Heres an admission: those of us in the Celiac/gluten-free community can, at times, be a paranoid group. We worry about gluten contamination in our food, usually because weve had an experience that has shaken our confidence in what we can eat where. Regaining that confidence is a difficult process it can take time, if it happens at all.

Its not a bad thing to be cautious. It is what keeps us healthy in what otherwise might be unsafe situations for eating. As awareness about gluten continues to grow, and products and restaurants are more clearly labeling what is and isnt in their food, it has become easier to safely negotiate the gauntlet of gastronomy, and to perhaps even regain some of that confidence lost.

But Ive recently discovered that sometimes, a little information about gluten is more dangerous than none at all. Heres the story:

Back in late October, I blogged about Boars Head meats and cheeses, which are gluten-free. Not to worrythey remain gluten-free, but read on, for this is a cautionary tale. About one month ago, I got sick twice within two days, both very much in line with how my body responds to gluten cross-contamination. I was initially puzzled, since we have a gluten-free kitchen. The only common denominator between the two meals was one thing: Boars Head Black Forest Ham. Funny, since its gluten-free.

This month I had the opportunity to try out Boars Head certified heart-healthy deli meats Ovengold Roasted Breast of Turkey which is a good for your heart deli meat. Not only is it healthy but it is juicy and delicious! I found this meat at a local fine foods store then came home and made the Boars Head Ovengold Turkey Spaghetti Squash Tumble.

Let me start by saying that I have not cooked with spaghetti squash before, and I have no idea why! I absolutely loved it. It will definitely be going in our garden this year!

Now on to that lovely turkey! I really have not tasted deli style turkey that was so tender and juicy. It was delicious and I could hardly stay out of it to prepare dinner, good thing I bought double what I needed!

Once the spaghetti squash was steamed, it was simple from there you warm up some olive oil along with garlic, parsley, and basil.

Next you add in the remaining ingredients and toss it to coat in the oil mixture.

Serve with a little bit of cheese and you are all set to this good for your heart dish!
