Once the cookies are flash-frozen , place the cookie dough balls into a freezer bag. Frozen raw cookie dough can actually last 9 to 12 months in the freezer.

Anyone who is Coeliac knows to steer well clear of wheat, barley and rye, as these are the key gluten offenders. If they are not completely avoided, the consequences for health can be pretty dire in the short term. And over the long-term, life-threatening.
So where do oats and oatmeal fit into the picture?
Well While the majority of Coeliacs are still able to eat oats , a few remain sensitive to a protein called Avenin. Avenin is similar in structure to gluten and is found in oats. This group of people cannot eat oats or oatmeal .
For the rest of us, oats are good In fact, they are a fabulous addition to the diet and have great baking qualities. But they MUST still be gluten free!
What Type Of Oats Should I Use
For this recipe you should use gluten free old fashioned rolled oats. I found the rolled oats hold their form when you are mixing them which helps achieve that great chewy texture when the cookie is baked. If you use quick oats they will break down into the dough when you are mixing and the texture of the cookie wont be the same. For this recipe I used Bobs Red Mill gluten free rolled oats.

How To Make Oatmeal Cookies Gluten
Many oatmeal cookie recipes call for all purpose flour, which contains gluten. Instead of replacing this ingredient one-for-one with a gluten-free flour blend, Ive opted to use almond flour instead. I like to add almond flour to my cookie recipes for a boost in nutritional value.
Like some of my other cookie recipes, I feel good about giving my family treats that have *some* form of nutrition. We get enough sugar and carbs in our diets, so I do my best to make sure when I make homemade treats, they have some health benefits.
Almond flour is full of healthy fats, fiber, and protein, so when I inevitably go back for a second cookie, I know Ill fill up fast on something other than plain sugar and carbs.
How To Store This Gluten
If you don’t want to bake all the cookies at once, you can bake some now and store the rest for later!
Use a cookie scoop to roll the cookie dough into even balls and chill on a baking sheet in the fridge for an hour or freezer for 15 minutes. Once firm, transfer the cookie dough balls to a gallon freezer bag and store in the fridge for up to 5 days or in the freezer for up to 6 months.
If you’ve stored the cookie dough in the freezer for longer than 30 minutes, you’ll also need 1-2 additional minutes of the baking time. When baking the cookies directly from long freezer storage, they will bake up thicker than pictured here.
Alternatively, let the dough sit at room temperature for 30 minutes before baking if you don’t want your cookies to bake up thicker.

The perfect oatmeal cookie depends on the oats. For these cookies, you need old-fashioned rolled oats, not instant oats. And to ensure there’s no cross-contamination, I use Bob’s Red Mill gluten-free old-fashioned rolled oats, which are made in a dedicated facility. Their oats are high quality and consistent in texture and flavor.
I do not recommend substituting quick-cooking oats or instant oats, as they are rolled thinner and thus soak up moisture quicker, which can leave your cookie tasting dry without the proper texture.
This Cookie Dough Can Be Made And Stored In The Fridge A Week In Advance
I know this because I made this recipe for my family one weekend and then baked myself a fresh small batch every morning the next week. From the same dough. Please dont ask how many I consumed- I will never tell!Leave the dough in your mixing bowl and cover with plastic wrap, then place in the fridge. If you want to bake half the batch now and save the rest for later in the week, I suggest putting the dough in a ziplock bag to keep it fresh- that way no air can get in.

While I’m partial to the slight nuttiness almond flour adds to cookies, I also developed a nut-free version using oat flour. Unless tasting side-by-side, they’re almost indistinguishable. Either way, you’ll love these cookies!
- Tapioca flour: Tapioca flour offers chewiness and adds to the fluffiness and crisp edges of the cookies. It’s what keeps the cookies from being too dense.
- Sub in by weight: While I haven’t tested it, I would recommend substituting by weight with arrowroot starch.
I recommend only Bob’s Red Mill brand flours, which are consistent in quality, with a fine grind that is never gritty. Subbing in a different brand of flour is the most common reason a recipe doesn’t turn out as expected. Consistent flour texture is especially important for cookies that should be crisp, moist, soft, and chewy all at once.

