Tip For Measuring Gluten

How to Make Keto Graham Crackers #nutfree & #dairyfree

Gluten-free flour is different than traditional wheat flour in many ways. I have found the best way to measure gluten-free flour is the spoon & level method.

I use a spoon to scoop the flour out of the bag and into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

Please do not scoop the gluten-free flour directly out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe.

Also, use a measuring cup made for dry ingredients .

Use Parchment Paper And Wax Paper For The Dough

Each paper does a different job… you could just go with the parchment paper if you had to choose between the two. But definitely do not go without the parchment paper, it is a must for baking the crackers.

Here’s what the process looks like:

  • Dough goes on the parchment paper
  • Top with wax paper
  • Roll out to the right size
  • Transfer into the oven to bake

The parchment and wax paper prevent the dough from sticking.

I am SO excited about todays recipe for gluten free Graham crackers! While I was making my gluten free sourdough recently, I had a cracker epiphany. It struck me that toasted quinoa flour and rice flour smelt strikingly similar to a digestive biscuit. Digestive biscuits are essentially a less sweet, more ambiguous and plainer version of Graham crackers, for those who havent encountered them.

So, there is your insight into my pea brained inspiration for todays recipe. These gluten free Graham crackers are gluten free, nut free, FODMAP friendly and so addictive I cannot even tell you! Stay tuned for a Graham cracker tart/cheesecake base, too.

An important note: the best version of these graham crackers contains zanthan gum. Ive gone into it below, but I highly recommend getting your hands on some. The texture difference between the version with zanthan and the one without is pretty amazing. Zanthan gum gives the cracker dough elasticity, allows them to hold their shape and results in a snappier cracker. I also find it results in a more uniform colour. You guys know that I dont use it often, so please trust the recommendation here. That said, theres a zanthan gum free gluten free graham cracker option, too. I want everyone to have crackers.

Gluten Free Graham Cracker Recipe Variations

  • Flours: you could substitute sorghum flour with gluten free oat flour. You can buy oat flour or simply blend up some gluten free oats in a grinder. Try not to substitute teff flour with anything, its flavor is essential.
  • Sweeteners: molasses is the traditional flavoring syrup used in graham crackers, but Im using a healthier version here date syrup , it has a similar but less bitter flavor.

How To Make Keto Graham Crackers

Graham Crackers (gluten free &  vegan)

Graham crackers on keto are possible, thanks to this simple sugar-free gluten-free graham cracker recipe:

  • Mix wet ingredients. In a small bowl, whisk together eggs, butter, vanilla, and honey extract.
  • Process the crackers. Add the wet ingredients to the food processor and process until a dense, sticky dough forms.

FYI: The dough should be crumbly, but stick together when pressed. If its super dry, you can add a bit more melted butter.

  • Chill dough. Form the dough into a ball and freeze, until no longer sticky.
  • Form crackers. Roll out crackers to a 1/16 to 1/8 inch thick rectangle and cut into squares. Transfer the squares to a prepared baking sheet and prick with a fork.
  • Bake. They are done when they are golden, but allow them to cool completely before handling. They will firm up as they cool.

Using A Stand Mixer Vs A Food Processor Whats The Difference Anyway

For this recipe, I used a stand mixer. In my opinion, its a lot easier to control the rate at which youre adding ingredients and how quickly they are mixed. This control results in more even distribution and a smoother texture. However, a food processor can definitely deliver amazing results as well! Ingredient Substitutions + PRO TIPS

Make your own oat flour. Grind gluten-free rolled oats in a food blender or food processor. Then measure out the equivalent amount of grams as the gluten-free oat flour suggested. You can see how I made my own oat flour in this banana bread bars post!Butter Substitutes If youre looking to make this graham cracker recipe entirely vegan friendly, then replace the cold butter with a plant-based and NON-GMO soy-free butter. I recently discovered MIYOKOs Cultured Plant Butter and Nutiva Vegan Ghee!Nut-Free Options This recipe does call for almond flour, and although I havent tried substituting it in this recipe yet, I do think there is room to test. I would suggest substituting almond flour with sunflower seed flour, a combination of coconut flour/tapioca, or millet flour.

Traditional Graham crackers are made with graham flour, which is a course wheat flour. So traditional Graham crackers, like Nabiscos Honey Made, are not gluten-free.

    If you want a naturally sweetened graham cracker, you can use coconut sugar instead of brown sugar. Just reduce the flour amount by about 1-2 Tablespoons since brown sugar has more moisture in it than coconut sugar.

    I prefer the taste of these graham crackers made with brown sugar, the coconut sugar seems to give these a slightly bitter taste. But its possible that its the brand of the coconut sugar Im using as well.

    Youll notice that the crackers made with coconut sugar are darker in color and have a stronger molasses-type taste than the graham crackers made with brown sugar. The graham crackers made with brown sugar are lighter in color.

    Can Graham Crackers For Smores Be Prepped Ahead Of Time & How To Store Them

    Not only can these Gluten Free Graham Crackers be prepped ahead of time, I recommend doing so! After all, you never know when that craving for smores will strike. To keep your crackers fresh, be sure to let them cool completely after baking. Then, store them in an airtight container at room temperature.

    If you opt for the fluffier version and choose not to dry out your crackers, they will stay crispy for roughly 2 days. However, if you dry your graham crackers, they will stay fresh for up to 2 weeks!

    Im going on month 8 of an interesting elimination diet that I started earlier this year for health reasons.
