Notes On Ingredients And Substitutions For This Chicken Salad Recipe:
- Mayonnaise: You can use your favorite mayonnaise. I used Chosen Foods mayo this time.
- Dill: If you dont have fresh dill on hand, you can substitute with 1 teaspoon dried dill instead. Fresh gives the best flavor so try to put it on your grocery list or find a neighbor that grows it!
- Pecans: If you are allergic to pecans, you can simply leave them out or add in more chopped celery in their place. If you prefer walnuts, you can use them in place of the pecans equally. See below for notes on toasting the pecans. I like these pecans.
- Garlic Salt: I use garlic salt in just about everything I make! You can substitute with onion salt if you prefer.
- Chicken: Used chicken cooked in your preferred method. Here I grilled some chicken breasts and cubed it. You can use chicken you cook in skillet or crock pot or even Rotisserie chicken.
- Red Onions: I used chopped red onions in this. If you prefer another variety of onion, feel free. If you want to sweeten up this recipe, use a Walla Walla sweet onion it wont add much color but itll add a sweetness.
Before you make the chicken salad, youll want to toast the nuts. Toasting nuts is a must to get the best flavor in most recipes, including this one. Thankfully it is super easy.
Is Chicken Salad Gluten
While chicken salad often is gluten-free, its definitely not a for sure thing. If youre ordering chicken salad from a restaurant, or a friend is serving you chicken salad, youll want to ask to see the ingredients list. You just never know what someones secret ingredient is! Some people even put bread crumbs in their chicken salad for texture. Many recipes for chicken salad call for vinegar, and you never know if someone chooses to use malt vinegar in their recipe.
Youll also want to ask about their procedures for preparing both the chicken and the chicken salad. Watch out for broth containing barley yeast extract or wheat used when cooking the chicken.
Ask questions about the preparation such as shared cutting boards or if they use the same scoop to scoop the chicken salad onto other peoples gluten bread before scooping onto your plate. The potential for cross contamination is high given that most people eat chicken salad on bread or crackers.
Is chicken salad dairy-free?
People usually make chicken salad without dairy, and this recipe follows suit. Unless you cook your chicken in butter, there wouldnt be any dairy in this recipe.
Lets take a look at the ingredients in this gluten-free dairy-free chicken salad recipe:

Can People Following A Gluten
When it comes to mayo, its traditional ingredients are usually gluten free.
However, according to the Gluten Intolerance Group, those with celiac disease should avoid mayonnaise made using malt vinegar, as it derives from barley, a gluten-containing grain.
Mayonnaise can also become contaminated with gluten during production.
Cross-contamination can also occur once a jar is open. For example, reinserting a knife into a jar of mayo might allow breadcrumbs into the pot, which contaminates it with a small amount of gluten. To avoid this problem, a person may consider buying mayo in a squeezable bottle.
Research has found that people with celiac disease should limit their daily gluten intake to no more than
Making mayonnaise at home is easy and perhaps the way to make sure it does not contain gluten.
Most people already have the ingredients for home-made mayonnaise in their store cupboards.
The following recipe uses regular, raw eggs, but pasteurized eggs can replace them to extend the shelf-life of the mayonnaise. These are available in most grocery stores.
A person can use any oil in this recipe, but flavorsome oils, such as olive oil, might overpower the taste of the mayonnaise. Neutral-tasting oils, such as grapeseed, safflower, avocado, and canola, offer a cleaner taste.
Kraft Brand Mayonnaise And Miracle Whip
Kraft markets three different types of Miracle Whip Original, Light, and Fat-Free. The company also makes a dozen or so mayonnaise products, including Real Mayo in full-fat, light and fat-free versions, plus several “Sandwich Shop” flavored mayonnaise products in squeeze bottles.
Kraft Foods has a policy of clearly disclosing any gluten-containing ingredients on the label. Therefore, if you don’t see any obvious gluten-containing ingredients, the product doesn’t contain any. That doesn’t mean, however, that it qualifies as “gluten-free” it still could be subject to gluten cross-contamination in processing.
Some particularly sensitive people report problems with Miracle Whip, particularly with the Light and Fat-Free varieties. The vinegar used in Kraft products can be sourced from any grain, including gluten grains, according to a customer service representative.

You will find that this mayonnaise will last up to a week when kept in an airtight container in the fridge. Keep in mind that if your eggs are relatively old, then it may not last as long. If it smells funky or looks unpleasant, then discard.
Its also important to remember that this is a raw egg product so make sure you dont leave it sitting on the bench for too long and if youre pregnant then its best to avoid it altogether.

Why Make Mayo At Home
One of the best parts of making mayo at home is that you know exactly what has gone into making it.
Being able to adjust the ingredients to suit your needs better is a great reason to make it at home. For example, if you love mustard, then add more mustard. Alternatively, if you love garlic, then add more garlic.
You will need to be careful with homemade mayo as it does tend to spoil faster than the commercial brands. Always refrigerate it when its not in use and discard after a week unless it looks like it has already spoiled.
As with any homemade product, there is a bit of a risk when it comes to pregnant people. I recommend sticking to the supermarket varieties to be safe until after the pregnancy.

From A Deli In New York To A Family All Over The World
At just fourteen, young Richard Hellmann was already fostering a love of food as an apprentice at his local food market. But it wasn’t until he moved to New York that he found true success. Here he met his wife Margaret, who just happened to be the daughter of two deli owners. And in 1913, Richard and Margaret realized their dream of setting up shop and the Hellmann’s Delicatessen was born.
The Deli that would become our birthplace opened its doors right in the very heart of New York: Columbus Avenue, Manhattan. And Richard began creating his now legendary mayonnaise. Jars were filled to the brim with a delicious blend of ingredients picked to create the ultimate creamy texture and taste.
With Margaret by his side, they perfected it, then perfected it again. They reckoned it was the best possible mayonnaise. And their customers thought so too. Proud of his product, Richard tied his signature blue ribbon around those of the very best quality. And that blue ribbon standard is still tied to everything we do today.
Word of Hellmann’s deliciousness spread far and wide. And in record time, Hellmann’s Mayonnaise became known world wide, thanks to its unmistakable taste.
Why Mayonnaise Is Bad For You
