Ingredients For A Blueberry Waffle Board

  • Gluten-free Blueberry Waffles
  • Lemon curd
  • Vanilla yogurt

Were so grateful for the weather weve had these past weeks! The morning light, afternoon warmth on our back deck, and early-evening walks. We even snuck in a bike ride last week!

Weve had beautiful times with friends, and eating together. Even in hard times, or uncertain times, we can find joy in the little things.

Next, we make the filling for the blueberry casserole. Mix the mascarpone cheese, fresh blueberries, and honey together in a small bowl. Add some of the blueberry compote to the bowl and mix until the mascarpone cheese is a nice purple color. Toast the waffles on low twice in the toaster or until the center is nice and warm. Spread the blueberry mascarpone on one waffle. Top another waffle on top of the spread and top that waffle with more the blueberry mascarpone spread. Top with more fresh blueberries and fresh orange zest. You can make as many waffle layers as you want!

This easy breakfast is fun for the entire family to make! You can make the blueberry compote and the blueberry mascarpone the night before and top your Vans waffles with them in the morning for a quick and nutritious breakfast.

Let me know if you make this breakfast and what your favorite flavor of Vans waffles are. Cheers to a healthy January and nutritious breakfast!

Wondering If Van’s Kellogg’s And Other Brands Of Frozen Waffles Are Gluten

Caption:

Celiac.com 03/16/2021 – We get a lot of questions from people wondering which brands of frozen waffles are gluten-free and safe for people with celiac disease. We especially get a lot of questions about Van’s frozen waffles. Specifically, are Van’s frozen waffles gluten-free and safe for people with celiac disease or gluten intolerance?

The good news is that Van’s makes a line of gluten-free frozen waffles that are safe for people with celiac disease.

Celiac.com Sponsor :It’s important to make sure you’re buying the gluten-free waffles, since Van’s also makes frozen waffles that contain wheat flour. So read labels and choose carefully.

In addition to Van’s there are a number of other frozen waffle brands that make gluten-free waffles that are safe for people with celiac disease or gluten intolerance, including the ever-popular, and easily available Kellogg’s Gluten-Free Eggo Waffles.

The Best Waffle Maker For Making Frozen Store

Gluten-free Blueberry Waffles | Vegan, Allergy-free

Hands down, the best waffle maker for that standard “toaster waffle” size is the DASH mini waffle iron! It’s so easy to use, clean, and makes perfectly crisp waffles in minutes! You’ll get about 4 to 5 waffles per batch if you use this waffle iron. However, I can also recommend my favorite Belgium style waffle maker from Hamilton Beach too, if you want the best waffle maker for larger waffles!

Prep This Recipe The Night Before For A Quick And Easy Breakfast

My easy Blueberry Waffle Breakfast Casserole features Vans Blueberry Gluten-Free Waffles that are made with whole grain brown rice flour, sweetened with fruit juice, and are free from dairy/egg/artificial anything/cholesterol/corn & are Non-GMO project verified. Vans Blueberry Gluten-Free Waffles also contain 21-23g of whole grains per serving. I know Im getting a healthier breakfast option when I chose Vans waffles for breakfast. I also love to take their delicious Strawberry & Peanut Butter Sandwich Bars on the running trail with me and whats even better is they are gluten-free and have 10g of whole grains in each bar.

My Blueberry Waffles Breakfast Casserole is super easy and fun to make. All you need for this yummy breakfast recipe are Vans Blueberry Gluten-Free Waffles, fresh blueberries, Mascarpone cheese, honey, and some fresh orange zest. The first step to making the blueberry syrup is to make a compote. In a saucepan, sauté 1-cup fresh blueberries, ½-cup water, and 1-tablespoon honey and let simmer for 5-minutes until a syrup begins to form. Once the syrup has formed, remove from heat and let the sauce thicken for 5-minutes. Once thick, the blueberry compote will be a syrup for the waffles.

Fresh Or Frozen Blueberries

You can use fresh or frozen. Just like blueberry pancakes, if fresh are abundant and in season, go fresh! If they’re not, but frozen blueberries are waiting in your freezer, use them. Either way, you’ll have an equally delicious blueberry waffle! Since these are waffles and not pancakes, just fold-in the blueberries to the batter before adding the waffle batter to your waffle iron.

How To Make Healthy Blueberry Waffles From Scratch

Van

Waffles are basically everything you love about a stack of fluffy pancakes, without the work! Sure, you can keep them plain, but why not add some fresh blueberries? Mix together your dry ingredients, add the vanilla extract, and water or non-dairy milk, but just enough to give your waffle batter some movement. Then fold in the fresh or frozen blueberries and plop a scoop on your pre-heated waffle iron. Then, step back and let the waffle maker do all the hard work for you…no flipping required!

Easy To Freeze And Store

You can follow the exact freezing directions I laid out in this gluten-free chocolate chip waffle recipe post! Make a batch or two of this blueberry waffle recipe, let the waffles cool on a wire rack to prevent sogginess, then wrap in wax paper, place them in a big freezer bag and place them in the freezer! Reheat them by sticking them right in the toaster like a normal frozen waffle. If you made a larger-sized Belgium waffle, you can place them in a toaster oven or conventional oven at 350°F and bake the waffles on a lined baking sheet for 10-15 minutes, flipping them halfway through.
