Low Carb Chocolate Cake Essentials

There are 2 ingredients that increase carbs and sugar in a traditional cake: the wheat flour and, of course, the sugar.

As grains are a no-no on a Keto diet , most Keto cake recipes use either almond flour or coconut flour or both. This cake uses only a very small amount of almond flour, which makes it super fudgy, almost like a brownie.

And of course, I’m using a sugar substitute in place of sugar. For this cake, I’ve chosen an erythritol/stevia blend. Erythritol is a polyol and cannot be absorbed by our body. Therefore, it’s essentially zero carb and does not raise blood sugars.

You can replace the erythritol in this recipe with xylitol, monk fruit sweetener, allulose or with Splenda. If you’re using Splenda, be sure to measure using cups as it’s lighter in weight than erythritol. And if you’re using xylitol, keep it away from dogs. It’s highly toxic to them!

Ive been meaning to make a flourless chocolate cake keto, after making a vegan flourless chocolate cake and a zucchini chocolate cake.

Flourless keto chocolate cakes have a different texture. As it is made with no flour and no grains, it can be a little heavier and less fluffy. However, it is just as delicious.

Low Carb Flourless Chocolate Cake Tips

  • For ease of removal, dont simply grease the cake pan. Instead, cut a piece of parchment paper to fit the base.
  • If you dont use the microwave, heat the butter and chocolate over extremely low heat.
  • Do not overmix the cake batter after adding in the cocoa powder- carefully fold it through until it is just combined.
  • Any chocolate frosting works. You can keep it unfrosted, and it will still be delicious!
  • The low carb flourless chocolate cake must be cooled completely, before frosting.
  • Be careful when transferring the cake from the pan, as it will be fragile.

This Keto Blueberry Cobbler Recipe Makes The Most Of Summer Flavors While Still Fitting Into Your Low Carb Diet You Can Customize This Keto Cobbler With A Variety Of Seasonal Fruits And Berries Like Strawberries Rhubarb Cherries And Even Chopped Apples

Full disclosure I had some epic fails with this recipe development process. The blueberry cobbler recipe itself was fine, but I was determined to find a way to do it in the microwave so I didnt have to make my kitchen feel like the surface of the sun during this current heat wave.

Unfortunately, the blueberries would boil over the sides in the microwave before the crust would cook through. I tried different ratios, different topping styles all with disastrous results.

My microwave was begging for mercy and Id wasted over 2 pints of blueberries so I finally cried uncle and just made this keto blueberry cobbler in the oven.

It only takes 20 minutes or so to bake, which is just enough to cook some of the blueberries down into syrup, but also leaves some whole just at the point of bursting which makes for a lovely texture when eating it.

The crust is another variation on the lemon almond shortbread cookie dough, and when you clump the pieces together and leave some of them large, it gives you an almost biscuit-like texture. But sweet. And lemony. And SO. SO. GOOD.

It reminds me of a great blueberry pie, but without all that tedious rolling. Mmmmpie.

Speaking of carbs, like all fruit-based desserts this is going to be a little higher in carbs from the natural sugar. If youre on a really low carb diet like keto you can still make room for it but youll want to be careful not to overindulge and kick yourself out of ketosis.

Easy Low Carb Gluten Free Blueberry Cobbler Dessert

I’m a bit of a purist, so I simply dusted my cake with 100% unsweetened cocoa powder and served on a pretty cake stand.

You could also dust the low carb cake with powdered sweeter.

If you want to go the whole nine yards, make a cream cheese frosting or a buttercream frosting.

Or how about a quick chocolate ganache? Melt 1 bar of chocolate and stirring in 3 tablespoon of double / heavy cream and 4 tablespoon powdered sweetener.

You could serve this cake with a dollop of whipped cream or a scoop of sugar free vanilla ice cream.

The Trick With Keto Chocolate Layer Dessert

Now, I already fixed the majority of the first problem with layered low carb desserts the waiting! I say majority because I still recommend refrigerating it for an hour or two at the very end before serving. But, unlike other chocolate layer dessert recipes, at least you dont have to wait between layers.

So, the only slight challenge thats left with a treat like this? Apparently, a creamy six layer dessert can be tricky to remove from the pan. It always falls apart on me! The first piece definitely wont look pretty, so be prepared for that.

After that one piece, make sure youre cutting all the way through the crust layer and use a thin, sturdy spatula to remove each piece from the pan. I love this silicone cookie spatula, which is the perfect size.

Just remember, it will still taste delicious even if you mess up on the serving process. And if you love chocolate and whipped cream, it will be one of the best low carb desserts youve ever had.

For A Paleo Or Gluten Free Cake

Best Chocolate To Use

Here in the UK there are a range of artisan chocolate makers which produce unsweetened chocolate. The brand I used, Montezuma’s, is available at Sainsbury’s, in organic shops or online. In the US you can go for a brand like Ghirardelli.

I don’t recommend choosing unsweetened Baker’s chocolate for this cake. It has the tendency to seize when you melt it and simply does not taste as creamy and mellow as quality chocolate.

Bake in the center rack of your oven until the top is golden brown and a pick inserted in the center of the pound cake comes out clean and dry. It takes between 45-55 minutes.
