This cake bakes for at least 45 minutes, because they are baked in an 8-inch pan, and the layers are thick. Mine were done at 55 minutes. To test for doneness, insert a wooden skewer in the middle of the cake and pull it out. There should be only a crumb or two clinging to it, but no undercooked batter. If you choose to bake these in 9-inch round pans the baking time will be a bit shorter start testing the cakes at 40 minutes.

This cake is a little different from your typical cake recipe because the cake is made from a chocolate custard. You want to make the chocolate custard first, and allow it to cool a little bit. This is what makes the cake is so moist and chocolaty!

Step 1: This gluten free chocolate cake is so easy to make! The first step is to make the chocolate custard in a saucepan. Add the chocolate custard ingredients to the saucepan and melt everything together and bring to a gentle boil. Whisk to prevent burning.

In the old days, this cake was made with unsweetened chocolate baking squares. Times have changed over the years and many more devil’s food cake recipes are made with unsweetened cocoa powder now.

Step 2: Mix in the chocolate custard, remaining wet ingredients into the dry ingredients.

I have tested this recipe with three flour blends. That isn’t to say a lot more will work, but there are so many on the market now it is expensive to test them all, plus I would drown in chocolate cake!

Avoid heavy starchy flour blends or blends with bean flours. If your blend doesn’t include Xanthan Gum, add 1 teaspoon to your blend.

Step 3: You can see the batter is just right Bake the cake in this 8×8 pan, it is a perfect size, unless you prefer to make a cute little-layered gluten free birthday cake! Then you would want these layer cake pans.

Step 4: Bake your cake at 350º F for 30-45 minutes. That is a big range, but it really depends on the size pan you use.

Copycat Betty Crocker Gluten Free Devils Food Cake Mix

Betty Crocker makes a Gluten Free Devils Food Cake Mix that does not contain any artificial colors or preservatives and is made in a dedicated gluten-free processing facility. However, if your budget does not allow for such luxuries, try this copycat devils food cake mix. Most people enjoy it more than Betty Crockers mix. It makes a high, one-layer cake, similar to a coffee cake. However, you can turn it into a low 2-layer cake, as well.

This recipe uses regular ground rice flour. There are two kinds of rice flour, regular and superfine. The package will not be labeled regular, but superfine ground rice flour will be labeled superfine. Superfine rice flour yields the best result, but it cannot be used alone as with most gluten free recipes. It must be combined with other ingredients. The Making Of A Gluten

Im not going to lie to you, this gluten-free devils food cake recipe requires a good amount of work from start to finish. As my Jewish mother would say, it takes a lot of patshke.

In order to make this gluten-free devils food cake recipe, youll need a few supplies in addition to all the ingredients.

First, youll need two 9 round cake pans. I made the mistake and used 8 round pans at first go . I was able to cut off the excess cake after it baked, but there was quite a bit of excess. Nine inch pans are the way to go.

Youll also want a sturdy standing Kitchenaid mixer. Youll be mixing for awhile, so theres nothing like having a tool to do the hard work for you.

Id also venture to say youd want a frosting spatula. It makes frosting a cake much easier!

So after I spent a few hours patshke-ing this cake in the kitchen, here is the final result. Get ready to oooh and aaah!

If you have ever baked with a house full of kids and guests on very little sleep, you will relate to this story. If you haven’t, you will probably leave thinking that my mom and I are both completely nuts.

This post is a deviation from what you’ll usually find on my site. Instead of posed pictures and perfected instructions, you’ll find a candid look into my crazy everyday life. That pretty cake stand? It’s not mine. If I had been at my house, the cake most likely would have been served on a dinner plate!

Here we go! This cake starts with 2 cake mixes. What could be easier than that, right? Wrong!

Here’s what happened on the baking front while kids ran in and out of the kitchen, my sister peppered my mom and me with questions about an event she was planning, and our sleepy brains tried to double recipes while our hands dirtied almost every dish in the kitchen:


  • 3-4 squares of Baker’s German Sweet Chocolate


Preheat oven to 350°.

Prepare cake according to box directions, combining both mixes. Melt chocolate and allow it to cool slightly before adding it to the mix.

Prepare three 8″ or 9″ round pans by lining them with waxed paper.

Pour batter evenly into the three pans.

  • Preheat the oven to 350º F.
  • Spray coconut oil in an 8×8 baking pan.
  • In a saucepan, add custard ingredients and cook over low heat. Allow to bubble gently, then remove from the heat.

Can I Make This Gluten Free Devil’s Food Chocolate Cake Vegan

My gluten free chocolate cake recipe uses extra egg yolks, to make the finished cake rich, and moist. This makes it very tricky to make this cake vegan.

You can try using three whole eggs, instead of the two whole eggs and two egg yolks. If you make this switch, your cake will be lighter and not a rich gluten free devils food cake.
