deadly for them.**
