Why Is It Used In Gluten
Essentially, Xanthan Gum does two important things in gluten free baking:
In gluten-free baking, Xanthan Gum helps to provide some of the stickiness thats missing when youre omitting gluten from a recipe. Remember that gluten is glue-like. Gluten is an extremely elastic protein, so when you try to bake without it you can end up with a crumbly mess if you dont find a way to replace some of that elasticity.
This where Xanthans binding properties come into play it sticks to the flour and holds onto the moisture within the recipe so that when you take it out of the oven its a moist, well formed bake rather than a kitchen nightmare!
What Is The Best Type Of Yeast To Use In This Gluten
This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.
Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.
Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.
If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.
Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.
I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

But Does It Taste Like Pasta
Simple answer: YES.
Longer answer: I havent eaten actual pasta in so long I didnt feel like Im a good person to judge this. So Ive used my parents as taste-testers , and they tried just the plain, cooked gluten free pasta. No other flavours to mask the inherent pasta flavour.
And the verdict: They couldnt tell the difference. It tastes, feels and looks like pasta. Its actually darn good pasta, if I do say so myself.

What Is Xanthan Gum
Xanthan gum has been around since the 1960s and was developed by fermenting plant bacteria to create this gummy product which has a multitude of uses in the food industry and also conversely in the oil industry and cosmetic industry.
In the food industry xanthan gum is a common additive that you will find time and time again in both gluten and non-gluten products. It is a thickening agent and stabliliser which prevents ingredients from separating and can also add viscosity to liquids.
Its use in commercial products can be in processed sauces or salad dressings to stop them splitting on the shelf. You might also find xanthan gum used in ice cream to slow the formation of ice crystals which leads to a creamier texture.
However you might know it best for when it crops up in the ingredients list for a gluten-free cake or cookie.

Tips For Baking Gluten
- Make sure you have fresh yeast .
- Always use room temperature ingredients! Yeast thrives in a warm environment.
- You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
- Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
- Bake the bread on the middle rack.
- I also like to bake my bread horizontally for even baking.
- Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
- Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.
Making The Gluten Free Pasta Dough
First, well mix the gluten free flour and xanthan gum together until evenly distributed. Well then make a well in the middle and crack in the eggs.
This is a 1-bowlrecipe, folks. No fuss.
Next, well scramble the eggs slightly and start mixing in the flour/xanthan mixture. Eventually, well end up with a slightly sticky pasta dough.
Well turn the dough onto a generously floured surface and knead it for 2 to 3 minutes. Because this is a gluten free pasta dough, theres no gluten to stretch and activate, but kneading ensures a smooth dough with no flour clumps.

The Role Of Xanthan Gum In Gluten Free Baking
In gluten free baking, xanthan gum acts as a binder a gluten substitute that holds the bakes together, prevents them from being too crumbly and greatly improves their texture. It gives them elasticity, extensibility and flexibility, and its all down to its hydrocolloid properties and its ability to form a sticky gel.
Note that xanthan gum isnt a 1:1 gluten substitute and it most certainly doesnt give the same degree of elasticity as gluten. However, in the case of cakes, muffins, cookies, brownies and similar, thats not a problem at all. After all, you dont need much elasticity in your average sponge cake. You just need enough binding power to prevent it from being too delicate or crumbly. And thats exactly what xanthan gum provides.
All that said: xanthan gum isnt the best binder for gluten free bread. There, its psyllium husk thats the star of the show its the ingredient that allows gluten free bread to be kneaded and that gives gluten free dough enough extensibility to be able to proof properly. Xanthan gum still has its uses in gluten free bread , but its more of a helping hand rather than the heavy-lifter.
Finally, xanthan gum also helps with moisture retention in gluten free baking: it basically helps to make your bakes moist and keeps them that way for longer.
How Much Should You Add
If you add xanthan to a recipe that doesnt call for it you need to add about 1/4 teaspoon for every cup of flour. This is just a general rule of thumb though. Some recipes might work best with a little more or a little less.
If you add too much xanthan your dough or batter will because very sticky, elastic-y and somewhat hard to mix and spread.
If you ever accidentally spill a bit of xanthan gum on your counter top or floor whatever you do dont add water! Use a dry towel, broom or even a bench-knife to wipe up as much as you can before wetting the area. Adding water to the situation will make for a slippery mess thats an even bigger pain to tidy up.

What Exactly Is Xanthan Gum
Xanthan gum is a polysaccharide basically a type of complex sugar. Its made through a process of fermentation with the help of bacteria called Xanthomonas campestris.
Its a food thickening agent thats used to keep foods uniformly thick. Its also used as a stabiliser, as it stabilises emulsions and prevents products from separating . In addition to being used as a food additive, its sometimes also used in non-food products, such as cosmetics.
All of these useful properties are due to the fact that xanthan gum is a hydrocolloid: it binds water and even at very low concentrations it can cause a significant increase in the viscosity of a liquid. In simple terms: it forms a gel.
In gluten free baking, were not really interested in its thickening properties instead, its the ability to bind water and form a sticky gel that helps to give gluten free bakes that I-cant-believe-this-is-gluten-free quality.

Add flour and salt to a large bowl. Make a well in the flour and add all of the eggs and the extra yolk. With a fork, start beating the eggs in the well, while slowly incorporating the flour in as you go.
Keep mixing with a fork until a dough starts to form and mixing with a fork starts getting too difficult! At that point, turn the dough and any remaining bits of the mixture out on to a floured cutting board.
Slowly start to reduce the thickness of the roller until you reach your desired pasta thickness. On our rollers, we generally stop at 4 or 5.
How To Use Xanthan Gum Gel For Sauces Gravies
I will add a tablespoon of gel at at time and wait for a few minutes to see if it thickens. You will have to be your own guide, but know it works.
One of my favorite uses for xanthan gum is to make a gel that I use to thicken sauces, soups, stews and gravies. In this Tuscan Salmon recipe I replaced 3/4 of the heavy cream with broth and used this gel to make it thickener.

What Is The Best Type Of Bread Pan For Baking Gluten
I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.
If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!
What Should I Do If I Cant Use Xanthan Gum
Dont worry, weve got you covered! Theres a number of alternatives that you can substitute for Xanthan Gum if necessary:
You may be wondering why Ive included both of these seeds in the same category the short answer is because they both work in a very similar way. For this substitute youre basically making a chia seed or a flax egg. Once you hydrate the seeds, they produce a gel-like substance which mimics the properties of Xanthan Gum. The only downside to this method is that you need extra water to hydrate the seeds which can lead to longer cook times.
Pros: Its an easy fix if you have everything on hand and it works fairly well.
Cons: It may make for a nuttier and slightly grittier baked good.
As a rule of thumb replacement: Use a 1:1 substitute of ground chia/ flax seed to 2 parts water.
What does that mean in English? If your recipe asks for 1 teaspoon xanthan gum use 1 teaspoon ground chia/flax seed mixed with 2 teaspoons water. Mix together and set aside for about 5-10 minutes until you end up with a thick, gel-like consistency and use that as your replacement.
Cheap and cheerful, cornstarch can also provide similar thickening properties to Xanthan Gum. It can often be used as a 1:1 replacement for Xanthan, however its worth noting that it has a much higher carbohydrate content so if youre tracking your carbs, its worth keeping that in mind.
