It is appealing to many food manufacturers because of its wide range of applications. It acts as a thickening agent, binder, and emulsifier. These properties are useful for the following purposes:

  • Thickening agent: helps to thicken the consistency of things like sauces. Wheat flour is often used for this purpose in gluten-containing foods
  • Binder: holds ingredients together this something that gluten itself tends to do in baked goods
  • Emulsifier: blends ingredients that would naturally remain separate, like vinegar and oil in a dressing

Why Is It Important That All The Gluten Free Flours Are Very Finely Ground

Youll notice above that Ive emphasised that its very important that your flours are finely ground or milled.

A coarse flour texture shouldnt be a problem with potato starch and corn flour , but rice is fairly difficult to grind, so some brands of both white and brown rice flour can be on the coarser side closer to polenta or grits in texture, when you want them to be very fine, like regular flour.

A coarse flour texture can cause problems in your gluten free baking. Unlike finely ground flour, coarse flour comprises larger particles which absorb less water.

This is especially obvious in recipes where you need to be able to handle a dough if your gluten free flour or blend are on the coarser side, they will absorb less water and youll be left with a much stickier and more difficult to handle dough.

So, when choosing your flours, make sure that they have a very fine texture.

Xanthan Gum And Baking Powder/baking Soda Have Completely Different Functions

Im honestly not sure where the idea that theyre somehow interchangeable originated is it because theyre all white powders?

In any case, xanthan gum and baking powder/baking soda fulfil completely different roles in gluten free baking: xanthan gum is a binder , and baking powder and baking soda are raising or leavening agents, making your bakes nice and fluffy.

So, they are in no way related and have no direct interaction or effect on each other. Just because, for example, your gluten free flour blend contains xanthan gum, that doesnt mean that you need to change the amount of baking powder or baking soda in the recipe in any way. Okay? Okay.

About xanthan gum and guar gum: Gluten-free thickeners

Xanthan gum is made using the fermentation of simple sugars. It is used in very small quantities as a thickener or stabilizer in foods and has commercial uses in cosmetics, toothpaste, and even in the oil industry.

It is so popular in gluten-free baking because it brings a stickiness to the batter that is missing due to the lack of gluten in the types of flour used. Gluten is what gives dough the ability to stretch and hold air when rising, resulting in a soft, airy, and fluffy baked item.

Simple answer: YES.

Longer answer: I havent eaten actual pasta in so long I didnt feel like Im a good person to judge this. So Ive used my parents as taste-testers , and they tried just the plain, cooked gluten free pasta. No other flavours to mask the inherent pasta flavour.

And the verdict: They couldnt tell the difference. It tastes, feels and looks like pasta. Its actually darn good pasta, if I do say so myself.

Choose Your Ingredients Wisely

So, I do call for rice flours in our house blends and depending on your choice of your rice flour, the results are going to be varied. I like the Authentic Foods Superfine Brown Rice Flour very much.

Unfortunately it is not as easy to find in brick and mortar stores where I live, so I have to plan ahead and purchase it online. I recommend that you try this recipe with the products suggested for best results.

He was very helpful and answered many questions, including offering a description of what their AF Fiber Blend consists of, so that we could determine whether it was low FODMAP.

First, well mix the gluten free flour and xanthan gum together until evenly distributed. Well then make a well in the middle and crack in the eggs.

This is a 1-bowlrecipe, folks. No fuss.

Next, well scramble the eggs slightly and start mixing in the flour/xanthan mixture. Eventually, well end up with a slightly sticky pasta dough.

Well turn the dough onto a generously floured surface and knead it for 2 to 3 minutes. Because this is a gluten free pasta dough, theres no gluten to stretch and activate, but kneading ensures a smooth dough with no flour clumps.

Can I Use Baking Powder Instead Of Xanthan Gum

However, the two are similar in that they do not provide a substitute for each other. Baking powder, as a leavening agent, helps baked goods rise and keep them fluffy, whereas xanthan gum, as a binding agent, gives baked goods their texture.

As a binding agent, xylon gum gives baked goods a soft texture and prevents them from crumbling. If you consume up to 15 grams of xylhydroxy gum per day, it is safe to consume it. It can cause symptoms such as flatulence, bloating, and diarrhea. Xanthan gum has a wide range of functions, including thickening, stabilizer, emulsifier, and foaming agent. Aside from sodium and potassium, no nutrients can be found in xylon gum, so it is not always a good substitute for cornstarch. Simply omit gums from your recipes if you want to make them healthier. Food products that contain xylon gum are made up of binder, stabilizer, and emulsifier ingredients. Bacteria ferment carbohydrates, such as glucose or sucrose, and convert them into sugar, which is then used to make this. This is a completely natural, vegetarian product with no known health problems.

How Much Should You Add

If you add xanthan to a recipe that doesnt call for it you need to add about 1/4 teaspoon for every cup of flour. This is just a general rule of thumb though. Some recipes might work best with a little more or a little less.

If you add too much xanthan your dough or batter will because very sticky, elastic-y and somewhat hard to mix and spread.

Quick Tip

If you ever accidentally spill a bit of xanthan gum on your counter top or floor whatever you do dont add water! Use a dry towel, broom or even a bench-knife to wipe up as much as you can before wetting the area. Adding water to the situation will make for a slippery mess thats an even bigger pain to tidy up.

In Gluten Free Baking You Cant Replace Xanthan Gum With Cornstarch

Gluten Free Bisquick without Xanthan Gum

The myth that you can replace xanthan gum with cornstarch in gluten free baking seems to be incredibly widespread. And thats because xanthan gum can be used in two ways: as a thickening and stabilising agent or as a binder in gluten free baking.

Now, when you want to use a substitute for its thickening action, cornstarch is definitely a good option. Cornstarch is an excellent thickening agent, and you can use for everything from thickening sauces to making the perfect pastry cream.

HOWEVER cornstarch is not a binder. And in gluten free baking, were not all that interested in xanthan gum as a thickening agent were interested in it as a binder. So, when you try to replace xanthan gum with cornstarch in gluten free baking, youre basically removing the binder and adding a starchy flour making your gluten free bake both drier and crumblier.

So, in short: cornstarch is NOT a xanthan gum replacement in gluten free baking. You cant swap one for the other. Theyre completely different things.
