  • About 4 cups Warm Water

    About 2.5 tablespoons 40gr Sugar

    About 1 tablespoon 10gr Oil

01 Put the Hot Water in a pan.

02 Add Yeast and stir gently and let sit for 5 to 10 minutes, or until the yeast activates by turning into a foam on top of the water.

03 Now, add the Salt, the Sugar and Oil.

04 Gradually add in the Flour as you stir the mixture simultaneously. You know you have added enough Flour when the mixture becomes too thick to stir.

05 Knead the dough.

06 Take the Dough out of the bowl and put it on a clean and well-floured surface .

07 Gather the Dough into a pile and begin pressing it together. Press the heels of your hands firmly into the Dough, pushing forward slightly.

08 Fold the far edge of the Dough upwards, towards you, and press it into the middle of the ball. Rotate it slightly, too. Repeat this press-fold-turn sequence for the duration of the kneading process.

09 Let the Dough rise up for 3 hour at room temperature or 8 hours in the refrigerator.

10 Place on a floured counter and flour the top of the Dough.

11 Flatten the Dough with your hand until about 1.5cm / 0.5in thick and 40~50cm / 15~20in in diameter.

12 Pick up the disk of Dough, and pinch the dough about 1.5cm / 0.5in from the edge. Try and stretch as you pinch, repeat this all around the edge. When the disk of Dough has been stretched enough to start to be floppy, proceed to tossing.

What If I Only Want To Use One Blend

If you only want to use one all purpose blend for everything but bread, Id make it my Better Than Cup4Cup .

Youll still need a Gum-Free Gluten Free Flour Blend, though, for some applications. So two blends? Oh, and to make bread flour, I suggest you buy Better Batter. So just 3. Thats all. 🙂

Dont Want To Build Your Own Blend

King Arthur Flour Flour, All

Use Better Batter gluten free flour everywhere my recipes call for an all purpose gluten free flour. You can purchase it on their website , and youll get the best price when you buy in bulk.

You can also use Cup4Cup gluten free flour blend, but it is relatively high in starch and wont produce best results in my recipes . But it will still work anywhere my recipes call for an all purpose gluten free flour.

Other blends: Im afraid that I dont care for Jules Gluten Free , Tom Sawyer blend , Namaste , Krusteaz , Bobs Red Mill , Pillsbury Betty Crocker Rice Flour Blend , or Trader Joes Blend .

If you use any of these blends, especially Bobs Red Mill or Namaste, your recipe simply will NOT turn out.

King Arthur Flour multi-purpose gluten free flour blend is perhaps the most widely available blend, and I would give anything to be able to use and recommend it. Unfortunately, its very high in starch so its unbalanced, and the rice flour in it is grainy. *whomp whomp whomp*

No kitchen or breakfast repertoire would be complete without a good recipe for gluten free pancakes. We used to make Kelseys Favorite Pancakes but when she went dairy free, that recipe didnt convert as well as we were hoping it would.

Like our gluten free mini blueberry muffins, these gluten free pancakes are another family favorite recipe that weve adapted from the Disney Princess Cookbook to be gluten free and dairy free.

We also like to add vanilla extract to our gluten free pancake recipe to give them a little extra boost of flavor. Of course, for our family of 4, we doubled the original recipe too.

Our version makes about 14-16 depending on how big/small you make your pancakes. These gluten free pancakes freeze very well. Sometimes, I cook up a big batch just to keep in the freezer for busy mornings.

But we also like to have them for dinner. We have breakfast for dinner once a week because its 1. easy and 2. everybody eats well that night.
