What About The Weekend

I dont add weekend meals to these meal plans because Ive found that more often than not, well have enough leftovers to fill in the two extra days and I dont want you guys to end up buying more groceries than you can use.

Around Thursday or so, you can see what youve got left in your fridge and decide if you need anything else to round out the week. A good tip is to always have some frozen ground turkey or chicken in the freezer for last-minute taco meat that you can use to make healthy tacos, taco salad, taco meat-stuffed peppers or zucchini, a quick taco soup, or some dinner nachos!

Budget-Friendly Meal Prep For Your Week (Gluten & Dairy Free) // Simply Taralynn

I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.

A Few Nutrition Notes

Lastly, a few notes on nutrition! This shrimp stir fry is big on both flavor and nutrients! We like to design meals that add a big nutritional punch using our favorite go-to veggies. Heres what to note:

  • Bell peppers are packed with vitamin C: 1 medium red bell pepper provides 169% of your daily vitamin C. So using two peppers in this recipe knocks this vitamin off the charts .
