Which Gluten Free Flour Should I Use

HEALTHY COOKIE DOUGH BITES | No Bake | Gluten Free & Vegan

You can use any gluten free flour that you like that tastes good.

Many gluten free flours can have a strong taste, so I recommend staying away from any gluten free flour with chickpea flour, or with a lot of quinoa.

You dont need a gluten free flour with xanthan gum, but it wont hurt your cookie dough truffles if you use a gluten free flour blend that already has xanthan gum or guar gum.

I used my gluten free flour blend. It is rice based, with plenty of starch for a smooth mouthfeel for even unbaked cookie dough candies.

Expert Tips + Ingredient Substitutions For Chocolate Chip Cookie Dough Balls

Here are some expert tips to make this recipe perfectly:

Almond Flour. Even though the recipe calls for cups of almond flour, you may need an extra 1-2 tablespoons depending on the consistency of the nut butter you use. For example, a thin, runny nut butter will need a little extra almond flour. Start with cups and add an additional tablespoon, as needed, until the mixture has a thick, cookie dough consistency that will hold a ball shape.

Almond Butter. I used almond butter because it’s a neutral-flavored nut butter, but you can substitute it with cashew butter, peanut butter or even sunflower seed butter.

Maple Syrup. This can be substituted with another liquid sweetener like organic date nectar or organic coconut nectar.

Chocolate Chips. I prefer to use mini-chocolate chips in this recipe so they aren’t so overpowering in the balls, but you can use standard-size chocolate chips if you prefer. If you use standard-size chocolate chips, you may want to reduce the amount from cup to 1/2 cup since they are larger in size.

Coconut Oil. If you don’t like the taste or smell of coconut oil, use organic refined coconut oil which has zero coconut taste or smell. In addition, I used such a small amount to help harden the chocolate and can be omitted if you prefer.

Himalayan Pink Salt. This is my salt of preference, however, you can always substitute with sea salt.

Sugar Free Gluten Free Cookie Dough

Since we arent baking this gf cookie dough, I think you could make it with alternative sugars. Youd need an alternative brown sugar and one to replace the granulated sugar.

I think Lankato brand monkfruit sugar alternatives would probably work quite well. They tend to be drying, though. If your cookie dough doesnt hold together easily, add a few drops of water and mix it in thoroughly until the consistency is right.

For each variation

  • Line a small rimmed baking sheet with anything nonstick .
  • Make sure the baking sheet is small enough to fit into your refrigerator. Set it aside.

For the gluten free chocolate chip cookie dough

  • Heat-treat the flour. You can heat it in the microwave, or in the oven.
  • In a medium-size bowl, place the butter, granulated sugar, brown sugar, and salt, and mix with a fork until well-combined.
  • Add the vanilla and mix again to combine. The mixture will be rather soft.
  • Add the heat-treated, cooled flour, and mix until completely combined.
  • Add the chocolate chips, and mix until evenly distributed throughout the flour.
  • Scoop the dough into pieces, about 2 teaspoonsful each, and roll each into a ball. Place about an inch apart on the prepared baking sheet.
  • Place the baking sheet in the refrigerator and chill for at least 30 minutes or until firm before transferring to a sealed container.
  • Store in the refrigerator, until you’re ready to serve the bites.

Do I Have To Use A Gluten Free Flour Blend For Edible Gf Cookie Dough

Yes. You do need to use our simple, 3-ingredient gluten free flour blend. Its important not to use any xanthan gum, too.

Ive made this cookie dough using only superfine rice flour, rather than our simple gum-free gluten free blend of 3 flours . I wish I knew why, but I didnt like it as much.

Made with just rice flour, the cookie dough tasted somehow different. It didnt taste like raw cookie dough that I wasnt supposed to eat. I want to be fooled!

If you dont want to use the gum-free flour blend, I recommend using one of my other edible cookie dough recipes. You can choose from the almond flour base cookie dough or the oat-based cookie dough.

