Theres an emotional connection when we eat certain foods and theres a joy that it brings when you can share it with others. That is why Im sharing this Vanilla Layer Cake with you today to bring you joy!
I had wanted to share an easy vegan vanilla cake ever since I made a chocolate raspberry cake. Although that chocolate recipe is a HUGE hit on the blog, you all were still requesting a gluten-, dairy- and nut-free vanilla cake. How could I say no? Plus, I love fluffy vanilla cake!
But this cake is so much more than the taste and ease of throwing it all together. Its about making a beautiful dessert that everyone can enjoy together.Wouldnt this be great over Fourth of July with all those red & blue berries or for your next special occasion anyones birthday cake coming up?
What Causes A Gluten
If your temperature is too high, or your cake is placed in the oven too high your cake may bake up into a high, cracked dome.
The heat of baking activates the baking powder and causes it to release carbon dioxide, which forms bubbles and raises the cake.
If your oven is too hot, that process is sped up. Make sure to place your cake in the center, and regularly check your oven’s temperature.
How To Use Gf Sponge Cake
This gluten-free chiffon cake makes a versatile base for many types of cakes and sweet treats.
- Layer it with whipped mascarpone, berry chia jam, and fresh berries, as shown here, for a gluten-free strawberry cake.
- Spread it with lemon curd and whipped cream.
- Brush the cake with flavored syrups or boozy spirits before topping with frosting or ganache.
- Make fully gluten-free dairy-free cake by using whipped coconut cream.
- Cut into slices to make my easy gluten-free tiramisu recipe.

How To Make Gluten
Preheat the oven to 350 degrees F. Lightly spray a bundt cake pan with cooking oil, and lightly sprinkle with flour. This will help you release the cake from the mold once it is baked.
In a stand mixer, cream together the butter, sugar, and pure maple syrup on medium-high speed until well-combined.
Add the eggs one-by-one and beat just until the yolk is incorporated . Add in the pure vanilla extract.
In a separate bowl, stir together the gluten-free flour, baking powder, cinnamon, nutmeg, ground cloves, and sea salt. Alternate mixing in the flour mixture and eggnog: Pour half of the flour mixture into the stand mixer and mix just until combined.
Pour half of the eggnog into the mixer and mix just until combined. Repeat for remaining flour and eggnog.
If adding alcohol, pour it in and beat just until combined.
Pour the cake batter into the prepared bundt cake pan. Bake on the center rack of the preheated oven for 50 to 60 minutes, or until cake is deeply brown and tests clean.
Remove cake from oven and allow it to cool completely.
Run a butter knife along the edge of the pan to help release the cake from the mold. Turn cake over onto a cake stand or serving dish to release it.
Stir together the ingredients for the glaze in a bowl until well-combined, then drizzle glaze over the cake. Slice and serve!

This recipe is the perfect way to kick-off my birthday month with a deliciously decadent chocolate birthday cake.
Now, its a birthday tradition of mine to always have a mint chocolate something on my actual birthday. Previously, I made these Mini Skillet Brownies with Fresh Mint Chocolate Chip Ice Cream. This Easy Vanilla Vegan Gluten Free Cake is made in 1 bowl and requires only 8 ingredients. Itâs fluffy, moist, tender and bursting with vanilla flavor. Plus there is no added oil to the cake itself!
After creating the most perfect vegan vanilla cake, I wanted to help my gluten-free friends by baking a version they could enjoy. Of course, it works quite well to simply replace the all purpose flour in the original recipe with a quality gluten free flour mix, but this cake recipe was created from the start to be gluten free.
Youâll want to dig into slice after slice of this fluffy, tender, and moist cake. You canât even tell that itâs gluten-free or vegan! Iâve had plenty of dry gluten free vegan cakes, so I wanted to avoid that outcome at all costs.
All you need to make this cake is 1 bowl and 8 ingredients. Even without any oil, dairy, or gluten, this dessert is exceptionally delicious! Itâs beautifully decorated with my simple vanilla frosting and sprinkles, or use my chocolate frosting if youâd prefer! Ive included a very simple vanilla icing recipe as well.

Enhancing The Chocolate Flavor
A lot of chocolate cake recipes call for coffee. I prefer using boiling hot water as I find it helps activate the cocoa a bit more and give the cake a really rich flavor. However, with water you miss out on the richness that coffee gives to a cake.
To make up for that, I always suggest using espresso powder! Just 1-2 teaspoons in the batter will bring out the rich chocolate flavor but wont give off any coffee flavor. Its optional, but I recommend it if you can!

How To Make This Crazy Cake
This crazy cake gluten free chocolate cake is so ridiculously easy. By the time you get it in the pan and the oven, you almost cant shake the feeling that you must have forgotten something. But its really that easy.
Because there are no eggs, no butter and no milk, none of the ingredients need to be brought to room temperature before baking. If you only need 1 round cake, halve all the ingredients.
If youre looking for a more traditional, somewhat richer cake, theres always my spectacular one bowl gluten free chocolate cake. The secret to the moistness of that cake is the sour cream.
Would you rather make a layer cake instead of a bundt? Divide the batter between two round cake pans.

Make It In Rounds Or As A Bundt Cake
When I first tried making this cake, I only made it as a bundt cake. Bundt cakes make such an amazing presentation, and not every cake recipe seems to work well in that form.
But I had long suspected that I could either halve the recipe and make it in one round pan, or make it as is in two round pans. Well, Im happy to report that it this recipe works amazingly well in rounds.
You will be so impressed by how it rises without a dome on top. That makes it perfect for layering.
The ingredients are so simple to cut in half if youd like to make just one roundwhich is what I usually do. Its a thick enough cake when cut in half that I dont feel like I need a layer cake even for a festive occasion.
How To Decorate The Cake
My 4-ingredient simple vanilla frosting is probably the best tasting option for the cake! Itâs rich, buttery and smooth. One batch will cover the entire cake and satisfy your sweet tooth.
Or you can make the simple vanilla icing Iâve included in the recipe. It only has 2 tablespoons of vegan butter, and if you really needed to you could leave it out. For the simple icing, you can mix all of the ingredients in just one bowl. If the frosting is too runny, stir in more powdered sugar, and if itâs too thick, add a teaspoon of milk at a time until you reach the desired consistency.

Why Did My Gluten
There are several reason why cakes sink, one is from over beating the batter and adding too much air. Also, cakes often will sink when there is too much moisture.
This is more common in humid climates where added moisture can collect naturally in ingredients such as flour.
When this occurs, cupcakes may rise rapidly and then fall during baking.
In higher elevations, the leavening agent works twice as hard and may cause the batter to rise rapidly and sink before itâs had a chance to set up.
All these tips are relevant to most cake and cupcake recipes, not just this Gluten-Free Chocolate Cake.
