How Do You Make Creamy Chicken Pot Pie

Quick & Easy Gluten Free Chicken Pot Pie

There are a few key ingredients for this Creamy Chicken Pot Pie, that includes cream and butter.

Dairy is a big part of this recipe, and when you purchase dairy from your local store, you are supporting the dairy farmers in your area.

Another important ingredient is, of course, the vegetables and chicken too. I use frozen mixed vegetables to make this, makes it easy to get all the vegetables I want in one bag.

Finally, the crust is a big factor. I have found that I really like the King Arthur Gluten-Free Pie Crust for this recipe. It works well and gives that flaky crust that I prefer.

How To Make Gluten

  • Prepare 2 pie crusts by doubling my gluten-free pie crust recipe, including chilling.
  • Place a baking sheet on the lower rack of the oven. Preheat the oven to 425°F and grease a 10-inch iron skillet or 9-inch pie dish. I like using vegetable oil for the skillet and coconut oil cooking spray for the pie pan.
  • Place one of the gluten-free pie dough into the bottom of a skillet or pie dish. Make sure it is smooth.
  • Place the diced potatoes and frozen vegetables in a large pot. Cover the vegetables with water and cook over medium heat for 10-15 minutes, until potatoes are soft. Drain the vegetables and place in a bowl.
  • Add the butter to the pot and melt over medium heat.
  • In a small bowl, whisk together the milk and flour.
  • Stir in gluten-free flour-milk mixture and seasonings, whisking continuously until smooth.
  • Slowly add the gluten-free chicken broth, stirring frequently until thick. Remove the pot from heat.
  • Stir in the chopped chicken and vegetables.
  • Pour the filling into the pie crust.
  • Place the remaining pie crust over the top of the filling and pinch the edges shut.
  • Cut slits in the top of the pot pie.
  • Whisk together the egg and the water in a small bowl and brush it all over the top crust.
  • Bake for 30-35 minutes, or until golden brown and internal temperature reaches 165°F.
  • Allow the pot pie to cool for 10 minutes and serve!

How To Make A Double Crust Chicken Pot Pie

If you prefer a chicken pot pie with a double crust in a pie plate , we can make that happen. Simply double the pie crust recipe, and follow the instructions in the pie crust post to blind bake the bottom crust.

Youll either want to make less filling or make multiple pies, since the filling here is for a casserole dish. Once you smell and then taste the filling, I dont think youll want to reduce the recipe, though.

Gluten Free Creamy Chicken Pot Pie

My favorite way to cook it for a recipe like this is in a casserole dish with the meat covered completely with parchment paper. The parchment paper acts like the skin of the chicken would, and locks in moisture during cooking.

Place the breasts in a lined or greased dish, allowing for some space between the breasts. Drizzle the meat lightly with olive oil, sprinkle lightly with salt and freshly ground black pepper, and cover completely with parchment paper placed directly on top of it, covering the chicken completely.

Preheat your oven to 400°F. Place the dish in the hot oven and cook for about 20 minutes or until an instant-reader thermometer inserted into the thickest portion of each breast reads at least 165°F. Allow to rest outside the oven, still covered, for 10 minutes before chopping.

To make this chicken for later use, allow the chicken to cool completely while still covered with the parchment paper. Wrap the chicken tightly with freezer-safe wrap, and freeze until youre ready to use it. Defrost in the refrigerator overnight before using in this recipe, for chicken salad, or anywhere you might use cooked rotisserie chicken.

Recipe: Gluten Free Chicken Pot Pie Casserole

Servings: 6

  • 3 medium carrots, peeled and diced
  • 1 pound sliced mushrooms
  • ¼ cup gluten free all-purpose flour
  • 1 ¾ cups chicken broth
  • ½ cup half-and-half
  • 1 tablespoon fresh chopped marjoram
  • 1 pound boneless chicken breast, cooked and chopped
  • ½ cup frozen peas
  • Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish with cooking spray.
  • Melt 4 tablespoons butter in a heavy saucepan over medium heat.
  • Add the onions and carrots then cook, stirring occasionally, until the onion is translucent.
  • Stir in the mushrooms then season with salt and pepper.
  • Cover and cook on medium heat, stirring occasionally, for 5 minutes more.
  • Sprinkle the gluten free flour over the veggies and stir it in.
  • While whisking the mixture, drizzle in the chicken broth and half-and-half.
  • Add the marjoram and season with salt and pepper again.
  • Bring the mixture to a simmer and cook until it starts to thicken, about 2 to 3 minutes.
  • Remove from heat and stir in the cooked chicken and frozen peas.
  • Pour the mixture into the prepared baking dish and spread it evenly set aside.
  • Melt the remaining 2 tablespoons butter in a medium saucepan.
  • Remove from heat then stir in the Schär Gluten Free Breadcrumbs until evenly coated.
  • Sprinkle the buttered breadcrumbs over the chicken mixture.
  • Bake for 12 to 15 minutes until the crumbs are browned then let rest 5 minutes before serving.

    How To Make Chicken Gravy & Filling

    For the dairy-free gravy, we use a traditional gravy making method. Creating a roux, add the chicken stock, and whisking until there are no lumps.

    For the filling, heat ghee or your vegan butter in a large saucepan . Add in the tapioca flour and whisk vigorously until combined and there are no lumps, you will cook it for an additional 30 seconds.

    Slowly pour in the stock, whisking constantly. Cook for 1-2 minutes until thickened, whisking every few seconds. If using bone broth rather than shelf-stable chicken stock, warm it up to room temperature. You dont want it too cold or too hot, both can cause excess lumps .

    Stir in the vegetables and chicken, cook for 3-5 minutes until heated through. Add in the remaining spices for the filling and bring to a simmer. Season with additional salt and pepper, if needed.

    We finish the gravy with a small amount of dairy-free milk, preferably almond, just to give it a little extra body. This is optional, but a nice touch!

    Fresh veggies work too. I recommend sauteing chopped onions for 5 minutes to soften them before adding the pot pie filling. The peas and carrots can be added raw. with the chicken.

    Speaking of leftover chicken we used leftover poached chicken from our monthly Butcher Box. Good high-quality chicken has a stronger chicken-y flavor. Maybe because it is a healthier animal to start with? I am not sure but I have noticed that chickens that are allowed to forage for part of their food do tend to taste better.

    Can You Freeze Chicken Pot Pie Casserole

    Chicken pot pie made with fresh crust can be frozen, but it is a little tricky to reheat it. Its generally best to bake it before freezing it and then reheat it rather than freezing the uncooked dish. This chicken pot pie casserole is much more freezer-friendly.

    If you want to enjoy the dish fresh at a later date, prepare it all the way but dont bake it after adding the breadcrumb mixture. When youre ready to enjoy the dish, let it thaw to room temperature then throw it in the oven.     Another option is to prepare the casserole then divide it into smaller containers for freezing.     How To Freeze Gluten Free Chicken Pot Pie For Later

    You can easily make a double or triple batch, and freeze these chicken pot pies for later

    I usually freeze mine before baking so that the crust doesnt get overdone.

    Once the pies are filled and topped, let them cool. Then they can be covered with a layer of foil and popped in the freezer.

    Make sure to write the date, what it is, and how to cook it on the top with a permanent marker. Again, your future self will thank you!