Taking a bite of cookie dough before my moms chocolate chip cookies made it into the oven is one of my favorite childhood memories. Nothing compares to that sweet buttery gooeyness. These cookie dough bites are far more nutrient dense, the risk of salmonella from raw eggs is of no concern, and they dont leave you with quite the same feeling of guilt.

I find these bites to be a great addition to my weekly food prep routine and I double the batch to put half in the freezer.

Okay I confess, these bites of goodness do contain oats , although gluten-free oats for sure. I know, this is not a true paleo/primal recipe, however, my kids love these cookie dough balls and Id rather they obsess over these real food morsels than Oreos.

These no-bake treats are easy to make and are great for an after school surprise, a mid-afternoon pick-me-up, or a cookie following dinner. They also fit perfectly into a healthy lunch for school.

Keeping Homemade Cookie Dough Fresh

Store the cookie dough bites in an airtight container in the refrigerator for up to a week.

To freeze, place the cookie dough on the baking sheet and flash freeze for 30 minutes. Then transfer to freezer bags or a freezer safe container where it will stay fresh for up to 2 months.

You can let the dough thaw after freezing or nibble on them straight out of the freezer.

How To Make Cookie Dough Vegan

This is where the cookie dough gets trickier. We arent using eggs, because we are making an edible cookie dough. However, cookie dough is normally made with butter.

How do you make cookie dough dairy free?

To make my edible cookie dough dairy free and vegan, I use vegan butter and palm shortening instead of the butter. I prefer using half vegan butter, half shortening. You can use all vegan butter or all shortening if you prefer.

If you arent vegan or dairy-free, you can use ½ cup of butter instead of the vegan butter and palm shortening listed.

Most chocolate chips arent vegan, but all of Enjoy Lifes Baking Chocolate is!

I used Enjoy Lifes Mini Chips. They only have 3 ingredients: Cane Sugar, Unsweetened Chocolate, and Cocoa Butter. Because it doesn’t have any stabilizers, or lethicins, it works great both as chocolate chips in gluten free cookie dough, as well as for melting.

I don’t know about you, but I LOVE cookie dough.

Like, I think I might actually prefer eating cookie dough to eating actual baked cookies.

I know, my love affair with cookies is no secret.

I mean, I wrote a whole cookbook filled with cookie recipes.

Because I just love cookies.

I have been dying to bake cookies in a skillet, like this Low Carb Chocolate Chip Skillet Cookie from All Day I Dream About Food. YUM! It even has a paleo option.

Now I am not one to not lick the bowl after making a batch of cookies.

Heck! I normally leave a little extra in the bottom with that in mind.

I haven’t died of salmonella yet!

All the same… if I am planning on just eating the dough, I don’t want to make it with egg.

I took my favorite gluten free chocolate chip cookie recipe and made just a few changes to it to make it and egg-less gluten free edible cookie dough recipe.

Basically I just took the egg out and added in a little bit of milk or water.

I opted to use mini chocolate chips instead of the regular ones because I used my cookie dough in some gluten free cookie dough brownie ice cream and didn’t want the huge chunks of frozen chocolate to chip someones teeth. It could happen…

Be sure that the butter is cooled before you mix in the other ingredients.

If the batter is even slightly warm those mini chocolate chips will melt and streak in the cookie dough.

Still delicious, just not as pretty.

Yes, their little balls of cookie dough won’t be as round and smooth, but it is so much fun!

How Do You Make Edible Gluten Free Cookie Dough

It takes just a few ingredients gluten free oat flour, brown sugar, vanilla extract, vegan buttery spread, and salt.

Youll combine these ingredients in the food processor, and blend until they form a dough. Then add some chocolate chips to the dough, and stir by hand.

Using your hands, roll the dough into balls and then refrigerate until firm.

Thats all there is to it! Store the finished cookie dough bites in the refrigerator or freezer, and enjoy!