Notes On Ingredients For These Gluten
- Flour: Use your favorite, quality gluten-free flour blend. I always recommend avoiding flour blends with bean flours. Many blends will work successfully in this recipe. If your flour blend contains a binder like xanthan gum or guar gum already, then omit the additional xanthan gum called for in my recipe. I have made these with gfJules, King Arthur Measure for Measure Flour and with Gluten-free Mamas Almond Flour all with great success.
- Butter Alternative: I used a stick butter alternative called Melt, but you should be able to use others like Earth Balance, or coconut oil. If you can have dairy, feel free to use the same amount of butter.
- Oats: Be sure to use only certified gluten-free oats. You want to use old-fashioned or rolled oats that are certified gluten-free. I use GF Harvest gluten free rolled oats or Gluten-free Prairie oats every time.
This recipe doesnt use an entire bag of Enjoy Life semisweet mini chips. Of course, Ive got ideas for the rest of those mini chocolate chips! You can hide them in your secret chocolate stash. You can use them in these gluten-free chocolate chip scones from my friend Cindy that look perfect for having with a cup of coffee! Or along the lines of these small cookies I made, you can make even smaller cookies this gluten-free vegan cookie crunch cereal! So cute!
You can also use the mini chips and the oats in these gluten-free banana oatmeal chocolate chip cookies. Ive made them several times now and theyre always a hit.

What Else Can I Use
- I use golden raisins here, but regular raisins or any chopped dried fruit can be used.
- Like most of my baked goods recipes, feel free to swap in brown or granulated white sugar in place of the coconut sugar.

Baking Time & Temperature
The time and temperature are very important when baking the cookies. If your oven is too hot or the cookies are in the oven for even a few minutes too long they can easily turn out dry and over cooked and lose their chewy texture. Make sure your oven is set to 325 F and start watching the cookies around that 10 minute mark to make sure they arent getting too brown on the top. The goal is to take them out when you see a nice golden brown around the edges and the center is still slightly pale. The cookies will continue to cook on the tray after you take them out so dont worry if they look a tad under baked when you first take them out.

Do I Need To Use A Cookie Scoop
You dont need to use a cookie scoop for this recipe if you dont have one on hand. I prefer to use this tool for the sake of keeping my cookies consistently sized, so I know theyll bake up evenly.
If you dont have a cookie scoop on hand, you can use a rounded tablespoon instead and this will work out just fine for the recipe.
How To Make These Gluten Free Oatmeal Chocolate Chip Cookies With Almond Flour:
You are going to need two bowls.
In the first bowl, mix the rolled oats, almond flour, sugar, salt, baking soda, and cinnamon together.
In the second bowl, mix the egg, almond butter, olive oil, and vanilla together.
Then, pour the bowl of dry ingredients into the bowl of wet ingredients and mix until a dough forms.
Then, add your chocolate chips!
I think the whole chocolate chip part requires some advanced planning. What I mean about that is that once I have my 1/2 cup of chocolate chips measured out, I take out a few.
Then once the cookies are rolled into balls and put onto the cookie sheet, I add a few of the chocolate chips that I separated out on top of each cookie.

However, being gluten free cookies, the ratios may vary slightly from non-gluten free versions. This is to compensate for slight variations in hydration of the additional gluten free flour that has been added.
Alongside the oats and oat flour and in place of wheat flour, the recipe uses a little tapioca starch. This is not the same as adding a standard gluten free commercial flour blend. Tapioca starch is a unique and single gluten free flour that has been chosen to bring lightness and a little crunch to the final oatmeal cookie.
While it is probable that using the same weight of a general flour blend will work fine, the texture of the final cookie is likely to be a little crumblier Especially if the blend is mainly rice-flour based.
