This pizza crust is NY style because it has a thin, chewy crust that folds in half on the horizontal when you grab a slice. It’s only slightly crispy on the very, very outside, like in darker spots underneath the pie and on the edges.
Almost no matter how thin you make it, you’re not going to have a cracker-like crust. A super crispy crust is not a bad thing. But it’s just not the texture we’re going for here.
They say the price of a slice of pizza in New York City tracks the price of a subway ride . When I lived in Manhattan and then Brooklyn, I don’t remember ever ordering a whole pie except for delivery.
You generally buy pizza by the slice, and then you eat it walking down the street. And if you’re going to eat it walking down the street , you’re going to want to fold it in half. You end up finishing it way too fast, but again, you don’t know that’s bad because you’re 20.

After reading a tonne of enthusiastic gluten free reviews about 100% gluten free restaurant Senza Gluten, I knew it was a must-visit for my latest trip. Its a lovely little Italian place, which would be perfect for date night but equally I happily ate there solo . A portion of bruschetta and large serving of mushroom, speck and truffle oil pasta later, I could wholeheartedly agree with the other recommendations for Senza Glutine. It is a must visit for coeliacs in New York.
An Indian restaurant with a menu that is all gluten, soy and refined sugar free, however they do serve gluteny chapati. They have processes to ensure this item stays away from the other menu items. They have lots of dairy free options too. Three locations across the city. They have Indian-inspired lunch bowls, curries and salads.
Take a stroll across the river to Williamsburg its a cool area with markets to explore, including the Smorgasburg food market. There were a number of gluten free food choices, including epic truffle parmesan hand cut chips with roasted garlic and lemon aioli from Home Frite I checked with them about whether their food is coeliac friendly and they confirmed they dont use any wheaty coating on their fries. To go with my fries, I had a quinoa arepa with jumbo shrimp and avocado from Palenque. Note: closed in winter.

What’s A Good Pizza Sauce Recipe For This Gluten Free New York
There are several prepackaged tomato sauce mixes that will go wonderfully with this gluten free pizza. But if you’d like to make your own, I’ve got a tomato sauce recipe that will provide the perfect base.
Personally, I think the tomato sauce comes out perfectly as-is for pizza, but you may want to add more garlic or dried herbs to your liking.

Why I Don’t Like To Parbake This Thin Gluten Free Pizza Crust
I’ve tried making this pizza by parbaking the crust, which usually involves baking the crust alone, without any toppings until it’s just set. You can then remove it from the parchment paper, add your toppings, and bake again until everything is bubbling and set. But your crust may not be truly foldable if you do that.
To make sure that we have exactly the right chew and texture , I prefer to top the crust when it’s raw but shaped. Then, we bake it in a very hot oven for no more than 10 minutes. In fact, I usually bake it for less.
If you’re baking it on a pizza stone, you should consider pulling out the crust after just 8 minutes. The edges may not be perfectly browned and gorgeous, but the bottom should be just right.

Resist the urge to add more gluten free flour when preparing this recipe. Instead, coat your hands in oil to make it easier to work the pizza. I promise, the effort will be worth it.
A Little Back Story About My Love For Nyc
As a native New Yorker, the city holds a special place in my heart.
I grew up on Long Island and come from a family of FDNY firefighters. My Dad and uncle were both first responders after 9/11.
A year later, my parents and I moved to Florida, but I never lost my loyalty and love for New York. It reminds me of my childhood, makes me proud to be from New York, and now with celiac disease, I love it even more!
I loved New York so much that after college, I scored a summer internship in the city for two months. I got paid $50 a day to do data entry for a non-profit, but I didn’t care. It was NYC, and I was back in the place that felt like home!
The only bummer at the time was that I was still newly diagnosed with celiac disease and the gluten-free scene was minimal.
There was an Italian place called Risoterria in the West Village that was 100% gluten-free, and they even brought gluten-free breadsticks to your table. Unfortunately, they closed in 2016, and I didn’t really have chance to discover the gluten-free & celiac safe food scene until the last few years.

Gluten Free Friendly Accommodation In New York
First up, youre gonna need somewhere to stay when you visit NYC. I often stay in AirBnBs when I travel, but as New York has so many gluten free food options why not treat yourself to a stay in one of the cities fabulous hotels. Then you can relax and eat your way through all the gluten free grub New York has to offer.
A couple to consider:
- Hyatt Centric Wall Street I used to stay here for work and its a wonderful hotel. with big rooms, modern furnishing and comfy beds. Plus they do enormous breakfasts in the morning and always had lovely fluffy gluten free bread as an option when I stayed. Very handy for the financial district and Wall Street.
- Hotel Edison did someone say gluten free room service?! I havent stayed here personally but they have a Friedmans restaurant in the hotel, which is coeliac friendly and means you can order all sorts of deliciousness direct to your room.
- The Kimberley Hotel this hotel is linked to Bistango, a restaurant that is very celiac friendly, with a dedicated gluten free kitchen space and a menu that can be totally adapted to be gluten free.
No Options Heres What To Do
Some places have more gluten-free options than others. When are unable to find any good restaurant , this is what to do.

The sauce is simmered for four minutes, and its ready. The store-bought pizza sauce doesnt come even close to this simply made NY-style gluten-free pizza sauce.
The interesting thing about New York-Style pizza is the toppings. In most pizza recipes, the final topping is typically the cheese. However, this does not apply to New York-Style pizza or Chicago style pizza. The first layer is the pizza sauce and then the mozzarella cheese.

Modern Bread and Bagel
On our last trip to New York City, Modern Bread and Bagel opened literally two or three days after we left the city. It was TRAGIC.
After several years of seeing other Celiacs rant and rave about how good it is, we finally made it here on our latest trip and we went back multiple times. It is no exaggeration to say that this is the best gluten free bagel Ive ever had. EVER. I paid good money to check a bag on the way home just so I could bring back bagels.
And Alysha, who does not have Celiac Disease and has been sampling the bagel offerings in the Northeast for a couple of weeks, confirmed that she probably wouldnt have been able to pick out their bagels as gluten free.
There are a couple of things they have going on here.
First is the gluten free bagels, which you can get smothered in all sorts of fun toppings like a variety of cream cheeses, tomatoes and pickled onions, smoked salmon, and more. They have a couple of different bagel varieties to choose from , and a couple of breakfast sandwiches too.
