A healthier alternative to your average coconut shrimp. The simple flavors and few ingredients are a definite crowd pleaser. Shrimp, eggs, coconut and seasonings. Thats it! These coconut shrimp are also low carb, whole30, and paleo. The shrimp must be peeled with the tail left on for ease of dipping. If you are using frozen shrimp, make sure to defrost and pat dry the shrimp before dipping in egg mixture and breading with the coconut and seasonings. This will ensure a crisp outside and tender inside when fully cooked. You will need to cook these coconut shrimp in two batches to make sure they have room to turn golden brown in the air fryer. What You Need To Make This Gluten

The Marinade

  • Chicken, Bone-in, skin-on: I use flats and drums only, making sure the tail is removed.
  • Buttermilk: Adds flavor, tenderizes the chicken, and helps the flour mixture stick to the chicken. You can use dairy or non-dairy buttermilk

The Flour Coating

  • Flour: I use King Arthur, Measure for Measure Certified Gluten-Free Flour. If you are not sensitive to gluten, you can use regular flour, like this one.
  • Cornstarch: This helps make the wings extra crispy. This is the cornstarch I use.
  • Seasonings: Garlic powder, onion powder, paprika, cayenne pepper, dried oregano
  • Oil in a spray bottle: To spray on the air fryer basket and coat the wings

The Chimichurri

  • Fresh Herbs: Cilantro, Parsley, Oregano
  • Liquids: Olive Oil & Red Wine Vinegar
  • Aromatics: Shallot , Jalapeno, Garlic
  • Seasonings: Salt, Pepper, Dried Oregano, Red Crushed Pepper

Tips For Cooking Biscuits In The Air Fryer

  • Make sure you do not stack the biscuits and you place them into the air fryer in a single layer so that they cook more evenly.
  • Air fryers vary, so you will want to make sure that you check on the biscuits during cooking to ensure they are cooking properly.
  • Using an air fryer liner or parchment paper with holes poked in it for venting will ensure that the biscuit dough does not stick to the air fryer.
  • If you have an air fryer that does not have an air fryer basket and it has racks then you will want to line the rack with a liner and cook the biscuits on the center rack for the best results. If the biscuits are not cooking evenly then you will want to rotate the rack halfway through cooking.
