If you can’t or choose not to eat gluten, that doesn’t mean you have to forgo one of the greatest foods in life: bread. If you aren’t up for making your own bread from scratch, there are plenty of pre-batched mixes on the market that exclude the protein, and like any other store-bought mix, they merely require pantry staples, like butter, eggs, and milk.

Without gluten, you may be worried about your loaf becoming compromised and losing its elasticity, becoming nothing more than an oddly textured, chewy disaster. Nobody has time for bad bread, which is why we researched top-rated brands to get you tasty results.

Here, the best gluten-free bread mixes on the market.

Terrasoul Superfoods Organic Almond Flour

Almond flour can prove to be a good gluten free flour choice as long as you dont have a nut allergy. In addition, it can add fiber and protein to your baked goods recipes and has a neutral taste, making it a versatile gluten free flour option.

Remember that it has a finer texture than other flour options, which means it wont make a good substitute for wheat flour.

However, adding more almond flour than what is asked of flour in the recipe or adding xanthan gum or egg whites can leave you with a stiffer dough. This almond flour is good for quick bread recipes, pancakes, and other baked goods.

This almond flour is kosher, USDA certified organic, non-GMO, raw, gluten free, and vegan-friendly. It has a super fine texture because the almond skin is removed, and it is free from propylene oxide and other chemical residues you can find in more conventional almond flour brands.

Pros

Cons

  • On the higher end of the price spectrum
  • May need to use xanthan gum for bread recipes since it has a super fine texture

Why Bake Recipes With Gluten Free Bread Flour

Baking recipes that call for this gluten free bread flour is an experience much more like what you might expect when youre baking conventional yeast bread. The dough isnt overly wet like the batter-style of bread.

The batter-style sort of gluten free bread dough doesnt look or behave anything like conventional yeast bread when its raw or even when its baking. It has very often been described as cookie dough.

If youve ever made a batter-style gluten free bread, which absolutely still has its place in my heart, the moment you make this bread dough youll see how different it is. You can manipulate it with your hands without moistening them first.

Tapioca And Arrowroot Flours

The tapioca and arrowroot flours provide the much-needed starch in this flour mix that the whole grains are short on. They also help mitigate some of the more assertive flavors that whole grains can have.

The tapioca flour lightens and gives lift to baked goods. It also has some great binding qualities and helps with browning. Too much of this flour will give a chewy, gummy texture.

The arrowroot flour also helps lighten and give lift to baked goods. It has some natural binding qualities and helps with browning.

Arrowhead Mills Organic Gluten

Whole Grain Millet Bread Recipe | Gluten free Bread

Arrowhead Mills makes some of the best classic flours around, so it makes sense that the same quality would be evident in their gluten-free blend. Made from a mix of organic brown rice flour, tapioca flour, and millet flour, this flour can be used as a one-to-one swap in most recipes. Because of the brown rice base, it’s a bit less dense than many gluten-free flour blends and makes for fluffy cakes and breads. Testers also commented on the lack of aftertaste . It’s also one of the most affordable options on the market today.Organic Gluten-Free All-Purpose Flour, Arrowhead Mills

Why Was My Gluten Free Bread Dense

For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two. Mixing it twice will always cause the bread to be denser.

Are you scooping your measuring cup into the flour? Or spooning the flours into the cups then leveling? You should always spoon then level.

Otherwise you’ll end up with more flour then you want which causes the bread to be dense.

Are you storing your flours in the freezer or refrigerator? If flours are stored that way they loose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

What Is The Best Type Of Bread Pan For Baking Gluten

Doves Farm Gluten Free Brown Bread Flour

I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.

I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.

If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!

What Is In This So

I did a lot of research while testing this flour blend. There are so many great bloggers doing this kind of research and testing and I owe them lots! I learned that high starch content, protein, and something for the dough to build on is very important in making a good loaf of gluten-free bread. This bread flour has:

  • Potato Starch
  • White Rice Flour
  • Brown Rice Flour
  • Tapicoa Starch/Flour
  • Chickpea Flour
  • Xanthan Gum

What Is Gluten And What Does It Do

Traditional flour is ground wheat that absorbs liquid to produce elastic strands that can be kneaded and prompted to rise during cooking. This is why flour is always a key ingredient of cakes and pastries. The naturally occurring protein that creates flours elastic properties is known as gluten. It is a key building block for grains, wheat, barley and rye.

What Is The Best Type Of Yeast To Use In This Gluten

This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.

Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.

Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.

If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.

Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.

I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

How To Make Gluten

Gluten Free Natural Sourdough Rice Flour Bread
  • This gluten-free bread recipe only has a few simple ingredients: gluten-free all-purpose flour, baking powder, instant yeast, honey, olive oil, apple cider vinegar, warm water, room temperature egg whites , and salt.
  • Spray a 9x 5 bread pan or 9x 4 small Pullman loaf pan with gluten-free cooking spray. Move the top oven rack to the middle rack. Preheat your oven to 350°F.
  • Add the gluten-free flour, baking powder, and instant yeast to a large bowl and stir to combine the ingredients.
  • Add the olive oil, honey, and apple cider vinegar, and warm water to the flour mixture and mix on low for 1 minute. If you are using a stand-up mixer, use the paddle attachment, not the dough hook.
