Storing Gluten Free Bread

This gluten free loaf can be stored on the kitchen counter, wrapped in a towel, for a couple of days. Our family prefers to slice and freeze it because we dont eat bread every day and its super easy to pop into the toaster when we want it.

But on average, it does not need to rise twice.

I have given cup replacements for using flour in place of grains. However, for the most accurate results, I strongly advise weighing the flour for an exact weight replacement.

To replace the 1 cup buckwheat groats Use ~1.5 cups buckwheat flour

Before we get to the nitty gritty of how to make your own gluten free bread, heres a quick overview of the many reasons why its absolutely amazing.

How To Make This Recipe

Weigh the flour: Precision is key. We all scoop and measure things out different, and flour is one of the most consistently incorrectly measured ingredients. In order to ensure best results, I have only indicated the flour in grams.

Hydrate the Flour: Gluten free bread is great in some ways you dont need to worry about gluten! Regular flour bread recipes often have very specific instructions because the way you work with gluten will effect the texture. Many people think that because there is no gluten in gluten-free bread, you dont need to knead the dough or work it at all. But, you do. This dough is way too wet to knead, but you need to beat it for 5 minutes to ensure that the flours hydrate. I use a kitchen aid hand mixer with dough hooks, but my mom has had success using her food processor. You can do it by hand, but youll need some strong arm muscles! After 5 minutes of beating, your dough should almost look like butter cream frosting in texture.

Let the dough rise: Like most bread recipes, the dough will go through two rises. The first rise will be in the bowl you used to prepare your dough. You want to let it rise 1.5-2 hours, until double in size. The time will depend on your environment. If its a hot summer day and you have no AC, the rising time will be less. If its nice and cool, itll take longer. Youll then put the dough in a loaf pan and let it rise again for 30-45 minutes before baking.

Step 1: Add the dry ingredients and whisk to blend in a large bowl.

Step 2: Add your wet ingredients and blend in a smaller bowl.

TIP: Many bread recipe directions say you can dump all ingredients in the bread maker. Do not do this! When mixing as many ingredients as is needed for gluten-free bread, you risk the ingredients not getting mixed thoroughly, which can affect how the bread turns out!

What Is Psyllium Husk And What Is Its Role In Gluten Free Bread

This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.

And before you ask: there is no substitute for psyllium husk.

Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:

When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.

Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.

In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

What Is The Best Type Of Bread Pan For Baking Gluten

I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.

I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.

If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!

  • For helping dough rise > Place rising dough in oven with light on . After it has risen, preheat oven and bake.
  • Tip for handling sticky dough Skip the kneading by hand. Knead in the stand mixer with dough hook, then place the dough straight into the pan. Cover and let is rise in warm place. Then bake!
  • A Gluten Free All Purpose flour without thickeners works best! You will be adding in a thickener to help with give the bread texture and softness. If you add in too much xanthan gum or guar gum, the bread will be too hard.
