I used to be obsessed with snickers bars when I was younger and this magical dessert recipe is making it happen all over again!
This is a way healthier version of the original ones because its refined sugar-free, gluten-free, and naturally vegan!!
This recipe is super easy to make because even tho there is a long waiting time involved, the freezer is doing all the work!!!
Believe me, its worth every dang minute of a wait!! Try it, its addicting! These babies are what frozen dreams are made of!
In my opinion, Snickers bars and ice cream are very good on their own but when you bring them together they are on another level of yumminess.
I made the base with bananas because they are sweet enough on their own, without adding sugar. If you are not a fan of bananas you can definitely, replace the base with a simple vanilla coconut ice cream or coconut yogurt.
Caramel and peanuts are a staple in sweet combos, you cant go wrong with that!
With the addition of bananas, you have incredibly delicious snickers inspired ice cream bars!
The date caramel on its own is absolutely unbelievable! It blows my mind to think that a creamy, sweet caramel can be made with dates and water!! Its gooey, sweet, and very satisfying.

As promised, Im back with a recipe for vegan mars ice cream bars. I uploaded a recipe for veganized mars bars to the blog a few weeks ago, and it was such a hit. Seems mars bars were a firm favourite with many of you before going vegan, even more so than snickers dare I say?

These veganized mars ice cream bars are real close to the originals. The ice cream is made with an almond and coconut base . Using almonds in place of cashews make the ice cream a little lighter and less thick, but it works perfectly for these bars as the ice cream gets lovely and melty if you leave them out of the freezer for a bit, leaving a yummy soft ice cream inside when you crack into that thick chocolate shell.

Between these vegan snickers ice cream bars, the and strawberry vanilla magnums from the last couple of weeks. Im on a journey of nostalgic ice cream making and theres no going back. Theres plenty to choose from when it comes to getting your freezer stocked up in time for these warmer days. It actually makes me so excited to try and recreate treats that used to be your old favourites.
I feel like there arent words to describe how mouthwateringly tasty these ice cream bars are. They are way nicer than what I remember the original snickers ice cream bars being .

How To Make Vegan Snickers
Preparation
- First, soak the cashews in warm water for at least an hour , then discard the water.
Boil the cashews for 15-20 minutes, or until soft for a quick method.
Step 1: Make the brownie base
- Meanwhile, if you havent already prepare the healthy no-bake brownies recipe as the base. Then, press the dough firmly into a foil or parchment-lined 8 ½ x6-inch pan and place in the freezer.
Step 2: Make the cream layer
- Next, add all the ingredients for the cream layer into a high-speed blender and process until smooth and creamy. Then, pour the layer over the base and place it back in the freezer until firm .
Step 3: Prepare the caramel layer
- Add all the ingredients for the caramel layer into a small saucepan and bring to a boil. Then reduce the heat to low and simmer, whisking often, until the mixture thickens and reduces. Pour the layer over the cream one, sprinkling the peanuts on top. Then place back in the freezer.
Step 4: Prepare the chocolate layer
- Add the cocoa butter and coconut oil to a double boiler . Then, add the remaining ingredients and stir until well combined.
Alternatively, you can simply use your dairy-free chocolate of choice and use the double boiler method to melt it.
- Then, pour the melted chocolate layer over the caramel and chill in the freezer for a further 15 minutes before slicing and enjoying.
To help slicing, place your knife in a glass of boiling water to heat up, wipe it down, slice, and then re-dip between slices.
